Vanilla Muffins is a rich, creamy, moist and delicious dessert recipe prepared from All Purpose Flour, Curd, Milk, Egg and Sugar Powder. It is very easy and quick to prepare. Muffins are one of the favourite snacks among the kids. They just love to have it in their lunch tiffin box.

To prepare Vanilla Muffins, Maida is mixed with other ingredients to prepare the batter which is then baked to prepare the muffins. Here we will be using Egg while preparing the batter. If you do not consume egg, you can skip it. All the ingredients that we use in preparing the Muffins are divided into two parts, wet ingredients and dry ingredients. Both the wet and dry ingredients are mixed separately and then later on mixed together to prepare the batter.

There are mainly two version of preparing muffins, Chocolate Muffins and Vanilla Muffins. The process of preparing both the muffins is similar. The only difference is the addition of Cocoa Powder and Chocolate Chips in Chocolate Muffins. I will be sharing Chocolate Muffins recipe in my coming post. Try this recipe also.

There are merely four steps involved in preparing Vanilla Muffins:

  1. Mix Dry Ingredients: Here we mix all the dry ingredients such as Maida, Milk Powder, Sugar Powder, Baking Soda, Baking Powder and Salt by passing it through sieve.
  2. Mix Wet Ingredients: In this step, we mix wet ingredients such as Curd, Egg, Milk, Vanilla Essence and Vegetable Oil in a separate bowl.
  3. Mix Dry into Wet ingredients: After mixing the dry and wet ingredients separately, we then mix the dry ingredients into the wet ingredients. We combine both the ingredients with the help of whisk or spatula to prepare the batter.
  4. Baking the Vanilla Muffins: After preparing the batter, transfer the batter into the mould and bake it to prepare the Vanilla Muffins.

To prepare soft, moist and creamy Vanilla Muffins, follow below tips and tricks:

  1. Mode of Baking: Convection Microwave Oven has different modes of cooking, so select the required mode to bake the muffins. I usually bake the muffins in convection mode only which takes approximately 20 minutes.
  2. Soft and Moist Muffins: To make the muffins soft and moist, we will be using Curd to prepare the batter. Apart from Curd, we will also use Milk, Oil and Egg which also help in making moist muffins. All these ingredients help in retaining the moisture. Egg helps in binding the batter together and also add rich flavour to muffins.
  3. Preparation of Batter: To prepare the batter, first mix the dry and wet ingredients separately. Then add the dry mixture into the wet mixture. With the help of spatula or whisk, combine the mixture well. Do not over mix the batter or else the muffins will become dense and tough after baking. Also do not use electric blender to mix the batter. This will also result in over mixing and will make the muffins dense.
  4. Consistency of batter: The muffins batter should neither be too thick nor too thin. Vary the wet ingredients such as Curd, Milk and Vegetable Oil as per the required consistency. If the batter becomes thick then add extra amount of milk to it. If the batter is thin then add extra maida to the batter.
  5. Baking temperature and Time: The temperature and time of baking the muffins decides how well your muffins will be. Here we have preheated the oven to 170 degree celsius. Then baked the muffins for approximately 20 minutes. You can vary the time of baking depending upon your microwave oven. If you are not so sure of the time, then you can bake the muffins in small intervals of few minutes. Also keep checking the muffins while it is being baked.
  6. To check the Muffins whether it is baked completely: To check the muffins whether they are baked properly or not, insert a toothpick into the muffins and take it out. If it comes out clean with no wet batter, it is ready. When you check the muffins with toothpick, the melted chocolate may stick to it. Don’t confuse it with raw batter.

To prepare Vanilla Muffins, preheat the microwave oven to 170 degree celsius. Also line the muffins tray with paper mould. Now take a large bowl and place sieve over it. Add the dry ingredients such as All Purpose Flour, Milk Powder, Sugar Powder, Baking Soda, Baking Powder and Salt. Sift all the ingredients through the sieve and then mix them uniformly. Keep it aside.

Now take another large bowl and add the wet ingredients such as Yoghurt, Eggs, Milk, Vegetable Oil and Vanilla Essence. Mix the wet ingredients uniformly with the help of whisk or spatula. After mixing the wet ingredients properly add the mixture of dry ingredients to it. Also add required amount of Tutti Fruity. Combine well both the mixture with the whisk so that there are no lumps in the muffins batter. Batter is ready to bake.

Pour the batter into the mould, filling it up to 3/4th of the mould level. Top the batter with some more Tutti Fruity. Now place the muffins tray into the pre heated oven. Bake the muffins for about 20 minutes. After 20 minutes take out the tray and check the muffins using a toothpick. If it comes out clean, it means the muffins are ready to serve. If not bake it for another few minutes. Allow the Vanilla Muffins to cool down before serving. Soft and delicious Vanilla Muffins is ready to serve.

Equipments:

Ingredients:

Dry Ingredients:

  • 1 cup All Purpose Flour (Maida)
  • 1/2 cup Sugar Powder
  • 1/4 cup Milk Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/8 teaspoon Salt

Wet Ingredients:

  • 1/2 cup Yoghurt/Curd
  • 1 piece Eggs
  • 1/4 cup Milk
  • 1/4 cup Vegetable Oil
  • 1 teaspoon Vanilla Essence
  • Tutti Fruity as required.

Instructions:

  • First preheat Microwave Oven to 170 degree celsius. Then line muffins tray with cupcake liners or paper muffins mould.
  • Now take a large bowl and place sieve over it. Add All Purpose Flour (Maida), Milk Powder, Sugar Powder, Baking Soda, Baking powder and Salt.
  • Sift all the ingredients through the sieve. With the help of hand or whisk, mix the ingredients uniformly. Keep the dry mixture aside.
  • Take another large bowl and add Curd, Egg, Milk, Vegetable Oil and Vanilla Essence. Mix them well by using a whisk. You can vary the amount of wet ingredients as per your required consistency.
  • After mixing the wet ingredients properly, add the dry mixture into the wet mixture to prepare the muffins batter. Also add required amount of Tutti Fruity.
  • Take a spatula or whisk and combine both the wet and dry mixture uniformly. Do remember to see that there are no lumps in the batter.
  • Now take the prepared batter and pour it into the muffins mould filling it up to 3/4 of the mould level. Top the batter with extra Tutti Fruity.
  • Place the muffins mould inside the preheated microwave oven and bake it for approx. 20 minutes at 170 degree celsius.
  • Once baked, take a toothpick and insert to check whether it has properly baked or not. If the toothpick comes out clean, it means its ok. If not you will need to bake for some extra minutes more.

  • Take out the muffins tray from the oven and let it cool. Tasty and delicious Vanilla Muffins is ready to serve. Serve it as a dessert. You can store the Vanilla Muffins in refrigerator for few days.

Notes:

  1. To prepare the muffins batter, mix it with a whisk or spatula till it is well combined. Do not over mix. Also do not use electric blender to mix the batter. It may result in over mixing and make the muffins dense and tough.
  2. Vary the wet ingredients such as Milk, Oil and Curd as per the required consistency. Do not make the batter too thin or too thick. If the batter becomes thin, add small amount of maida to thicken the batter. If it becomes too thick, add small amount of milk to it.
  3. To check whether the muffins are baked properly or not from inside, insert a toothpick into the muffins. If it comes out clean with no wet batter, it is completely baked. If the toothpick is wet then bake for some more time. When you check the muffins with toothpick, the melted chocolate may stick to it. Don’t confuse it with raw batter.
  4. After baking, allow the muffins to cool down before serving. You can use Chocolate Chips, White Chocolate Chips or Butterscotch chips to top the muffins.
