Fruit Custard or simply Custard is a quick and easy delicious Sweet Dessert Recipe which is very popular all over India. It is especially very popular among the kids. Fruit Custard is a creamy and rich chilled summer dessert recipe prepared from Custard Powder, Milk and Chopped Fruits. It is made by mixing Chopped Fruits with Chilled Custard Milk. First Custard Milk is prepared by cooking Custard Powder with Milk along with Sugar and then Fruits are mixed into it.
Traditionally Fruit Custard was prepared by using Corn Flour or Arrowroot Powder where it was cooked with milk and later on some flavour was added to it along with fruits. Apart from this, some people also added egg yolk and cream into it. For vegetarian egg yolk used to be left out. But today almost everyone use a readymade custard powder to prepare Fruit Custard.
There are different flavour of custard powder such as Mango Custard Powder, Chocolate Custard Powder, Strawberry Custard Powder, Butterscotch Custard Powder, etc. In this recipe we will be using readymade Vanilla flavoured Custard Powder to prepare thick and creamy Fruit Custard. It is the most common custard powder flavour in Indian homes.
The most important part of Fruit Custard is the selection of fruits that we will add into the custard. There are different fruits that we can use to make this recipe such as Apple, Banana, Pineapple, Black Grapes, Green Grapes, Mango, Strawberry, Pomegranate Seeds, Blueberry, Pear, Plum, Papaya, Chikoo, etc. The common fruits that everyone uses are Apple, Banana, Black Grapes, Green Grapes, Mango and Pomegranate Seeds.
Here we will be using the most common fruits to prepare Fruit Custard. Apart from these fruits you can also add dry fruits such as Cashews, Raisins, Almonds, etc. Do not use citrus fruits such as oranges, grapefruits and melons. It can really upset your stomach after having it especially during nights. However I have used grapes in my recipe. You can skip if you want to. Sometimes few seasonal fruits are not available, so you can skip them and use whichever fruits you have.
To prepare Fruit Custard, first we will prepare the slurry of Custard Powder. Take Custard Powder in a small bowl and add Milk into it. Mix them properly to prepare fine slurry without any lumps in it. You can use normal or warm water to mix the powder. If there are any lumps in the mixture, you can pass it through a fine sieve to separate the lumps. Keep the Custard Powder paste aside.
Now heat a heavy base kadai or non-stick pan over medium heat. Add Milk into it and heat till it comes to a boil. Use fresh full cream cow’s milk. It adds extra richness and flavour to the recipe. When it starts boiling, add required amount of Sugar. Stir to dissolve the sugar completely. Now add the custard powder paste. Turn the flame low and stir to mix it with the milk. While preparing the custard keep stirring the milk continuously so that it does not stick to the bottom of the pan. If it burns by sticking to the bottom of the pan then it can ruin the taste of the custard.
Under low flame cook the custard till it thickens. The consistency should be thick and runny. To check the proper consistency of the custard, dip a spoon or spatula into it. It must coat the back of the spoon or spatula with a layer over it. When the custard becomes thick, switch off the flame and transfer it a large bowl. Allow it to cool down to room temperature.
Once the Custard Milk cools completely, cover it and keep in refrigerator for about an hour. During this interval it will thicken further. After 1 hour take out the Custard Milk from the refrigerator. Add the chopped fruits such as Apple, Banana, Strawberry, Black Grapes, Green Grapes, Mango and Pomegranate Seeds into the custard milk. You can skip fruits if you do not have any one of them. Mix them properly. Keep it again in refrigerator for another 1 hour to chill it.
After an hour take out the Fruit Custard from the fridge and transfer it into a serving bowl. Fruit Custard is ready to serve. Serve it chilled by garnishing with some more fruits. You can also garnish with dry fruits such as Cashews, Almonds, Raisins, Pistachio, etc.

Fruit Custard Recipe/Custard Recipe
Equipments:
- Heavy Base Kadai (or Non-Stick Pan)
- Spatula
Ingredients:
For Custard Milk:
- 2 cups Milk (500 ml)
- 2 tablespoon Vanilla Custard Powder
- 1/4 cup Milk (For making slurry by mixing Custard Powder)
- 1/4 cup Sugar
- 1/4 teaspoon Cardamom Powder (Optional)
Fruits for Fruit Custard:
- 1/4 cup Chopped Green Grapes
- 1/4 cup Chopped Black Grapes (Red Grapes)
- 1/4 cup Strawberry (Chopped)
- 1/4 cup Chopped Mango
- 1/4 cup Chopped Banana
- 1/4 cup Pomegranate Seeds
- 1/4 cup Chopped Apple
Instructions:
Preparing Custard Milk/Custard:
- First take 2 tablespoon Custard Powder in a bowl. Here I am using Vanilla flavoured Custard Powder.
- To it add 1/4 cup of Milk. Milk should be cold or warm and not hot or else it will form lumps on mixing.
- Mix Custard Powder and Milk continuously and properly making sure that there are no lumps in it and is smooth. Keep it aside.
- Now heat 2 cups of Milk in a heavy base kadai or non-stick pan over medium flame.
- Heat the Milk till it comes to a boil. Stir the milk occasionally in between so that it does not stick to the bottom of the pan and burn.
- When the Milk comes to a boil, add 1/4 cup of Sugar. Stir to dissolve the Sugar completely. You can adjust the quantity of Sugar as per your liking of sweetness.
- Now turn the flame into low and add the Custard Powder and Milk mixture into the boiling Milk. Also add Cardamom Powder. Cardamom Powder is optional and you can skip if you want to.
- Under low flame cook the Custard Milk by continuously stirring it so that it does not stick at the bottom of the pan. If it sticks, it can change the taste of the custard.
- Cook the Custard Milk till it turns thick. The consistency of the Custard should be thick and runny. To check dip a spoon or spatula into it. It must coat the back of the spoon or spatula properly.
- When the Custard Milk slightly thickens, switch off the flame and transfer it to a large bowl. Allow it to cool down completely. On cooling it will thicken further.
- When the Custard comes to room temperature, cover and keep in refrigerator to chill for about 1 hour.
- After an hour take out the Custard from refrigerator. Custard is ready. If you want you can serve it chilled without fruits also. Now we will add Chopped Fruits to prepare Fruit Custard.
Preparing Fruit Custard:
- Take the Chopped Fruits such as Mango, Banana, Strawberry, Apple, Green Grapes, Black Grapes and Pomegranate Seeds.
- Add these Chopped Fruits to the Custard Milk. Mix all the fruits uniformly with spoon or spatula. If you do not have some fruits, you can skip them.
- Cover it and chill it again for about an hour before serving it. Once the Fruit Custard chills, it turns more thick and creamy.
- Take out the Fruit Custard from the refrigerator and transfer it to a serving bowl. Tasty, delicious and mouthwatering Fruit Custard is ready to serve.
- Serve it chilled by garnishing with some more fruits. You can also garnish with some dry fruits such as Cashews, Raisins, Almonds, etc.
Notes:
- You can also use Almond Milk or Soya Milk to prepare Fruit Custard.
- Here we have used Vanilla Custard Powder to prepare Fruit Custard. You can use any other flavoured Custard Powder also such as Mango Custard Powder, Chocolate Custard Powder, Strawberry Custard Powder, Butterscotch Custard Powder, etc. Vanilla Custard Powder is most commonly used to prepare Fruit Custard.
- To give a good colour to the Fruit Custard you can add yellow or orange organic natural food colour.
- You can also serve Custard without adding Fruits. Simply prepare it and then serve it chilled.
- Here we have used fruits such as Mango, Banana, Strawberry, Apple, Green Grapes, Black Grapes and Pomegranate Seeds. You can also choose from Pineapple, Strawberry, Blueberry, Papaya, Chikoo, etc. Skip using citrus fruits such as orange and water melon. You can also use Dry Fruits and Nuts such as Raisins, Cashews, Almonds, etc.
- Remember to cool the Custard completely before adding fruits. For creamy flavour, you can add Vanilla Ice cream or Mango Ice cream.
