Vanilla Ice Cream is a popular summer dessert recipe prepared from Full Cream Milk, Fresh Whipped Cream, Sugar and Vanilla Essence. It is served after a full course meal as a dessert. The process of preparing Ice Cream is same in almost every type of Ice Cream. The only difference is in the addition of essence. Preparation of Vanilla Ice Cream is easy as it requires very few ingredients to prepare it.

While preparing Vanilla Ice Cream, we can make slight variations to it by addition of few additional ingredients. These additional ingredients can be Tutti Fruity, Chocolate Chips, White Chocolate Chips, Chopped Dry Fruits, etc. Chopped Dry Fruits include Pistachios, Almonds, Raisins, Cashews, etc. We add these ingredients while mixing the Milk with Whipped Cream and then freeze it to prepare the Vanilla Ice Cream.

There are different versions of preparing Vanilla Ice Cream. You can prepare the Ice Cream by using any of the below methods.

  1. With Fresh Full Cream Milk: In this method we use Fresh Full Cream Milk along with Whipped Cream and Vanilla Essence to prepare the Vanilla Ice Cream. This method takes little more time compared to other two methods. Here we will be using this method along with the second method also to prepare the Ice Cream.
  2. With Condensed Milk: In this method we use Homemade Condensed Milk or Readymade Condensed Milk to prepare the Ice Cream. Preparation of Homemade Condensed Milk takes time so you can prefer to use Readymade Condensed Milk to prepare the Ice Cream in quick time. It is advisable to use branded Condensed Milk. If you have time, it will be better to prepare Condensed Milk at home only. It is the best choice since it will be free from any type of adulteration.
  3. With Ice Cream Powder: The simplest method of preparing this ice cream is by using Ice Cream Powder which is cooked with milk to prepare the Ice Cream. This method takes the least time compared to other methods. It also excludes the use of Condensed Milk. However using Ice Cream Powder to prepare this recipe can be at risk due to adulteration in food products. So, use branded Ice Cream powder for this Ice Cream.

Here I will be sharing the first two methods that are by using Full Cream Milk or by using Condensed Milk. If you are using Condensed Milk then you do not require using sugar. If you want to prepare Condensed Milk at home then please visit Homemade Condensed Milk.

The most important step in preparing the Vanilla Ice Cream is the use of Whipped Cream. Use thick Fresh Cream to prepare Whipped Cream. Beat the cream with electric blender or beater till we have soft peaks from it. If you do not have electric blender or beater at home then you can whip the cream using spoon or by using whisk. However the time taken by whisk or spoon will be more compared to electric blender or beater.

To make the Vanilla Ice Cream soft and smooth, first freeze the Ice Cream for at least 2 hours till it is half set. When it is half set, take out the ice cream from the refrigerator and beat it again with blender or whisk. After beating freeze it again for 5-6 hours before serving.

To prepare Vanilla Ice Cream, first take 4 tablespoon of Milk in a small bowl. To it add 1 tablespoon of Corn Flour and mix it to prepare paste. Now heat Full Cream Milk over medium flame. When the milk is warm add Corn Flour paste to it and stir it. Cook the milk over low to medium heat till it becomes thick. Stir the milk continuously while cooking so that it does not stick to the kadai. When we get the desired consistency, switch off the stove and allow the mixture to cool down to room temperature.

Now take the Fresh Cream in a large bowl to prepare the Whipped Cream.  With the help of Electric Beater or Blender, whip the cream till we get soft and smooth peaks. You can also whip the cream with hand blender or whisk. After preparing the Whipped Cream, add the Thickened Milk and Vanilla Essence to it and mix them properly. If you are using Condensed Milk to prepare the Ice Cream, then simply add the Condensed Milk to the Whipped Cream.

After mixing the Thickened Milk and Whipped Cream properly, transfer the mixture to a container. Close the lid tightly and freeze it for at least 2 hours. After 2 hours when the Ice Cream is half set, take it out from the refrigerator and beat the ice cream once again. We do this to make the ice cream soft and smooth. After beating, level the ice cream and freeze it again for 5-6 hours to set the Vanilla Ice Cream completely.

Once the Ice Cream sets properly, take it out from the refrigerator to serve. Take out the Ice Cream with the help of scoop in a serving bowl. Serve Vanilla Ice Cream chilled by topping with Choco Chips or Tutti Fruity or Chopped Dry Fruits. You can also serve it plain without any toppings.

Ingredients:

Method 1 (With Full Cream Milk):

  • 1 cup Full Cream Milk
  • 2 cups Fresh Cream
  • 1/2 cup Powdered Sugar
  • 1 tablespoon Corn Flour/Corn Starch
  • 4 tablespoon Milk
  • 1 teaspoon Vanilla Essence
  • Chopped Pistachios or Choco Chips or Tutti Fruity (For Garnishing)

Method 2 (With Condensed Milk):

  • 1 cup Condensed Milk
  • 2 cups Thick Fresh Cream
  • 1 teaspoon Vanilla Essence
  • Chopped Pistachios or Choco Chips or Tutti Fruity (For Garnishing)

Instructions:

Method 1 (With Full Cream Milk):

  • First set the temperature of your fridge to its maximum cold temperature.
  • Take 4 tablespoon of Milk in a small bowl and add 1 tablespoon Corn Flour to it. Mix it to form a smooth paste. You can also substitute Corn Flour with Rice Flour or Arrowroot Flour. Keep it aside.
  • Take a heavy base kadai and add Full Cream Milk into it. Also add Powdered Sugar to it.
  • Switch on the stove and heat the Milk over medium flame. Stir the Milk so that the Sugar dissolves completely.
  • When the Milk is slightly hot, add the Corn Flour paste gradually by continuously stirring the milk with a spatula. Stir it continuously so that no lumps are formed in the milk.
  • Simmer the milk under low to medium heat till the milk starts thickening.
  • When the Milk attains the required consistency, switch off the gas and allow it to cool down to room temperature.
  • Now take the Fresh Cream in a large bowl to prepare Whipped Cream.
  • Whip the Fresh Cream using Electric Blender or beater. You can also whip the cream with hand blender or whisk.
  • Whip the Fresh Cream till it is smooth and soft peaks are formed.
  • Once the Whipped Cream is prepared, add the thickened milk to the Whipped Cream. Also add Vanilla Essence to it.
  • Mix all the ingredients properly by whisking it with an Electric Blender or beater. You can also use spatula or large spoon to mix all the ingredients.
  • After beating the thickened milk, check the sweetness of the mixture. Adjust the sweetness as per you requirement.
  • Transfer the mixture to a container. Close the container and freeze it for at least 2 hours.
  • After 2 hours, when the Ice Cream is half set, take out the container from the refrigerator.
  • Whisk the Ice Cream once again with blender or beater for few minutes. This is done to make the Ice Cream softer.
  • Once the Ice Cream is whisked, put back the container into the refrigerator and freeze it for another 5-6 hours.
  • After 5-6 hours, the Ice Cream will set completely. Take it out from the refrigerator to serve.
  • Vanilla Ice Cream is ready to serve. Take out the Ice Cream in a serving bowl with the help of Ice Cream scoop.

  • Garnish the Vanilla Ice Cream with Chopped Pistachios and other Dry Fruits before serving. You can also use Choco Chips or Tutti Fruity to garnish the Ice Cream. Use of Dry Fruits, Choco Chips and Tutti Fruity is optional.

Method 2 (With Condensed Milk):

  • Take the Fresh Cream in a large bowl to prepare Whipped Cream.
  • With the help of electric blender or beater, whip the Fresh Cream. Whip till a soft and smooth peaks are formed. You can also whip the cream using hand blender or with the help of spoon.
  • After the cream is whipped add Condensed Milk into it. Also add Vanilla Essence.
  • Now mix the Condensed Milk and Whipped Cream properly with the help of spoon or with blender.
  • After mixing it properly, transfer the mixture into a container. Close the container with lid and freeze it for at least 2 hours.
  • After 2 hours take out the container from the refrigerator when the Ice Cream is half set.
  • Beat the Ice Cream once again with blender or beater. This is done to make the Ice Cream soft and smooth.
  • Cover the container and freeze it again for at least 5-6 hours.
  • After 5-6 hours, take out the Ice Cream from the refrigerator. Vanilla Ice Cream is now ready to serve.

  • With a scoop take out the Ice Cream in a serving bowl. Serve it chilled by garnishing with Choco Chips and Tutti Fruity. You can also garnish with Chopped Dry Fruits. However garnishing the Ice Cream is optional. You can skip if you want.

Notes:

  1. Here we have used Corn Flour to prepare the paste. You can replace it with Rice Flour or Arrowroot Powder.
  2. Cover the container with aluminium foil so that water crystals are not formed above the ice cream layer.
  3. While boiling the Milk, keep stirring it continuously with a ladle so that it does not stick at the bottom. If it sticks at the bottom or edges, it will burn and the colour of the milk will also change.
  4. Beat the Fresh Cream with Electric Blender or beater till stiff peaks are formed. You can also beat the cream with spoon or whisk.
  5. To make the Vanilla Ice Cream softer, take out the Ice Cream when it is half set. Beat the Ice Cream with beater and then freeze it again.
  6. To give a different flavour to the Ice Cream, you can add Tutti Fruity and Choco Chips while preparing the mixture.
  7. While freezing the Ice Cream, use air tight container so that water crystals are not formed at the surface of the ice cream.
