Living In Delhi, I visit Lord Hanuman Temple every Tuesday and offer Sweet Boondi as Prashad in the temple. There are different sweets that we can offer as Prashad in the temple, but I like to offer only Sweet Boondi and the reason behind this is my fondness towards the Sweet Boondi. I really love to have Sweet Boondi. This is what gave me the confidence of preparing this sweet at home. Now I frequently prepare it at home and use it as Prashad for offering in Temple.

Sweet Boondi / Meethi Boondi Recipe

To prepare Meethi Boondi we need ladle comprising of small holes in it. We mostly use this type of ladle while frying anything in oil. The holes of the ladle should neither be too large nor too small. The size of the Boondi depends upon the size of the holes. We use small sieve ladle mostly to prepare Motichoor Laddoo. While preparing the Boondi for this recipe, we must also look at the temperature at which it is being made. Frying the Boondi at right temperature prevents it from sticking at the bottom of the kadai.

Preparing this recipe at home is not a big deal. The only tough job is preparation of round balls of Boondi while frying. To prepare this recipe, the most important thing that we need to focus on is the consistency of the batter and the sugar syrup. The consistency of the batter should be such that when it falls from the holes of the ladle it should form round small balls. This consistency only decides whether the Boondi will be round or not.

To prepare the right consistency of the batter, use water in batches while mixing it with Gram Flour. If in any case the batter becomes thin, you can add extra besan to it. The consistency of the batter should neither be too thick nor too thin. The consistency of the sugar syrup is also important. It should form at least single thread. It should not be like sugar syrup of Rasgulla. Consistency of Gram Flour batter and Sugar Syrup decides how perfect the Sweet Boondi will be made.

To prepare Sweet Boondi, first prepare batter from Gram Flour without any lumps in it. Next heat oil in a kadai over medium heat. After the oil heats up, hold the ladle over the oil with one hand. With other hand pour the batter over the ladle. The batter will automatically start falling as balls in the oil. Fry it till crisp and golden in colour. Take it out in a plate. Now prepare the Sugar Syrup and add the fried Boondi into it. Leave it for few hours so that the Boondi soaks the sugar syrup. Also at regular intervals, keep mixing it. After few hours the Boondi will completely absorb the sugar syrup juice. This is the time when Sweet Boondi is ready to serve. Serve it plain or by garnishing it with dry fruits.

Notes:

  1. To the prepared Sweet Boondi you can also garnish it with dry fruits such as pistachio, almonds, cardamom, dry coconut, etc.
  2. To add colour to the Boondi you can add food colour as per you choice. You can use any of the colours such as Lemon Yellow, Orange Red, Yellow, Red, Green, etc. You can also replace saffron strands with food colour.
  3. You can use Cardamom Powder in place of Green Cardamom Powder to prepare sugar syrup. Adding of cardamom is optional.
  4. The consistency of the sugar syrup should be proper. It should not be too thick or too thin.
  5. Oil is added to batter to make crispy Boondi.
  6. To prepare Sweet Boondi we need spatula with sieve. Select spatula with holes of proper size i.e. neither too big nor too small.
  7. Gram Flour batter should have proper consistency to make good Boondi. It should have dropping consistency such that on dropping the batter from a height, it falls continuously and does not break its path.
  8. If the consistency of the batter is too thin then the batter after falling from the spatula will flatten itself and the Boondi after frying will be flat in shape.
  9. If the consistency is thick then the batter will not fall easily from the spatula in droplets and tails will be formed which will ultimately give Boondi with tails formed in it. So the consistency of the Gram Flour batter should neither be too thin nor too thick.
