Take the Poha (Beaten Rice) in a large bowl and rinse it with water till they become soft. Strain the water from the Poha.
Add 1 teaspoon of Sugar and 3/4 teaspoon of Salt to the washed Poha. Mix all the ingredients gently. Keep it aside.
Now heat 2 tablespoon Oil in a kadai or pan over medium heat.
Add the Peanuts and roast it under low flame till it becomes crunchy.
After it is roasted properly, take it out from the Oil and keep it aside in a bowl.
In the same Oil under medium heat, add Mustard Seeds and allow it to crackle.
Next add Chopped Onion. Saute the onion till it becomes translucent.
When the Onion becomes translucent, add Finely Chopped Green Chilli and Curry Leaves. Saute all the ingredients for few seconds.
Now add Turmeric Powder and saute it for a minute.
Add washed Poha and mix it properly with other ingredients. Cook for few more minutes.
Finally add Fennel Seeds, Lemon Juice, Roasted Peanuts and Chopped Coriander Leaves. Mix all the ingredients and then switch off the stove.
Healthy and nutritious Poha is ready to serve. Serve it as a breakfast or snacks by garnishing with Sev and Coriander Leaves. You can also garnish it with Pomegranate Seeds.
