Fried Rice is an Indo-Chinese delicious and flavorful Rice recipe that can be prepared in various ways. It can be prepared by simply frying the rice in oil or can be prepared by adding some veggies to it. Veg Fried Rice is one type of Fried Rice recipe which is made by adding different types of veggies to pre-boiled rice and frying it with other ingredients. There are various vegetables which you can add to the rice as per your choice.

In today’s recipe of Veg Fried Rice, I have added a number of vegetables. Since the types of vegetables are more, I have taken very less quantity of each vegetable. Here vegetables such as Soyabean Mini Chunks and Mushroom are optional. If you want you can add it. I have not used these vegetables here. However, Mushroom is one of the favourite vegetables loved in our family. We frequently prepare Mushroom recipes at our home. You can try our Matar Mushroom Masala recipe. Also many a times, I add Chopped Mushroom to Veg Fried Rice. You can also add other vegetables such as Corn, Potato, Capsicum, Cabbage, etc.

While preparing Veg Fried Rice, we must keep in mind that the rice is not overcooked. When the rice is about to get cooked, switch off the stove and then wash it with normal water. It helps in keeping the rice separated from each other to make aromatic and flavorful Veg Fried Rice. Veg Fried Rice can also be prepared using Schezwan Sauce or Schezwan Fried Rice Masala. You can try our Schezwan Fried Rice recipe. Today we will be preparing Veg Fried Rice without using Schezwan Sauce. Instead we will be using few other ingredients and spices to make tasty and mouthwatering Veg Fried Rice.

Mix Vegetable Fried Rice

Veg Fried Rice is prepared by frying the Chopped vegetables till they are properly cooked. Then the boiled rice is added along with Soya Sauce and Vinegar and other ingredients. All the ingredients are mixed and cooked for few minutes to prepare Veg Fried Rice.

Ingredients:

  • 2 cups Basmati Rice (or Long grained Rice)
  • 8 cups Water
  • 1 teaspoon Cumin Seeds
  • 1/4 cup Finely Chopped Onion
  • 1 piece Finely Chopped Chilli
  • 1 teaspoon Finely Chopped Ginger Garlic
  • 1/4 cup Finely Chopped Tomato
  • 1/4 cup Finely Chopped Carrot
  • 1/4 cup Finely Chopped French Beans
  • 1/4 cup Spring Onion
  • 1/4 cup Peas (Matar)
  • 1/4 cup Chopped Mushroom (Optional)
  • 1/4 cup Soya bean (Mini Chunks) (Optional)
  • 3 teaspoon Soya Sauce (Or as required)
  • 1/4 teaspoon Black Pepper
  • 1 teaspoon Vinegar
  • 2 tablespoon Finely Chopped Coriander Leaves
  • Cooking Oil (As required)
  • Salt to Taste

Instructions:

Cooking the Rice:

  • Wash the Rice in running water. Rinse it to remove the starch. Soak the Rice in water for approx. 30 minutes.
  • Drain out the water from the rice after 30 minutes. Keep it aside.
  • Heat 8 cups of water in a pot. Allow it to come to gentle boil.
  • Add Salt and 1/2 teaspoon oil into the water. Then add the soaked Rice to the boiling water.
  • Cook the Rice over medium or low heat until it is almost cooked. Press it with your finger tips to see whether it is cooked or not.
  • Switch off the stove and strain out the Rice from the water.
  • Gently rinse the Rice with water so that the rice doesn’t stick to each other.
  • Cover the Rice and keep it aside.

Making Mix Veg Fried Rice:

  • Heat Oil in a kadai over medium heat.
  • Add Cumin Seeds to it. As soon it starts crackling, add Chopped Ginger Garlic, Chopped Onion and Chilli. Cook until the Onion becomes light golden brown and translucent.
  • Next add all the Chopped vegetables such as Carrot, French Beans, Spring Onion, Peas, Mushroom and Soya bean. Mix them and cook till the vegetables changes it colors.
  • Add Chopped Tomatoes and little amount of Salt.
  • Cook till the tomatoes become soft. We have already added salt to the rice, so keep in mind not to add more of it.
  • Add Soya Sauce, Vinegar and Black Pepper. Mix it and cook for another 3-4 minutes.
  • Add the cooked Rice to the vegetables. Mix it properly so that the Rice is well coated with the vegetables and other ingredients.
  • Cook for few more minutes. Add Chopped Coriander Leaves and mix it. Switch off the stove.
  • Mix Veg Fried Rice is ready to be served. Garnish it with few Spring Onion and Coriander Leaves.
  • Serve Mix Veg Fried Rice with Green Chutney and Curd or with Raita.

Notes:

1. I have added a number of veggies. You can add as per your requirement and can skip any of these ingredients if you wish to. You can also add Corn, Capsicum, Mushroom, etc.
2. If you do not like Chopped Ginger and Garlic, you can add Ginger Garlic Paste.
3. The Rice should not be overcooked or else the rice grains will stick to each other and will not be separated. Wash the boiled rice if it sticks.
4. Rice should be cooked in open pot. It keeps the rice separated from each other and doesn’t stick to each other.
