Spring Rolls is an Indo Chinese snack which is very common in northern India. It is one of the most preferred and perfect snacks in Chinese restaurants and food stall across the street in India. It is a very crispy snack recipe filled with various fresh crunchy vegetables and is also a very healthy snack as it does not have many spices. The name of this recipe derives from Chinese Spring Festival which is also known as Chinese New Year. During this time of the year only, spring roll are eaten in China, so people refer it as Spring Roll.

To prepare Spring Rolls fill the spring roll wrapper with vegetable stuffing and then fry them in oil. One of the most important tasks in preparing the spring roll is the preparation of spring roll wrappers. You can prepare wrappers at home or you can buy readymade wrappers from the market. The option of buying from the market makes your task easier to make spring rolls. But preparing this whole recipe at home gives a different flavor and taste. Here I will be preparing the wrappers at home only. You can skip these steps if you are using readymade spring roll wrappers.

We can prepare Spring Roll wrappers either from Plain flour or wheat flour or rice flour. You can choose any one of them. I will be preparing the sheets with maida. The stuffing is also the most important part. You can choose the vegetables as per your choice. I will also add boiled noodles with the vegetables. If you want you can skip it. Some people love to add paneer to the veggies. You can add it if you want to.

I have also shared Veg Spring Rolls recipe wherein we have skipped noodles and used only veggies along with paneer. You can also add Mozzarella Cheese to the stuffing. The vegetables that I will be using here are Cabbage, Carrot, Capsicum, Onion and Green Spring Onion. You can also add Beans, Cauliflower, Broccoli, Corns, etc.

The most tedious and time taking task is the preparation of spring roll wrappers. It takes time to make it, but the time spent is worth it. We should seal the stuffing in the spring roll properly so that it does not come out while frying. You can prepare Spring Rolls either by deep frying or by baking. If you don’t like oil in your diet, you can bake it. I would suggest you to make the roll by deep frying them as it is most common in Indian homes. The taste of the spring rolls is awesome when you deep fry it. Try it at your home and share your feedback.

Since preparing the thin sheets takes lot of time, there is another option of preparing it in a quick time. This is done by preparing thin Maida batter and then cooking to make the thin sheets. We have skipped the use of noodles.

Serve the Spring Rolls hot by cutting it from between and serving it with Schezwan sauce. You can also serve it with Tomato Ketchup or Chilli Sauce or Red Chilli Garlic Chutney.

Spring Rolls/How to make Spring Rolls using Noodles

Spring Roll is prepared by rolling the vegetable stuffing in spring roll wrapper and then deep frying them in oil till light golden brown.

Ingredients:

For Spring Roll Wrapper:

  • 1 cup Maida (All-purpose Flour)
  • 4 tablespoon Vegetable Oil
  • Water to prepare dough

For Spring roll stuffing:

  • 1 cup Boiled Noodles
  • 3 cups Shredded Cabbage
  • 1/2 cup Shredded Carrot
  • 1/4 cup Shredded Capsicum
  • 1/2 cup Shredded Onion
  • 1/4 cup Chopped Spring Onions Greens
  • 1 tablespoon Finely Chopped Garlic
  • 2 teaspoon Soya Sauce
  • 1 teaspoon Vinegar
  • 1/4 teaspoon Black Pepper Powder
  • 2 tablespoon Tomato Sauce
  • 2 tablespoon Oil (To prepare stuffing)
  • Salt to Taste
  • Oil for Frying

For Paste for sealing Spring Rolls:

  • 2 tablespoon Maida (All-purpose Flour)
  • 2 tablespoon Water (Or as required)

Instructions:

To prepare the Maida Dough:

  • Take Maida in a large bowl and add Vegetable Oil into it. Mix it properly.
  • Take small amount of maida in your palm and firmly press it to see that it forms a ball or not. If it does then its ok. If not then add little more oil into it.
  • Now add Water to the flour and mix it to prepare the dough.
  • Apply Oil to the dough and keep it aside for 15-20 minutes.

To prepare Spring Roll Wrapper:

  • To prepare Spring Roll Wrapper take small amount of dough and make ball from it. Make 8 balls from all the dough. The number of balls should be even.
  • Take 4 balls and roll them to make small circle shaped rotis. Keep them aside.
  • In rolling board place one roti over it. Apply vegetable oil all over the roti.
  • Place 2nd roti over the 1st roti. Next apply oil over the 2nd roti.
  • Place the 3rd roti over the 2nd roti. Again apply oil over the 3rd roti.
  • Place the 4th and the last roti over the 3rd roti.
  • Now roll the multi layered roti with the rolling pin to make a large circle shaped roti.
  • In the similar manner make roti for the remaining 4 dough balls. Keep it aside.
  • Now heat tawa over medium heat. Cook both the rotis. Do not overcook.
  • After cooking the roti, take them and with the help of your fingertip separate the roti from each other. We have a total of 8 wrappers. Keep them in a separate plate.

To prepare Maida sealing Paste:

  • Take a bowl and add 2 tablespoon maida and 2-3 tablespoon water. You can also use corn starch or corn flour.
  • Stir it to make thick paste. There should not be any lumps in the paste.

To Prepare Spring Roll stuffing:

  • Heat water in a large container. Add the noodles into it and cook for few minutes till it becomes soft.
  • Once it becomes soft, switch off the stove and strain the noodles from the water.
  • Rinse the noodles with cold water thoroughly. Strain it again and keep it aside.
  • Next cut all the vegetables such as Cabbage, Carrot, Capsicum and Onion in thin long strips. The veggies can also be shredded.
  • Also finely chop the Spring Onions. Chopping takes more time. You can use food processor for it.
  • Now heat 2 tablespoon oil in a kadai over medium flame.
  • Add Chopped Garlic and sauté it for few seconds.
  • Add the Shredded Veggies such as Cabbage, Carrot, Capsicum and Onion. Stir fry the veggies under high flame for 3-4 minutes. If it burns turn the flame to low.
  • Next add Soya Sauce, Black Pepper, Tomato Sauce and Vinegar. Stir it well so that the sauce and vinegar is uniformly mixed.
  • Now add the Boiled Noodles. Also add required amount of Salt. Stir it well.
  • Switch off the flame and add Spring Onion Greens.
  • Mix it with the other ingredients. Keep it aside and allow it to cool down.

Assembling and Making Spring Roll:

  • Take the spring roll wrapper and place it over rolling board. Apply maida paste at the edges of the wrapper with the help of fingertip.
  • Place small amount of vegetable stuffing on one end of the wrapper. Roll the stuffing with the wrapper till the halfway.
  • Now seal both the ends by picking a part of the wrapper from sideways and sticking to the inner part of the wrapper.
  • Next roll the stuffing for the remaining open part. Seal the end of the wrapper and place the roll in a plate with sealed part facing downwards. In the same manner prepare all the rolls.

Deep Frying Spring Rolls:

  • Heat Oil in a Kadai over medium flame.
  • Now slowly place 2-3 Spring Rolls in the kadai and deep fry them till golden brown. Keep the rolls turning in between while frying.
  • Take them out of the oil and place over tissue paper so that it absorbs the excess oil.
  • Fry all the Spring Rolls in the same manner. Spring Roll is ready to be served.

  • Serve Spring Roll hot with Tomato Ketchup or Chilli Sauce or with any chutney of your liking.

Notes:

  1. Boiled Noodles is optional. You can skip it if you want. The Spring Roll that we eat at restaurants has mostly noodles and cabbage.
  2. The veggies used in this recipe can also be varied as per your choice. You can use beans, corns, broccoli, cauliflower, etc.
  3. Remember to seal the stuffing properly so that it does not come out while deep frying. Also it should be rolled tightly.
  4. To give a twist to the taste of spring roll, you can also add Mozzarella Cheese to the stuffing after it cools down completely.
  5. The Spring Roll can also be baked in pre heated microwave oven.
  6. The vegetables should be cooked under high flame and should be continuously stirred so that it does not burn.
  7. The Spring Rolls should be fried under medium heat. Under low flame, it absorbs more oil. If fried in high flame it may get burned.
