Rava Uttapam or Vegetable Rava Uttapam is a South Indian recipe which has its origin from Tamil Nadu. It is a healthy diet that is made by cooking fresh veggies with rava batter. It is a thick pancake with veggies as toppings in it. Rava Uttapam is very easy and quick to prepare. It does not require fermentation and grinding. The process of preparing Rava Uttapam is similar to Rice Uttapam that we usually make with rice and urad dal batter. Rice Uttapam requires fermentation and grinding. So Rava Uttapam becomes quick and easier to make.
The main ingredient of Uttapam is batter. There are two ways of preparing Uttapam batter. One is by using Rice and urad dal (Rice Batter) and the other is by using Rava. Rice batter is similar to what we make to prepare Idli Recipe and Dosa Recipe. Rava Batter is made by mixing it with curd and water. Here we will be preparing Uttapam using rava batter. Rava batter is easy and quick to prepare as there is no need of making paste using mixer grinder. To prepare Rice batter, you need to soak the rice and urad dal in water overnight and then make a paste of it in mixer grinder. The taste of both the batter is similar. Rava Uttapam has a grainy texture. Rice batter requires fermentation while Rava batter does not as it is made by mixing curd into it.
The vegetables that you use to make this recipe can be of your own choice. You can add some extra veggies or you can skip any of these vegetables. Traditionally Rava Uttapam is made from vegetables such as Onion, Tomato, Capsicum and Coriander Leaves. Here I have added extra vegetables such as Carrot and French Beans. You can skip these vegetables I you want to. If you are using carrot and beans you must cook the Uttapam for a longer duration so that veggies are cooked properly.
To prepare the Uttapam, mix rava (sooji) with curd along with water to make a thick batter. The batter should neither be too thin nor too thick. Leave the batter for 15-20 minutes idle so that sooji swells and its size increases. Then add all the veggies along with salt into the batter. Mix it evenly. We will be using vegetables such as tomato, onion and capsicum as toppings over the batter. Place small amount of batter with the help of serving spoon in pre heated pan and spread it make thick pan cake. Place small amount of chopped vegetables as toppings over it. Cook for 4-5 minutes on both sides to make tasty and delicious Vegetable Rava Uttapam.

To make a twist to the Uttapam you can also add grated cheese by sprinkling it above the veggies. If you love to have spicy Uttapam you can add Black Pepper Powder and Red Chilli powder to the batter. You can also prepare this recipe plain that is without vegetables.
Serve Vegetable Rava Uttapam with Sambhar and Coconut Chutney or Coriander Chutney.

Rava Uttapam/Vegetable Rava Uttapam
Ingredients:
- 1 cup Semolina (Sooji/Rava)
- 1 cup Curd (Yoghurt)
- 1/2 cup Water
- 1 medium Chopped Onion
- 1 medium Chopped Tomato
- 2 tablespoon Chopped Capsicum
- 2 tablespoon Chopped Carrot
- 2 tablespoon Chopped French Beans
- 2 tablespoon Chopped Coriander Leaves
- 2 pieces Chopped Chilli
- 1 teaspoon Ginger Paste (Optional)
- 1 teaspoon Chaat Masala
- Salt to Taste
- Oil for shallow frying
Instructions:
- Take a large bowl. Add Semolina (Rava/Sooji) and Curd. Mix both the ingredients properly.
- Now add small amount of water and mix it to make a thick batter. The batter should neither be too thin nor too thick.
- Cover the batter with a lid and keep it aside for 10-15 minutes so that sooji swells and the size increases by absorbing water.
- After 10-15 minutes, take the batter and add the chopped vegetables such as carrot, beans, onion, tomato, capsicum, chilli and coriander leaves. Keep small amount of onion, tomato and capsicum to use it later on as toppings.
- Next add Ginger Paste and Salt. Mix it so that the vegetables are uniformly spread all over the batter. Keep it aside.
- Heat pan or tawa over medium flame.
- Add small amount of oil into it and spread it all around the tawa.
- Take small amount of batter in a large serving spoon and place it over the tawa. Spread it with the help of spatula to make a thick pan cake.
- Take the left over veggies such as tomato, onion and capsicum and uniformly place it over the batter. Press the vegetables with the spatula so that it sticks to the batter.
- Now take small amount of Chaat Masala and sprinkle it over the vegetables with your fingertips.
- Then drizzle some oil on top of the batter.
- Cook the base for 3-4 minutes or till it becomes slightly brown. Flip the Uttapam gently after the base is cooked.
- Now cook the other side till the veggies are slightly golden in colour. Cook it for longer duration if you are using carrot and French beans.
- Flip the Uttapam couple of times to cook it evenly. Now the Uttapam is cooked.
- Take it out in a plate and serve it with Sambhar and Coconut Chutney or Coriander Chutney.
Notes:
- Uttapam can be served with Sambhar, coconut chutney or any other chutney.
- You can add vegetables of your choice. You can also skip any of these vegetables if you want.
- If the batter becomes thin, add extra amount of sooji. If it becomes thick then add extra amount of water.
- I would suggest you to make Uttapam in non-stick tawa or pan so that Uttapam does not stick to it while preparing.
- Cook the Uttapam a little longer so that the vegetables are cooked properly. Carrot and French Beans takes time to cook.
- You can also sprinkle grated Mozzarella Cheese as a topping over the vegetables to make a cheesy style Uttapam.
- To make spicy Rava Uttapam, you can add Black Pepper Powder and Chilli Powder while making the batter.
