Veg Momos/Steamed Veg Momos/Dim Sum

The first time that I had Momos was when I was living in Delhi. Once I was visiting Noida for shopping.  During the evening time, I was hungry so I decided to have some street food. While moving through the market, I saw a new kind of snack in the street side food stall. The owner of the stall was from North East. I went to the stall and enquired about it. The owner said that it was called Momos and asked me to give a try. That was the first time that I had Momos. It was very delicious, mouthwatering and spicy. The Red Chilli Chutney added hotness and spiciness to the Momos.

The most important part of Momos is the stuffing that we use in preparing it. The taste of the snack totally depends upon the taste of the fillings. Momos can be Veg Momos or Paneer Momos or Chicken Momos. Today I am going to share Veg Momos which requires different types of vegetables for preparing the stuffing. The change in different types of Momos is only the stuffing. It is what and how you prepare the filling of the momos. Apart from this all the remaining tasks in preparing this delicious snack is similar. I will share the remaining variety of the snack in my other posts.

Apart from the stuffing, the second most important part in preparing the Momos is how we cook it. We can cook Veg Momos in three ways, Steaming, Baking or Deep Frying. You can choose any of the three methods. Here we will be prepare the Veg Momos by the steaming method. I will share the other methods in my other posts. I mostly prefer the steamed Veg Momos since it is very healthy and tasty.

One of the additional things that we see in momos is the shape with which it is prepared. The street side food stalls prepare this snack in different shapes which look very attractive. You can also prepare different shapes of momos at home. Here I will be sharing two methods of shaping the momos. You can choose any of them while shaping it.

The taste of Veg Momos not only depends upon the type of stuffing and the method of cooking but also depends on with what we serve the Veg Momos. Veg Momos tastes best when served with Red Chilli Chutney and Mayonnaise. Most street side food stall also serve with the same chutney and mayonnaise. You can also serve it with Tomato Ketchup, Chilli Sauce, Mustard Sauce, Schezwan Chutney or Pizza Sauce. Choose as per your preference of taste.

To prepare Veg Momos first we need to prepare the dough. The dough of Momos can be prepared either with All Purpose Flour (Maida) or with Wheat Flour (Atta). You can choose any one of them. Here we will be using Maida to prepare the dough.

Take All Purpose Flour, Oil and Salt in a large bowl. Mix them uniformly. Now add Water in batches and knead it properly to prepare the dough. The dough should be firm or else it will be difficult to make the dumplings. The dumplings may flatten after stuffing. After preparing the dough, grease the outer layer with slight amount of oil. Cover the dough with damp cloth and keep it aside for about 10-15 minutes.

Till the time the dough is resting, let’s prepare the fillings. Heat Oil in a heavy base kadai or pan. Add Chopped Garlic and Ginger and saute for few seconds. Next add Chopped Onion and Chopped Spring Onion Whites. Saute them till it turns little golden in colour. Now add all the Chopped Vegetable and cook for about 2 minutes under medium to high flame.

Cook under high flame only when you are using heavy base kadai or pan. If you are using normal kadai or pan, cook the veggies under low to medium flame. This will prevent the veggies from burning. After 2 minutes add Black Pepper Powder and Salt. Saute and cook for another few minutes. Switch of the stove and allow the stuffing to cool down to room temperature. At this moment you can check the taste of the stuffing. If required you can add extra amount of Black Pepper Powder and Salt.

Now remove the damp cloth from the dough and divide the dough into small balls. Take a ball and with the help of rolling pin, roll it into small roti of diameter of approx. 3-4 inches. Roll the remaining balls in the same manner and keep it aside. Now take a roti and place it in flat surface. Place small amount of stuffing at the centre of the roti and then start sealing it. Seal the stuffing by pleating the edges and joining them together. At last join all of them at the centre and seal it by pressing it slightly. Stuffing of Momo is done. Keep it aside. In the same manner stuff all the momos.

To steam the Veg Momos lets prepare the steaming set up. Heat Water in steamer pan or idli maker over medium heat. Take the steamer tray and grease it. Place all the stuffed Veg Momos in the tray without sticking to each other. Once the water starts boiling, place the tray in the steamer pan and cover it. Steam the Veg Momos for about 10 minutes.

After 10 minutes switch of the stove and take out the tray. Touch the outer layer of the momos to check whether it has been cooked or not. On touching if the layer does not stick to your fingers, it means that it is completely cooked. If it sticks, then cook it for another few minutes. The steaming time totally depends upon the thickness of the outer layer of the momos. If the thickness is more, the steaming time will be more. On steaming the outer layer will become slightly transparent.

Notes:

  1. Here we have used Maida to prepare Veg Momos. If you want you can prepare it using Wheat Flour as it is healthier than maida.
  2. While kneading the flour, remember to prepare firm dough so that it is easy to shape the dumplings. It will help in holding the shape of dumplings for a longer time. If the dough is soft, the dumplings will not take proper shape and it will flatten with time.
  3. To prepare the fillings, you can choose vegetables of your choice. Here we have used Finely Chopped Cabbage, Carrot, Capsicum and Onion. You can also add Grated Paneer, Sweet Corns, Finely Chopped Mushrooms, Soyabean Granules, Finely Chopped French Beans, etc. if you want.
  4. Chop the vegetables finely. You can use knife to chop the vegetables. If you have food processor you can use it since it is easy and takes less time to finely chop the vegetables.
  5. Cook the Finely Chopped Vegetables under medium to high flame if you are using heavy base kadai or pan. If you are not using heavy thickened base kadai, fry the veggies under low to medium heat. It prevents the veggies from burning.
  6. After preparing the fillings, check the taste to see if there is any need of adding extra salt or black pepper powder to it.
  7. While stuffing the Momos you can give any shape of your choice. If you do not have time to stuff the filings by pleating the Momos then you can simply give the shape of Momos similar to Gujiya.
  8. Steaming time of the Momos may vary and it depends upon the thickness of the outer layer. If the outer layer is thick it will take more time to cook.
  9. To check whether the Momos is completely cooked or not, touch with your finger. You should not feel the stickiness in the outer layer of the momos. Also the momos will become transparent.
  10. Veg Momos tastes best when served with Red Chilli Chutney and Mayonnaise. You can also serve it with your favourite dips and spreads.
