Bread Pakoda is a popular snacks and famous street food in India. It is mostly prepared during monsoon season. Bread Pakoda can be prepared in two ways. One is Plain Bread Pakoda and the other is Stuffed Bread Pakoda. Plain Bread Pakoda takes very less time compared to Stuffed Bread Pakoda. Today we will be making Stuffed Bread Pakoda. It is prepared from bread stuffed with mashed potatoes, dipped in batter made from Besan and then deep fried in oil. For stuffing, Potato is first boiled, mashed and then fried in oil with different spices. In addition to potato, few vegetables can also be added. Here I have prepared the mixture for stuffing by mixing vegetables such as Peas, Carrot and French Beans. If you want you can skip these ingredients and prepare the filling only by using potatoes.

Stuffed Bread Pakoda

Bread Pakoda is very crispy and crunchy and very easy recipe to prepare at home. It can be served in breakfast and also as a snack during evening hours. The taste of Bread Pakoda depends upon the taste of the filling used for stuffing. It can be served hot with Green Chutney or Tomato Ketchup along with hot tea

Ingredients:

  • 8 slice Bread
  • Oil for Deep Frying

For Stuffing

  • 2 medium Boiled Potato
  • 1 tablespoon Peas (Optional)
  • 1 tablespoon Chopped French Beans (Optional)
  • 1 tablespoon Chopped Carrot (Optional)
  • 1 medium Chopped Onion
  • 2 medium Chopped Tomatoes
  • 1/2 teaspoon Ginger Garlic Paste
  • 1/2 teaspoon Cumin Seeds (Jeera)
  • 2 medium Chopped Chilli
  • 1 tablespoon Chopped Coriander Leaves
  • 1/2 teaspoon Chilli Powder
  • 1/2 teaspoon Turmeric Powder
  • 1/4 teaspoon Garam Masala
  • Salt to Taste
  • Oil

For Preparing Batter

  • 1 cup Gram Flour (Besan)
  • 1 tablespoon Chopped Coriander Leaves
  • 1/2 teaspoon Chilli Powder
  • 1/2 teaspoon Turmeric Powder
  • A pinch Hing (Asafoetida)
  • A pinch Baking Soda
  • Salt to Taste

Instructions:

For Preparing Stuffing

  • Boil Potato and Peas in a cooker till it is cooked.
  • Take it out from the cooker after it cools down and mash them or grate them together. Keep it aside.
  • Heat oil in pan over medium flame. Add Cumin Seeds and allow it to crackle.
  • Add Chopped chilli and sauté for 15 seconds. Then add Ginger Garlic paste. Cook for few seconds.
  • Add Chopped Onion and fry till it turns light golden brown.
  • Now add Chopped Tomatoes and cook till it becomes soft and mushy. Add Salt so that the tomato gets cooked quickly.
  • When the tomatoes become soft, add Chopped Carrot and French Beans. Fry them for 2 minutes.
  • Add Turmeric Powder, Chilli Powder and Garam Masala. Mix them and cook for another 1 minute.
  • Now finally add mashed Potato and Peas and mix them. Also add Chopped Coriander Leaves. Mix it properly so that it is evenly spread throughout the potato mixture.
  • Cook the mixture for 5 minutes. Filling for stuffing is ready. It is filled between the bread slices before deep frying.

For Preparing Batter

  • Take the Gram Flour (Besan) in a large bowl.
  • Add Coriander leaves, Chilli Powder, Turmeric Powder, Hing, Baking Soda and Salt to the besan. Mix them.
  • Add water to the mixture and mix all the ingredients to make a thick batter. Keep it aside for some time.
  • The batter should not be too thick nor too thin.

For Preparing Stuffed Bread Pakoda

  • Take the mixture of mashed potato with a spoon and spread evenly over a slice of bread. Cover it with another slice of bread and press it. Prepare it for all the bread slices.
  • Take the stuffed Bread Slice and cut them into two pieces in triangle shape. The bread slice can also be cut into 4 pieces to make smaller bread pakodas
  • Heat oil in a kadai over medium flame. Drop a pinch of besan into the oil. If it comes to the surface of the oil, you are ready to fry the pakodas.
  • Take the stuffed bread and dip it into the batter. Roll it so that it gets completely covered with the besan (Gram Flour).
  • Now take the bread out of the batter and slowly put them into the oil.
  • Fry it till it becomes light golden brown. Keep on stirring the pakodas so that it is cooked evenly.
  • Take it out and put them in a paper towel so that the excess oil is absorbed by the tissue paper.
  • In the same way, deep fry all the bread slices one by one.
  • Stuffed Bread Pakoda is ready to be served.
  • Serve it hot with Green Chutney or Tomato Ketchup along with hot tea.

Notes:

  1. Chop the vegetables such as Carrot and French Beans into small pieces so that it can get easily mixed with potato.
  2. Peas, French Beans and Carrot are optional. Mashed potatoes can be fried without these ingredients also.
  3. The thickness of the batter should be such that it can properly roll and cover the entire bread slice.
  4. Add water to the mixture little by little, so that the consistency of the paste remains proper.
  5. Fry the pakodas over medium flame. If you cook over low flame, the pakodas will absorb more oil. If you cook at high temperature, the inner part of the pakoda will not be cooked properly.
