Poha is one of the most popular Indian Breakfast and Snacks Cuisine of North and Western India. In West India, it is famous in Gujarat and Maharashtra. Poha is a nutritious and healthy recipe prepared by tempering the washed Beaten Rice with some basic Spices and Chopped Onion. Poha is an easy and quick to prepare recipe most ideal to serve as a breakfast recipe. Beaten Rice has different name in different parts of the country. People refer it as Chewda in Hindi, Chuda in Odia, Chira in Bengali, Chura in Bihar and Jharkhand, Atukulu in Telugu, Avalakki in Kannada, Aval in Tamil and Malyalam.

Poha is healthy and nutritious since it does not involve much of spices. It is very light for our stomach and is easily digestible. Many nutritionists recommend it in meal as it is a good source of iron, carbohydrates, fibre, vitamins and antioxidants. It is beneficial for those who have diabetes, heart and skin problems. It also helps in weight loss as it is low in calories and has about 75 % of carbohydrates and 25 % fat.

Living in Delhi I never tried to prepare this recipe as I was not so fond of it. I even never tried to have it. In those days I mostly preferred Beaten Rice with Curd and Sugar in Makar Sakranti festival. Now since I have been living in Gujarat for past few years, my fondness of Poha has been increasing since then. It is one of the most famous breakfast recipes here. Initially I had it in my office. I liked it and then frequently ordered it as it was light and healthy and easy to eat in office. It was then that I got the motivation to prepare it at home. Now I frequently prepare it with different variation every time.

We can prepare Poha in different varieties by addition of few extra ingredients mostly vegetables to it. Most of the recipes procedure of preparation is similar with only variation in ingredients. Different variations of Poha Recipe are Kanda Poha, Matar Poha, Tomato Poha, Coriander Poha, Mix Vegetable Poha, Oatmeal Poha, etc. Indori Poha is also one of the famous Poha recipes where Fennel Seeds are added which changes the flavour of it. Today we will be preparing the most simple Poha using Beaten Rice, Onion, Chilli, Peanuts and few Spices.

To prepare Poha Recipe, first rinse the Beaten Rice with water till it becomes soft. The Rice should be moist and not wet or else it may break easily. Add required amount of Sugar and Salt to it and mix it. Now heat oil in a pan or kadai over medium heat. Roast the Peanuts till it becomes crunchy. Take it out in a bowl. In the same Oil, add Mustard Seeds and allow it to crackle. Then add Chopped Onion and fry till it becomes translucent. Next add Green Chilli and Curry Leaves and fry for few seconds.

After frying for few seconds, add Turmeric Powder and mix it with other ingredients properly. Fry for at least a minute. Take the Beaten Rice and add it to the spices. Mix it uniformly so that the spices coat each and every beaten rice grain properly. At last add Fennel Seeds, Roasted Peanuts and Chopped Coriander Leaves. Mix it and then switch off the stove. Poha is ready to serve. Serve it hot by garnishing with Sev and Coriander Leaves. You can also garnish with Chopped Onion, Grated Coconut, Pomegranate Seeds or Dry Fruits such as Almonds, Raisins, Cashews, etc.

Equipments:

  • Heavy Base Thick Pan or Kadai
  • Spatula

Ingredients:

  • 1.5 cups Poha (Parched Rice or Beaten Rice) (Medium to thick)
  • 4 tablespoon Peanuts
  • 1 large Chopped Onion
  • 2 piece Finely Chopped Green Chilli
  • 3/4 teaspoon Mustard Seeds (Black or Yellow)
  • 1/4 teaspoon Turmeric Powder
  • 1/2 teaspoon Fennel Seeds
  • 6-7 leaves Curry Leaves
  • 2 tablespoon Chopped Coriander Leaves
  • 1 teaspoon Lemon Juice (or Aamchur Powder)
  • 2 tablespoon Oil
  • 1 teaspoon Sugar
  • 3/4 teaspoon Salt
  • 6 tablespoon Sev (For Garnishing)

Instructions:

  • Take the Poha (Beaten Rice) in a large bowl and rinse it with water till they become soft. Strain the water from the Poha.
  • Add 1 teaspoon of Sugar and 3/4 teaspoon of Salt to the washed Poha. Mix all the ingredients gently. Keep it aside.
  • Now heat 2 tablespoon Oil in a kadai or pan over medium heat.
  • Add the Peanuts and roast it under low flame till it becomes crunchy.
  • After it is roasted properly, take it out from the Oil and keep it aside in a bowl.
  • In the same Oil under medium heat, add Mustard Seeds and allow it to crackle.
  • Next add Chopped Onion. Saute the onion till it becomes translucent.
  • When the Onion becomes translucent, add Finely Chopped Green Chilli and Curry Leaves. Saute all the ingredients for few seconds.
  • Now add Turmeric Powder and saute it for a minute.
  • Add washed Poha and mix it properly with other ingredients. Cook for few more minutes.

  • Finally add Fennel Seeds, Lemon Juice, Roasted Peanuts and Chopped Coriander Leaves. Mix all the ingredients and then switch off the stove.

  • Healthy and nutritious Poha is ready to serve. Serve it as a breakfast or snacks by garnishing with Sev and Coriander Leaves. You can also garnish it with Pomegranate Seeds.

Notes:

  1. For preparing Poha, use medium thick beaten rice and not thin beaten rice.
  2. Do not soak the Poha in water. Gently wash it in running water and then strain it. After washing, poha should be moist and not wet.
  3. We have added Salt into Poha after washing it. Add extra Salt as per your requirement while cooking. Also, add Sugar as per your liking of sweetness.
  4. Here we have roasted the Peanuts in Oil. If you want you can dry roast without using oil.
  5. You can also add dry fruits such as Cashews and Raisins. Also you can garnish with Pomegranate Seeds and Grated Coconut. Vegetables such as Peas, Carrot, etc. can also be used while cooking.
  6. To prepare Kanda Poha, add Potatoes along with Green Chill and Curry Leaves.
