Sweet Lassi or Punjabi Lassi or simply called Lassi is a traditional chilled sweet and creamy drink that is prepared by blending Curd along with Sugar and Water in a blender or a mixer grinder jar. Sweet Lassi is a very simple and easy to prepare drink recipe because it requires very few ingredients to prepare. It is a North Indian drink that we mostly see during the summer season. It has its origination from the Indian State of Punjab which has now spread to other parts of the country.

Lassi can be prepared in two forms. It can be sweet or can be salty. In Punjab, lassi is thick and is creamy. We can prepare Lassi by whisking the curd either in mixer grinder or with the help of hand blender. In traditional way, wooden hand churner is used. In most of the parts of Punjab, people still use the wooden hand churner to prepare the lassi which has its own different taste. The taste and flavour of the lassi depends on the type and quality of curd that we use.

There are many advantages of having curd in our meal. We have curd in different forms such as Lassi, Chaach, Raita, etc. Lassi too has its own advantage. Usually Lassi helps in digestion if we have it after the meal. It also has natural cooling properties so people have it mostly in summer days. There are many variations of Lassi that we see in the market. We can prepare it at home also. There are variations such as Mango Lassi, Strawberry Lassi, Vanilla Lassi, Rose Lassi, Salty Lassi, etc.

To prepare Punjabi Sweet Lassi, take the Curd and Sugar along with required amount of Water in a blending jar. Whisk it with the help of electric hand blender or with traditional wooden churner till the liquid becomes smooth. Take it out in a serving glass and serve it by garnishing it with few saffron strands and dry nuts. To give a different flavour to the drink you can add cardamom powder and rose water. Some people like to add milk in place of water. If you want you can add it. However, here I am going to use water only.

Ingredients:

  • 2 cups Curd (Yoghurt)
  • 3 tablespoon Sugar
  • 1/4 cup Water
  • Few Strands Saffron (Optional)
  • 2 tablespoon Dry Fruits (Optional)

Instructions:

  • Take 2 cups Curd in a large bowl.
  • With the help of spoon or wire whisker, whisk it till the curd becomes smooth.
  • Add Sugar and Water to the Curd. Add Water as per the consistency required for preparing lassi.
  • With the help of hand blender, blend it till a smooth consistency is formed.
  • Take the Lassi out in serving glass or jar.
  • Garnish with Saffron and Dry Fruits. Chilled Punjabi Lassi is ready to be served.

  • Serve it chilled by adding few Ice Cubes into it.

Notes:

  1. If you want to serve Chilled Lassi immediately, use chilled curd to prepare the Lassi.
  2. You can use chilled water to prepare instant chilled lassi. Do not add more water, since it will make the lassi thinner.
  3. To make thick and tasty lassi, use full fat curd.
  4. You can use Mixer grinder to prepare the lassi. It takes very less time in mixer grinder.
  5. Addition of water can be varied as per the consistency required for preparing lassi.
  6. For richer taste, you can also add cream to it and stir it.
