Aalo Chop is a Bengali fried snacks recipe prepared in the homes very frequent. It is also famous in Bihar, Jharkhand, Odisa and parts of Eastern UP. The process of making Aloo Chop is similar to Batata Vada or Bonda. However the taste of Aloo Chop and Batata Vada is slightly different. It is because of the ingredients used in preparing the stuffing. In Aloo Chop we use additional spices and herbs such as Onion, Tomato, Coriander Powder, Cumin Seeds, etc. We do not use these ingredients while preparing Batata Vada.

Aloo Chop is a famous street food in various states of the country. To prepare it, deep fry the Potato stuffing balls coated with Gram Flour (Besan) batter in oil. The taste of this dish depends on how well we prepare the potato stuffing. The quantity of the spices should be proper to get a good taste of the chop. Fry the mashed potatoes with onion, tomatoes, chilli and few spices to make the Potato stuffing. We must also keep in mind that the batter should not be too thin nor too thick. The thickness should be proper so that it can hold the potato stuffing balls. If the batter becomes thin, add more besan into it. If it becomes thick, add water to it. It should have the right consistency to wrap the potato balls properly.

Here we are going to prepare Aloo Chop by using besan batter. There is another way to prepare Bengali Aloo Chop. In this method, we do not use gram flour batter. It is similar to the preparation of Vegetable cutlet. The potato stuffing balls are rolled with Bread Crumbs and then fried in oil. This type of Aloo chops is also very tasty. I will share the recipe in my later posts.

Aloo Chop or Potato Chop can be served with Coriander Chutney or Mint Chutney or Tamarind Chutney or Ketchup.

Aloo Chop/ Potato Chop/How to prepare Aalo Chop

Aloo Chop or Potato Chop is prepared by deep frying the Potato stuffing balls coated with besan. The taste of Aloo Chop depends on the stuffing prepared.

Ingredients:

Batter for Aloo Chop:

  • 1 cup Gram Flour (Besan)
  • 1/8 teaspoon Turmeric Powder (Haldi)
  • 1/8 teaspoon Red Chilli Powder
  • A pinch Baking Soda
  • A pinch Asafoetida (Hing)
  • 1/2 cup Water (or as required)
  • Salt (as required)

For Aloo Chop Stuffing:

  • 3 medium Boiled Potatoes
  • 1 medium Finely Chopped Onion
  • 1 medium Chopped Tomato
  • 1 piece Chopped Green Chilli
  • 1/4 teaspoon Cumin Seeds
  • 1/4 teaspoon Turmeric Powder (Haldi)
  • 1/4 teaspoon Red Chilli Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Ginger Garlic Paste
  • 1 tablespoon Oil
  • 1 tablespoon Chopped Coriander Leaves
  • Salt as required

Instructions:

Preparation of Batter:

  • Take Gram Four (Besan), Turmeric Powder, Red Chilli Powder, Baking Soda, Asafoetida and Salt in a large bowl.
  • Add water and mix all the ingredients together with the help of a spoon or spatula so that it is mixed properly.
  • We must add water to the mixture turn by turn to prepare a smooth batter. The gram flour batter should not be thin. It should be able to hold the potato stuffing balls.
  • If the batter becomes thin, you can add more besan to it. If it is thick, add more water to it. Keep the batter aside.

Preparation of Aloo Chop stuffing:

  • Peel out the outer layer of the boiled potatoes.
  • Take all the peeled off potatoes in a large bowl and mash them with hand or spatula. Keep it aside.
  • Heat oil in a pan over medium heat. Add Cumin Seeds to it.
  • When Cumin Seeds starts crackling, add Chopped Green Chilli and saute it.
  • 5. Now add Chopped Onion and fry it till light golden brown.
  • Now add Chopped Tomatoes and Salt. Cook till the tomatoes become soft and tender.
  • Add Turmeric Powder, Red Chilli Powder, Coriander Powder and Ginger Garlic Paste. Mix it and cook the spices for few minutes.
  • Now add the mashed Boiled Potatoes and mix it so that the spices spread all over the potatoes.
  • Cook for 2-3 minutes. At last add Chopped Coriander Leaves to the potato stuffing.
  • Mix and spread the Coriander all over the stuffing. Switch off the stove.
  • Allow the mixture to cool down. Stuffing for Aalo Chop is ready.

Preparation of Aloo Chop:

  • Take few drops of oil in the palm, mix it and apply uniformly all over the palm.
  • Take small amount of potato stuffing and make balls of it. Make balls for all the stuffing. Keep them aside in a separate plate.
  • Heat Oil in a Kadai over medium heat.
  • Take a stuffing ball, dip it into the batter and roll it with the batter. The batter should completely cover the potato balls.
  • Take it out of the batter and gently drop it into the oil. Add more such coated balls.
  • Fry them till they are light golden brown from outside.

  • When it changes its colour, take them out from the oil and place over the kitchen towel to absorb the excess oil.

  • Similarly fry the remaining stuffed balls. Aalo Chop is ready to be served, Serve it with Ketchup, Sweet Chutney or Green Chutney.

Notes:

  1. These Chops are also called Batata Vadas in Maharashtra.
  2. Grated Ginger and Garlic can be used in place of Ginger Garlic Paste.
  3. The thickness of the Gram Flour (Besan) should be appropriate so that the potato balls can hold the batter properly.
  4. To prepare spicy Aalo Chop, you can add more chilli to it. Add as per your preference.
