Sweet Boondi / Meethi Boondi Recipe

Sweet Boondi is a sweet recipe prepared from Gram Flour. First Gram Flour is mixed with water to prepare batter. The batter is then fried in oil to prepare the Boondi by passing it through a sieve. At last the fried Boondi is then added to Sugar Syrup to prepare Meethi Boondi. The Sugar Syrup should be of proper consistency.

Equipment

  • Spatula with Sieve (Jhar/Kharia/Jhaanjar) or Ladle with Sieve
  • Kadai

Ingredients

For Sugar Syrup:

  • 1 cup Sugar
  • Few Strands Saffron
  • 2 piece Green Cardamom
  • 2 cup Water

For Boondi:

  • 1 cup Gram Flour (Besan)
  • 2 teaspoon Vegetable Oil (For preparing batter)
  • 1 pinch Orange Food Colour
  • 1 pinch Baking Soda
  • Oil for frying
  • Water as required

Instructions

Preparation of Sugar Syrup

  • Take the Saffron Strands in a small bowl and add 2 teaspoon of water. Mix it and keep aside for few minutes.
  • To make Sugar Syrup, heat 1 cup of water with 1 cup of sugar over medium heat.
  • Boil the water till all the sugar completely dissolves.
  • Add the dissolved Saffron Strands and Green Cardamom to the boiling Sugar Syrup. If you do not have saffron, you can replace it with any orange or yellow food colour.
  • Stir it with the help of spatula and boil it till 1 thread consistency is obtained. Switch off the stove and keep it aside to cool.

Preparation of Boondi:

  • Take a large bowl and add the Gram Flour.
  • Add Water into it and mix it with whisk to prepare the batter.
  • Add Water in batches so that the batter does not become thin. Keep mixing the batter till all the lumps are removed.
  • Now add Oil and Orange Food Colour into the batter and mix it. Keep it aside for 10 minutes so that the Gram Flour absorbs the water properly.
  • Now heat Oil in kadai over medium heat.
  • First check the temperature of oil before starting to fry the Boondi. Drop small amount of batter into the oil. If it floats then it means it is properly heated to fry the Boondi.
  • Take the batter and add Baking Soda to it. Mix it properly for few seconds before adding it to the oil.
  • When the Oil has attained the desired temperature, take the ladle (ladle with sieve) and hold it over the kadai with one hand.
  • With the other hand, take the batter and pour over the ladle. The batter will start falling in the oil as droplets.
  • Pour the required amount of batter in the ladle depending upon the size of the kadai.
  • Fry the Boondi under medium flame till they are slight golden in colour and are crisp.
  • Take out the fried Boondi from the oil and place over kitchen towel to absorb excess oil.
  • In the same manner prepare Boondi for the remaining batter and keep in a separate plate or bowl.
  • This Boondi can be used to prepare other recipes such as Boondi ka Raita, Boondi ki Namkeen, Boondi ki Kadhi, etc.

Preparation of Sweet Boondi:

  • Take the fried Boondi and add it to the Sugar Syrup.
  • Gently toss the Boondi with spoon and mix it so that each and every Boondi is properly coated with the sugar syrup.
  • Allow the Boondi to rest for few hours so that it absorbs the sugar syrup properly. Mix the Boondi at intervals of 30 minutes to soak the syrup.

  • Sweet Boondi is ready to serve. Serve it plain or by garnishing with dry fruits.

Notes

  1. To the prepared Sweet Boondi you can also garnish it with dry fruits such as pistachio, almonds, cardamom, dry coconut, etc.
  2. To add colour to the Boondi you can add food colour as per you choice. You can use any of the colours such as Lemon Yellow, Orange Red, Yellow, Red, Green, etc. You can also replace saffron strands with food colour.
  3. You can use Cardamom Powder in place of Green Cardamom Powder to prepare sugar syrup. Adding of cardamom is optional.
  4. The consistency of the sugar syrup should be proper. It should not be too thick or too thin.
  5. Oil is added to batter to make crispy Boondi.
  6. To prepare Sweet Boondi we need spatula with sieve. Select spatula with holes of proper size i.e. neither too big nor too small.
  7. Gram Flour batter should have proper consistency to make good Boondi. It should have dropping consistency such that on dropping the batter from a height, it falls continuously and does not break its path.
  8. If the consistency of the batter is too thin then the batter after falling from the spatula will flatten itself and the Boondi after frying will be flat in shape.
  9. If the consistency is thick then the batter will not fall easily from the spatula in droplets and tails will be formed which will ultimately give Boondi with tails formed in it. So the consistency of the Gram Flour batter should neither be too thin nor too thick.
