French Fries or Potato Finger Chips is a popular fast food recipe that is prepared by frying Potato sticks and tossing with Salt and Herbs. It is crispy from outside and soft from inside. It is similar to French Fries that we have in Mc. Donalds. We usually have French Fries in Fast Food Restaurants that is served along with Burger. Today we will be preparing French Fries recipe which will be similar to the restaurant one.

We can prepare French Fries either by single frying or by double frying. Double frying is the most preferred one since it helps the potato sticks to cook properly from inside. In the first step of frying, we fry the potato sticks only to cook the potato from inside while in the second frying we fry to change the colour to golden and to make the potato light and crispy. You can prepare French Fries by single frying also but the chips will be less crispy.

To prepare French Fries, firstly cut the potatoes into sticks with uniform width. Wash it and parboil it. Drain the water and pat dry the potatoes. Heat Oil and then fry the potatoes till they gets cooked from inside. Take them out from the oil and place over kitchen towel to absorb the excess oil. Place them in a closed zip bag and freeze for 30 minutes. After 30 minutes take them out and go for the second round of frying. Fry them till they are crispy and golden in colour. Take it out from the oil and place over paper kitchen towel to absorb excess oil. Take them in a bowl and add Salt and Mixed Herbs. Toss it and then serve it immediately. French Fries is ready to serve. Serve it with Tomato Ketchup or Mustard Sauce.

French Fries or Potato Finger Chips is crispy fast food potato recipe prepared by deep frying potato sticks and then tossing it with Salt and Mixed Herbs.

Ingredients:

  • 3 medium Potatoes
  • 4 cups Water
  • Regular Salt or Rock Salt as required
  • Mixed Herbs as required
  • Red Chilli Powder or Paprika as required
  • Oil for Deep Frying

Instructions:

Preparation of Potato Fingers:

  • Take the Potatoes and peel off the outer layer with peeler.
  • Wash the Potatoes and then cut them into slices of 1/2 inch thickness.
  • Next take the slices and cut them into thin sticks of thickness 1/2 inch. Cut all the slices.
  • Take all the Potato sticks in a large bowl filled with water. Rinse the sticks so that the starch comes out of the potatoes.
  • Now take fresh water in a sauce pan and add Salt to it. Add the Potato sticks and heat the water. Boil the potatoes till they are parboiled. Boiling also helps in removing the starch.
  • After the Potato Sticks are parboiled, drain out the water. Rinse the potato sticks once again with fresh cold water to remove the remaining starch.
  • Drain out the water and place the Potato sticks over clean kitchen towel. With the help of the other edge of the towel, pat and dry the sticks.
  • Remember to dry the Potato sticks completely before starting to fry them. Also leave the sticks open for some time before frying so that it completely dries up.

Frying French Fries (First Frying):

  • Heat Oil in Kadai over medium heat.
  • When the Oil heats up, add the first batch of dried Potato sticks to the Oil. Do not add enough potato sticks.
  • Fry the Potato Sticks by regularly stirring it till they are properly cooked. The Potato sticks should be properly cooked from inside and crust from outside.
  • While frying, the potatoes should not change its colour to brown from outside. Take out the half fried potatoes from the oil before it starts changing its colour.
  • Take the fried potato sticks out from the oil and place them over paper kitchen towel.
  • Take few more paper towel and place over the fried potatoes. Slightly press it to absorb the excess oil.
  • In the same manner fry the other batches of Potato sticks.
  • Allow the half fried potatoes to cool down to room temperature.
  • When it completely cools down, take the fried potatoes in zip bag, close it and keep in the freezer for at least 30 minutes.
  • After 30 minutes, take out the bag filled with half fried potatoes for second round of frying.

Frying French Fries (Second Frying):

  • Heat the same Oil over medium high or high flame.
  • Add the half fried Potato sticks into the Oil and fry them.
  • Fry the potatoes till they are crisp and golden in colour.
  • Remove the fried potatoes from the oil and place them over kitchen towel to absorb the excess oil.
  • Immediately take the fried potatoes in a bowl and add Salt, Red Chilli Powder and Mixed Herbs.

  • Shake and toss the potatoes so that all the ingredients are uniformly mixed with the fried potatoes.

  • Crispy and tasty French Fries is ready to be served. Serve it hot immediately with Tomato Ketchup or Mustard Sauce.

Notes:

  1. We have boiled the Potato sticks so that it gets cooked from outside and becomes easy to fry.
  2. If you want, you can skip the step of boiling the potatoes. If you are skipping this step then remember to cut the potatoes of thickness less than 1/2 inch so that it helps in cooking the potatoes while frying.
  3. The Potatoes are rinsed in Water to remove the starch. To make perfect French Fries, removing of excess starch is the most important step.
  4. In the process of frying the potatoes for the first time, remember to fry the potatoes for few minutes. The colour should not change to golden.
  5. In the second round of frying, cook the potatoes till they are crisp and golden in colour.
  6. After taking out the Potato sticks from the freezer, fry it immediately. It helps in making the sticks crispier. Be careful while adding the chilled potatoes into the oil. The oil may spill while adding the potatoes.
  7. The potatoes after cutting should not be left open for a longer time otherwise it may change its colour.
  8. For tasty and crispier French Fries, serve it immediately after frying it by tossing with Salt and Herbs.
