Heat Oil in a pan or kadai over medium heat.
Add Cumin Seeds to it. As soon it crackles, add Chopped Onion and Chilli.
Cook for a minute. Then add Chopped Garlic and Ginger. Saute it and cook for few seconds.
Add Chopped Tomatoes and Salt. Cook till the tomatoes become soft and tender. The quantity of salt must be added as required since we have already added it to the cooked rice.
Now add all the Chopped vegetables such as Carrot, French Beans, Spring Onion, Peas, Capsicum, Mushroom, Corn and Soya bean. Mix them and cook till the vegetables starts changing its colour.
Add the Schezwan Fried Rice Masala or Schezwan Sauce to the cooked vegetables. Saute it for few minutes.
Take the cooked Rice and add it to the fried veggies. Mix it properly so that all the Rice is completely coated with the masala. Cook for few more minutes.
Add Chopped Coriander Leaves and mix them. Switch off the stove.
Schezwan Fried Rice is ready to be served. Garnish it with few Spring Onions and Coriander Leaves.
Serve Schezwan Fried Rice plain or with Green Chutney and Curd or Boondi Raita or with any Chinese dish such as Manchurian.
