Schezwan Fried Rice, an Indo-Chinese cuisine is a type of Rice dish which we can prepare from Schezwan Sauce. It is the main ingredient because we mix it with boiled rice along with various chopped vegetables to make Schezwan Fried Rice. It is one of the popular dishes which we usually see in the restaurant menus. The process of making Schezwan Fried Rice is similar to other fried rice. The only addition to this fried rice is the use of Schezwan Sauce or readymade Schezwan Fried Rice Masala. Addition of Schezwan sauce makes the taste of the rice somewhat different and unique. Here I have used Schezwan Fried Rice Masala instead of Schezwan Sauce to make Schezwan Fried Rice.
Schezwan Fried Rice is easy and quick to make. It hardly takes 15 minutes if you have pre-boiled rice and the vegetables already chopped. Preparing the vegetables takes lot of time. However with the help of chopper, the task becomes easy. After all the vegetables are chopped and the rice is cooked, the next step is to fry the vegetables. Once we fry the veggies, add rice and Schezwan sauce. Mix them and then cook for few minutes before switching off the stove.
To make fluffy rice, do not cook it completely. Cook it partially. Cook it such that all the rice grains remains separated from each other. To keep the rice separated from each other, gently rinse the rice with water after boiling it. Besides that, to make a delicious and tasty Schezwan Fried Rice, the quantity of the masala should be appropriate. The amount of masala can be varied because the variation in masala changes the spiciness and taste of it. If you love spicy food, you can add more masala to the rice.
Serve Hot Schezwan Rice with Manchurian such as Paneer Manchurian, Veg Manchurian, Mushroom Manchurian, etc. or with Chilli Paneer.

Schezwan Fried Rice
Ingredients:
For Cooking Rice:
- 2 cups Basmati Rice (or Long grained Rice)
- 8 cups Water
- 1/2 teaspoon Salt
- 1/2 teaspoon Cooking Oil
For making Schezwan Fried Rice:
- 3 tablespoon Schezwan Fried Rice Masala or Schezwan Sauce
- 1 teaspoon Cumin Seeds (Jeera)
- 1/4 cup Finely Chopped Onion
- 1 piece Finely Chopped Chilli
- 1/2 teaspoon Chopped Ginger
- 1 teaspoon Chopped Garlic
- 1/4 cup Chopped Tomato
- 1/4 cup Finely Chopped Carrot
- 1/4 cup Finely Chopped French Beans
- 1/4 cup Spring Onion
- 1/4 cup Peas (Matar)
- 1 tablespoon Finely Chopped Capsicum
- 1/4 cup Chopped Mushroom
- 1/4 cup Corn
- 1/4 cup Soya bean (Mini Chunks)
- 2 tablespoon Finely Chopped Coriander Leaves
- Cooking Oil (As required)
- Salt to Taste
Instructions:
Cooking the Rice:
- Take the rice and rinse it in running water so that the starch from it is removed. Soak the rice in water for approx. 30 minutes.
- After 30 minutes, drain out the water from the rice and keep it aside.
- Now heat 8 cups of water in a deep pot and allow it to come to gentle boil.
- Add Salt and 1/2 teaspoon oil to the water.
- Add the soaked and drained Rice to the boiling water. On medium or low heat, cook the rice until it is almost cooked.
- Switch off the stove and strain out the rice from the water.
- Gently rinse the rice with water so that the rice grains do not stick to each other.
- Cover the rice and keep it aside.
Making Schezwan Fried Rice:
- Heat Oil in a pan or kadai over medium heat.
- Add Cumin Seeds to it. As soon it crackles, add Chopped Onion and Chilli.
- Cook for a minute. Then add Chopped Garlic and Ginger. Saute it and cook for few seconds.
- Add Chopped Tomatoes and Salt. Cook till the tomatoes become soft and tender. The quantity of salt must be added as required since we have already added it to the cooked rice.
- Now add all the Chopped vegetables such as Carrot, French Beans, Spring Onion, Peas, Capsicum, Mushroom, Corn and Soya bean. Mix them and cook till the vegetables starts changing its colour.
- Add the Schezwan Fried Rice Masala or Schezwan Sauce to the cooked vegetables. Saute it for few minutes.
- Take the cooked Rice and add it to the fried veggies. Mix it properly so that all the Rice is completely coated with the masala. Cook for few more minutes.
- Add Chopped Coriander Leaves and mix them. Switch off the stove.
- Schezwan Fried Rice is ready to be served. Garnish it with few Spring Onions and Coriander Leaves.
- Serve Schezwan Fried Rice plain or with Green Chutney and Curd or Boondi Raita or with any Chinese dish such as Manchurian.
