Instructions
Switch on the stove and heat Pan over medium flame.
Add Coriander Seeds, Fennel Seeds, Cumin Seeds, Sesame Seeds, Cloves, Cinnamon Stick, Bay Leaf, Black Peppercorns, Star Anise and Black Cardamom.
Now turn the flame to low and roast them for 3-4 minutes. Keep stirring the spices continuously.
Take the Green Cardamom, peel out the outer layer and take out the seeds.
Add the Green Cardamom seeds, along with Dry Grated Coconut, Kashmiri Red Chilli Powder and Black Salt.
Roast them for 1-2 minutes more in low flame. Roast under low flame so that the spices does not burn.
Switch off the stove and allow the ingredients to cool down to room temperature.
Transfer the roasted spices to a grinder jar. Add sugar to it.
Grind all the ingredients to make a smooth fine powder. Aromatic Homemade Dabeli Masala Powder is ready to be used in your favourite recipes.
Notes
After preparing the Dabeli Masala Powder, you can store it for 10-12 months. It should be kept in air tight container and refrigerated.
You can roast the spices in oil, but I would suggest you to dry roast it. It maintains the aroma of the spices.
