Paneer Pav Bhaji is a popular Street food of North and West India prepared from a variety of vegetables such as Potatoes, French Beans, Carrot, Capsicum, Cauliflower and Green Peas. These vegetable are boiled, mashed and cooked with Tomatoes and Spices to prepare Paneer Bhaji. Paneer Bhaji is then served with Pav Buns toasted in Butter or Ghee. Butter and Paneer add flavor and taste to the Pav Bhaji. Paneer Pav Bhaji is not only served as a starter or appetizer but also as a full course meal in lunch and dinner.
Paneer Pav Bhaji is an extended version of popular and traditional Pav Bhaji recipe. It is prepared in the same manner with the same vegetables and spices but with an addition of Paneer cubes. In addition to Paneer cubes, you can also add grated paneer. It will further boost the taste of the bhaji. If you want, you can add Paneer to the bhaji either in cube form or in grated form. It is your own choice. Also you can fry the paneer cubes before adding it to bhaji.
I am very personally fond of Street Food and Pav Bhaji is one of my favourite street foods. Initially I used to have Pav Bhaji in street side food stalls or restaurants, but now I frequently prepare it at home. Choice of vegetables is very important while preparing Paneer Bhaji. So select vegetables as per your choice. Potato is a must use vegetable in bhaji. To prepare bhaji, use Pav Bhaji Masala which is readily available in the market. Use of Pav Bhaji Masala adds extra flavour to the bhaji.
You might be eating Pav Bhaji in your nearby stalls and restaurants regularly which you would be loving a lot. Give a try to this recipe at your own place. I am damn sure you will definitely be surprised with the taste and flavor of it and you will forget about the Pav Bhaji that you have been regularly eating in restaurants. The very next day you will stop ordering Pav Bhaji whenever you go outside with your family for dining. Paneer Pav Bhaji is the most common food that a family loves to prepare whenever guests arrive at their home. It’s very yummy and delicious.
Restaurant Bhaji appears little reddish. This is due to addition of red colour. Addition of synthetic colour is not good for health. So if you want to add red colour to your bhaji, you can add natural red colour. Here we will be using Kashmiri Lal Mirch to give it a reddish colour.
To prepare Paneer Pav Bhaji, first let us prepare Paneer Bhaji. Take all the vegetables such as Potatoes, French Beans, Carrot, Cauliflower, Capsicum and Green Peas. Wash and chop them into small pieces. Transfer the chopped vegetables into pressure cooker. Add Water just covering the vegetables. Close the lid and cook the vegetables for about 3-4 whistles over medium flame. Switch off the stove and allow the pressure of the cooker to release on its own. Once the pressure is released, open the lid and mash the veggies with the back of spatula. After mashing the veggies keep it aside.
Now heat Oil in a kadai over medium heat. Add Cumin Seeds and allow it to crackle. Next add Chopped Chillies, Chopped Onion and Ginger Garlic paste. Cook till the Onion becomes light golden in colour. Now add Chopped Tomatoes and Salt. Cook till the tomatoes become soft and mushy. Once the tomatoes become soft and mushy, add spices such as Turmeric Powder, Kashmiri Lal Mirch, Coriander Powder and Pav Bhaji Masala. Mix the spices and cook till the raw smell of the spices goes off. Now add the mashed veggies to the spices and mix it properly. Simmer the bhaji for few minutes by stirring it at regular intervals.
If the bhaji becomes little dry, you can add extra water to it. Now add Paneer Cubes and simmer it again for 2-3 minutes. After 2-3 minutes, switch off the gas and add Butter and Lemon Juice to the bhaji. Mix them properly. Paneer Bhaji is ready. Now take the Pav Buns and cut them into two halves. Heat the tawa and add butter to it. Toast the buns till it becomes slightly golden in colour. Toast all the buns. Paneer Pav Bhaji is ready to serve. Serve it hot along with Chopped Onion and Lemon wedges.

Paneer Pav Bhaji / How to prepare Paneer Pav Bhaji at home
Equipments:
- Pressure Cooker
- Vegetable Masher
- Tawa
- Kadai
Ingredients:
For Pressure Cooking Vegetables:
- 2 medium Chopped Potatoes
- 1/2 Cup Chopped French Beans
- 1/2 Cup Chopped Carrot
- 1/2 Cup Chopped Cauliflower
- 1/2 Cup Chopped Capsicum
- 1/2 Cup Green Peas (Fresh or Frozen)
- Water as required
For Bhaji:
- 1/2 cup Paneer Cubes (Small cubes)
- 3 medium Chopped Tomatoes
- 3/4 cup Chopped Onion
- 2 medium Chopped Green Chilli
- 1 teaspoon Cumin Seeds
- 1 tablespoon Ginger Garlic Paste
- 2 teaspoon Pav Bhaji Masala (Readymade)
- 1/4 teaspoon Turmeric Powder
- 2 teaspoon Kashmiri Lal Mirch
- 1 teaspoon Coriander Powder
- 2 tablespoon Oil
- Salt to taste
For Garnishing:
- 1 teaspoon Lemon Juice
- 4 tablespoon Butter
- 1/4 cup Grated Paneer
- 2 tablespoon Finely Chopped Coriander Leaves
For Toasting Pav:
- 8 pieces Pav Buns
- Butter as required
Instructions:
Pressure Cooking of Vegetables:
- Take the vegetables like Potatoes, French Beans, Carrot, Cauliflower, Capsicum and Green Peas. First wash all the vegetables properly and then chop them finely.
- Transfer the chopped vegetables in a pressure cooker. Add Water to just cover the vegetables.
- Close the lid of the pressure cooker and cook the vegetables for about 3-4 whistles on medium heat.
- After 3-4 whistles, turn off the flame and let the pressure release by itself. After the pressure is completely released, open the cooker lid and mash the vegetables with a masher or with the back side of the spoon. Keep it aside. If the vegetables are not cooked properly, pressure cook it again for 1-2 whistles or as required.
Preparation of Paneer Bhaji:
- Heat 2 tablespoon of Oil in a kadai over medium heat. Once hot add Cumin Seeds and let it sizzle.
- Next add Chopped Chilies, Chopped Onion and Ginger Garlic paste. Cook till the Onion becomes light golden brown in colour.
- Add Chopped Tomatoes and salt to it. Cook it till the Tomatoes become soft and mushy.
- Once the Tomatoes become soft and mushy, add Turmeric Powder, Kashmiri Lal Mirch, Coriander Powder and Pav Bhaji Masala.
- Mix all the spices and saute them for 2-3 minutes till the spices are cooked properly.
- Now add the mashed veggies to the spices and mix it well.
- Simmer the vegetables for about 5 minutes by stirring it at regular intervals. Add water as per your liking for the consistency. If the gravy becomes little dry you can add extra water to the bhaji.
- After 5 minutes, add the Paneer Cubes and simmer for another 2-3 minutes.
- Switch off the flame and add Butter and Lemon Juice to the bhaji. Mix them properly. Add Butter as per your requirement since it adds extra taste to the bhaji.
- Paneer Bhaji is ready. Garnish the Bhaji with Chopped Coriander Leaves, Grated Paneer and a cube of Butter.
For Buns:
- Slice all the Pav buns in two halves. Heat the tawa and add butter to it. As the butter melts toast the buns from both the sides till it becomes light golden brown. Toast all the buns in similar way.
- Paneer Pav Bhaji is ready to serve. Serve the Pav with the Bhaji along with Chopped Onions and Lemon wedges.
Notes:
- Bhaji is prepared using different vegetables. You can choose as per your choice. Here we have used veggies such as Potatoes, French Beans, Carrot, Cauliflower, Capsicum and Green Peas. You can skip any of these if you want. However, potatoes are must. It’s the main ingredient of bhaji.
- Cook the vegetables for about 3-4 whistles. If the veggies are cooked properly and gets easily mashed, it’s fine. If it does not get mashed easily, cook it further for few more whistles.
- If you love to have spiciness in your food, you can add red chilli powder to the vegetables while cooking.
- Here we have simply added Paneer Cubes to the bhaji and cooked it. You can also fry it in butter before adding it to bhaji.
- Butter adds extra taste to the bhaji. Add adequate amount of it.
