Dabeli Masala is the main ingredient of Kutchi Dabeli or so called Dabeli. It is easily available in the market. But Homemade Dabeli Masala Powder is different. The taste of the homemade dabeli masala powder is aromatic and flavourful. It is a Gujarati Masala which has its origination from Kutch in Gujarat. So people also call it as Kutchi Dabeli Masala. Different people from different region prepare it in different ways. Only one or two spices differ. Today we will be preparing the traditional and authentic Dabeli Masala. We use it to prepare Dabeli.

The taste and ingredients of this recipe can be better understood by whom better than the people of Gujarat and Maharashtra. I am in Gujarat now and I have found the secret of this masala from one of my friend. So I decided to share the secret of it. I would request you to give a try and share your experience. This Masala is used to make the popular Gujarati snack, Dabeli, where potato mixture is mixed with the Masala Powder and is sandwiched between the pav.

People prepare this Masala in different ways. Addition of few ingredients changes the flavor and aroma of it. Some people skip the addition of sugar. But I would suggest you to add it. This Homemade Masala is in dry form. Store it in tight container in freeze so that it lasts for many months. To use the masala, first add Sweet Chutney to it. There are various spices that we find in the market which makes our task of preparing different recipes easy and quick. It reduces our task of adding different spices individually. However there are various spices which are adultered and are not pure. Here comes handy our Homemade Masala. It is pure, aromatic and tasty and is also hygienic. At my home I prefer not to use spices bought from the market and I mostly use spices that I make at home. I would suggest you to make spices at your home only. Prepare it once and store it properly to use in any type of recipes.

Homemade Dabeli Masala Powder is prepared by dry roasting the spices and then grinding it to powder form. It is used to make the popular Gujarati snack, Dabeli.

Ingredients:

  • 1 tablespoon Sesame Seeds
  • 4 tablespoon Dry Grated Coconut
  • 4 tablespoon Coriander Seeds (Sabut Dhania)
  • 1 tablespoon Fennel Seeds (Saunf)
  • 1/2 tablespoon Cumin Seeds (Jeera)
  • 4 pieces Cloves (Laung)
  • 1 inch Cinnamon Stick (Dalchini)
  • 1 piece Bay Leaf (Tejpatta)
  • 1/2 teaspoon Black Pepper Corns (Kali Mirch)
  • 1 piece Star Anise (Chakri Phool)
  • 3 pieces Green Cardamom Seeds (Hari Elaichi)
  • 2 piece Black Cardamom (Badi Elaichi)
  • 4 tablespoon Kashmiri Red Chilli Powder
  • 1 teaspoon Black Salt (Kala Namak)
  • 3 tablespoon Sugar

Instructions:

  • Switch on the stove and heat Pan over medium flame.
  • Add Coriander Seeds, Fennel Seeds, Cumin Seeds, Sesame Seeds, Cloves, Cinnamon Stick, Bay Leaf, Black Peppercorns, Star Anise and Black Cardamom.
  • Now turn the flame to low and roast them for 3-4 minutes. Keep stirring the spices continuously.
  • Take the Green Cardamom, peel out the outer layer and take out the seeds.
  • Add the Green Cardamom seeds, along with Dry Grated Coconut, Kashmiri Red Chilli Powder and Black Salt.
  • Roast them for 1-2 minutes more in low flame. Roast under low flame so that the spices does not burn.
  • Switch off the stove and allow the ingredients to cool down to room temperature.
    Homemade Dabeli Masala Powder
  • Transfer the roasted spices to a grinder jar. Add sugar to it.
  • Grind all the ingredients to make a smooth fine powder. Aromatic Homemade Dabeli Masala Powder is ready to be used in your favourite recipes.

Notes:

  1. After preparing the Dabeli Masala Powder, you can store it for 10-12 months. It should be kept in air tight container and refrigerated.
  2. You can roast the spices in oil, but I would suggest you to dry roast it. It maintains the aroma of the spices.
