Homemade Red Chilli Powder or Lal Mirch Powder is an authentic masala powder which has a mix blend of different types of chillies such as Red Chilli Powder and Kashmiri Chilli. It requires only three ingredients, Red Chilli, Kashmiri Mirch and Rock Salt to prepare it.

Readymade Red Chili Powder is easily available in the market. These spices have adulteration and also have chemicals. So to get rid of adulterations and chemicals always prepare Red Chilli Powder at home. I always use homemade spices in my food to make tasty, flavourful and aromatic recipes. Also the quality of the homemade masala is far superior to the readymade one. Homemade Red Chilli Powder is very easy and quick to make at home. Just make it once and store it to use for 2-3 months.

There are two types of Chilli Powder, Red Chilli Powder and Kashmiri Red Chilli Powder. Red Chilli Powder is prepared from only long dried Red Chilli which is easily available in the market. Kashmiri Red Chilli Powder is prepared from Kashmiri Mirch. We use Red Chilli Powder to make the dishes spicier while Kashmiri Mirch to give flavour and colour to the recipe. Kashmiri Mirch is not spicy. If you want to make both the spices separately then you can grind them separately and store in air tight container. Use it as per your requirement of spiciness and colour to the recipe.

While preparing any recipe where you want to add hotness, flavour and colour to it, you have to use both the Red Chilli as well as Kashmiri Mirch. Today we will be preparing Homemade Red Chilli Powder using both the chillies that is Red Chilli and Kashmiri Chilli. The advantage of this masala powder is that by using it we can make the food spicy, flavourful and also give colour to the recipe. Here, we will also be using Rock Salt while blending the mirch powder. The main reason of using the Rock Salt is to keep the Red Chilli Powder fresh for long time. It prevents from infesting from insects and bugs.

To prepare the Homemade Red Chilli Powder, first dry roast the Red Chilli and Kashmiri Mirch over low flame separately. Roast the chillies for few minutes by continuously stirring it so that it does not burn. If it burns slightly then it will change the colour of the chilli powder. So roast it only for making it little crispier. Allow the chillies to cool down completely. After it cools completely, transfer it to mixer grinder jar and add Rock Salt. Blend it to make smooth and fine powder. Homemade Red Chilli Powder is ready. Use it to prepare in your favourite recipes.

The other way of making the Red Chilli Powder is by drying the chillies in sun for 2-3 days. When the chillies dries completely, add it to the grinder jar along with Rock Salt and then blend to make the Red Chilli Powder. Preparing the chilli powder with this process is good since it retains the colour of the spice powder. To keep the masala fresh for long time, store it in air tight container in cool and dry place.

Notes:

  1. The colour of the Red Chilli Powder depends on the quantity of Kashmiri Mirch added along with Red Chilli. Also adding Kashmiri Chilli enhances the flavour and is less spicy than the Red Chilli. It gives flavour as well as colour.
  2. You can also prepare the Red Chilli Powder with only Long Red Chilli. But it will not give the colour as we have obtained above. The colour will be light red and it will spicier.
  3. Roast the Chillies under low flame so that it does not burn. If it burns, then it will ruin the taste of the Red Chilli Powder.
  4. While roasting, keep stirring the chillies regularly and do not leave it unattended. Keep mixing it continuously so that it is evenly roasted and does not burn. If it burns, the colour of the powder will be little brownish.
  5. The roasted Chillies should be grinded only after it cools completely. Also store the masala only after it gets cooled after grinding.
  6. Here we have added Rock Slat. It helps in keeping the Red Chilli fresh for longer time. It prevents from infesting from insects and bugs.
  7. Store the Red Chilli Powder in an air tight container. It can be used for few months if stored in a packed container. Do not use wet spoon or wet hand for the masala.
  8. The Red Chilli Powder can also be prepared without roasting it. Simply dry the chillies under sun for few days and then blend it to make smooth powder.
