Homemade Black Pepper Powder or Kaali Mirch Powder is an authentic Indian spice used in preparing curry recipes. It is easy and quick to prepare. It is prepared by grinding roasted Black Pepper Corns into fine powder. Black Pepper Corns can either be dry roasted under low flame or can be dried under sun for few days. Mostly I prepare it by dry roasting under low flame since it is quick to make and does not involve sun drying for a number of days.

I normally prepare all the spices at home only since it has natural taste, it is hygienic and free from any adulteration. Also the taste of the Homemade Spices is very much different from the readymade spices. It adds extra flavour and aroma to the food that we prepare at home. The spices available in the market are normally of low quality and there is addition of too much colour and chemicals into it. Homemade Spices are of superior quality than readymade spices. Prepare it once and store for few months to use it while cooking.

To prepare Black Pepper Powder, first dry roast the Pepper Corns under low flame for few minutes. Do not increase the flame as it will burn the pepper corns. When the pepper corns slightly changes its colour and aromatic smell starts coming out then switch off the stove. Allow it to cool to room temperature. On cooling transfer it to a mixer grinder jar and blend it to make fine powder. Take it out in a plate and let it cool down completely. After cooling transfer it to air tight container and store it in cool and dry place. Homemade Black Pepper Powder is ready to use in different homemade recipes. Use dry spoon while using the masala.

The other way of preparing the Black Pepper Powder is by sun drying. Allow the pepper corns to dry under sun for few days. After drying transfer it to mixer grinder jar and grind it to make fine smooth powder. While preparing Black Pepper Powder, use high power mixer grinder to blend the pepper corns. Pepper Corns are slightly hard and require extra force to grind. However roasting under low flame will make the task easier to grind.

To prepare perfect Black Pepper Powder at home, please follow the below tips:

  1. While roasting the Pepper Corns, do not leave it unattended for long. It may burn which will ruin the taste of the masala. So keep stirring it continuously.
  2. Roast the corns under low flame. It helps in proper roasting and prevents it from burning. Roast it till it slightly changes its colour and starts leaving fragrance.
  3. Grind the roasted pepper corns to make smooth powder only when it cools completely.
  4. Store the Homemade Black Pepper Powder in an air tight container after it cools completely. You can use it for few months if stored in a packed container. Do not use wet hand or spoon while using the masala.

Black Pepper Powder is not only used to prepare curries but also used in Raita, Salad, Pasta, Soups, Pizza, Sandwich and Chutney. You can prepare the masala either in coarse form or in fine powder form. It totally depends upon you choice. To make coarse powder, grind it for few minutes while for making fine powder, grind till you get smooth powder.

Equipments:

Ingredients:

  • 500 grams Black Pepper Corns½

Instructions:

  • Heat heavy bottom pan over low flame.

  • Add the Black Pepper Corns and dr¾y roast till it changes its colour to light brown.

  • The roasting process will take approximately 5 minutes. Switch off the stove.

  • Allow the roasted pepper corns to cool down completely to room temperature.

  • When it cools down completely, transfer them into a mixer jar and grind it to make fine smooth powder.

  • Take out the powder in a wide plate and allow it to cool completely.

  • After it cools down, transfer it to an air tight container.

  • Homemade Black Pepper Powder is ready to use. Store it in cool and dry place.

Notes:

  1. Roast the Black Pepper Corns under low flame so that it does not burn. If it burns, the taste of the masala will change and will also change the taste of the recipe where it will be used.
  2. While roasting the Black Pepper Corns, keep stirring it regularly and do not leave it unattended for long duration. Keep stirring it continuously so that the pepper corns are evenly roasted and do not burn.
  3. The roasted Pepper Corns should be grinded only after it cools completely. Also store the masala only after it cools down completely after blending.
  4. Store the Black Pepper Powder in an air tight container. Do not use wet hand or wet spoon to take out the masala. This masala powder can be used for few months if stored in air tight container under cool and dry place.
  5. Black Pepper Powder can also be prepared without roasting. Dry the pepper corns under sun for few days and then grind it to make smooth fine powder.
