Date Tamarind Chutney or Khajur Imli Ki Chutney is a North Indian sweet and tangy chutney which we often see in various snacks and street food recipes. It is used in recipes such as Tikki Chaat, Papdi Chaat, Paani Puri, Bhel Puri, Sev Puri, Tikki, Samosa, etc. Khajur Imli Ki Chutney is mostly famous in North India but now it spreading in other parts of the country. It is also famous in Gujarat where people use it to prepare Dabeli recipe. Dabeli is prepared from Khajur Imli Ki Chutney or Imli Ki Chutney, Chilli Garlic Chutney and Dabeli Masala Powder. Date Tamarind Chutney or Khajur Imli Ki Chutney is a sweet and tangy recipe which we prepare from Dates, Tamarind and Jaggery. We can also prepare Tamarind Chutney without using Dates also. Without the use of dates, the chutney becomes less sweet. However, we can bring more sweetness to the chutney by adding more Jaggery. To prepare Date Tamarind Chutney, soak the dates and tamarind in warm water for half an hour before preparing the chutney. The water makes the date and tamarind soft which makes the task of making the chutney easier. Also it reduces the time for boiling the tamarind.
To prepare the Date Tamarind Chutney we must use the seedless date and tamarind. If it’s not available in the market, we can buy the dates and tamarind and take out the seeds before boiling. We soak the date and tamarind in water to reduce the boiling time of the ingredients. We can increase or decrease the thickness of chutney by adding water to it. Prepare the chutney and store it refrigerated in air tight container. It stays fresh for up to a month.
To make the sweet version of this Chutney, take the dates, tamarind, jaggery and other ingredients in a large bowl. Add water to it and boil over medium heat for approximately 10 minutes. Switch off the flame allow it to cool down. After it cools down, make a smooth puree by grinding it in mixer grinder. After grinding, strain the chutney with strainer. Date Tamarind Chutney is ready to serve with your favourite snacks recipe.

Date Tamarind Chutney (Khajur Imli Ki Chutney)
Ingredients:
- 1/2 cup Seedless Dates/Khajur
- 1/2 cup Tamarind (Imli)
- 1/2 cup Jaggery (Gudd)
- 1 teaspoon Kashmiri Red Chilli Powder
- 1 teaspoon Coriander Powder
- 1/2 teaspoon Dry Ginger Powder
- 1/2 teaspoon Fennel Powder
- 1/2 teaspoon Cumin Powder
- A pinch Asafoetida (Hing)
- 1 cup Water
- Salt to Taste
Instructions:
- Take Khajur (Dates), Imli (Tamarind) and Jaggery in a large bowl.
- Add Kashmiri Red Chilli Powder, Fennel Powder, Coriander Powder, Cumin Powder, Dry Ginger Powder, Hing and Salt. Also add water and mix it.
- Switch on the stove and put the bowl over the flame.
- Boil the ingredients for 8-10 minutes or till the dates and tamarind becomes soft and tender.
- Keep on mixing it in between. The water will start becoming thick.
- When the ingredients become soft, switch off the stove.
- Allow the chutney to cool down completely till it is safe to handle.
- Add it to mixer grinder and grind it to make smooth paste. Take it out of the jar.
- Now with the help of strainer, strain the chutney. Store it in air tight container.
- The liquid will be thicker. You can add water if you want to make the chutney thinner.
- Date Tamarind Chutney is ready. Use it with your favourite recipe.
Notes:
- To make the Date Tamarind Chutney, use seedless dates and tamarind.
- To reduce the time of boiling, soak the dates and tamarind in warm water for half an hour. It makes the task easier.
- The thickness of the chutney can be varied by using water. If you want to make thicker chutney, add less water. For thinner chutney add more water.
- This chutney can also be made without the use of dates. You can try to make it without using dates.
