Vegetable Pulao or Veg Pulav is a very common rice recipe that is prepared in Indian homes. There are various rice recipes that we prepare at our home. Among all these rice recipes, Vegetable Pulao is the most easy, flavourful and hygienic rice recipe. It is a combination of mild dry spices and chopped veggies which you can prepare by frying them first in oil and then cooking the rice in water.

There are various Pulao recipes that we prepare at our home. The most basic one is the Vegetable Pulao which we can prepare with veggies such as carrot, beans, corns, cauliflower, potato, etc. You can add veggies as per your choice and can vary the quantities as per requirement. You can also use Rice of your choice. The amount of water depends on the type of rice that you use. So be careful while adding water or the rice will become sticky and will not be fluffy.

You can prepare Vegetable Pulao either in Open Pot or in Cooker. To prepare it in cooker you just need to add perfect amount of water and then cook for 1-2 whistle. Switch off the stove and let the gas evaporate on its own. Open the lid of the cooker and fluff the rice before serving. If you want to prepare it in open pot, add perfect amount of water and allow it to cook till the water completely evaporates. When the water completely evaporates, fluff the rice and let it stand for 5 minutes. Then serve it hot by sprinkling chopped coriander leaves.

Vegetable Pulao and Vegetable Biryani seem similar but there are slight differences between them. There are few changes in the spices that we use in them. The major difference is that in Vegetable Pulao, the vegetables along with spices is cooked together with rice but in Vegetable Biryani, the steamed rice is added to the spices and vegetables later on

Vegetable Pulao is prepared by steaming the Basmati Rice in water along with various Chopped Vegetables and few Dry whole spices. The vegetables are first fried along with whole spices and then rice is mixed into it.

Ingredients:

  • 2 cup Long Grain Basmati Rice
  • 2 tablespoon Ghee or Oil
  • 1/2 cup Chopped Onion
  • 1 teaspoon Chopped Ginger
  • 1 teaspoon Chopped Garlic
  • 2 piece Green Chilli (Slit)
  • 1 cup Chopped vegetables (Carrots, Beans, Peas, Corns)
  • 4 tablespoon Chopped Coriander Leaves
  • 3 pieces Bay Leaves
  • 4 pieces Green Cardamom
  • 2 piece Black Cardamom
  • 4-5 pieces Cloves
  • 4-6 pieces Black Peppercorns
  • 2 teaspoon Cumin Seeds
  • 2 strand Mace
  • 2 piece Star Anise
  • 2 inch Cinnamon
  • 1 teaspoon Lemon Juice
  • Salt to Taste
  • Water

Instructions:

  • Wash the Rice properly and soak it for 30 minutes. Drain off the water and keep it aside.
  • Heat 2 tablespoon Oil in a pan over medium flame.
  • Once hot, add all the dry spices such as Bay Leaves, Green Cardamom, Black Cardamom, Cloves, Black Peppercorns, Cumin Seeds, Mace, Star Anise and Cinnamon. Fry them for few seconds.
  • Now add Chopped Onion and sauté it till it turns golden brown.
  • Add Chopped Ginger, Garlic and Chilli. Fry it for a minute.
  • Next add all the Chopped Vegetables such as Carrot, Beans, Peas and Corns.
  • Also add Salt to the veggies and mix them and sauté for 2 to 3 minutes till it is slightly cooked.
  • Add the soaked Rice and mix it well so that it is coated with oil evenly.
  • Add Water to it and stir it. Add Lemon Juice and again stir it.
  • Now cook the Rice over medium flame till the water evaporates and the rice get cooked properly.
  • Keep checking the rice in between that it is being cooked properly. If required you can add water to it. In between keep stirring the rice so that it does not stick at the bottom of the pan.
  • Once the rice is cooked, switch off the stove and fluff up the rice. Let it stand for 5-7 minutes.
  • Add Chopped Coriander Leaves and mix it properly. Vegetable Pulao is ready to be served.

  • Serve it hot with your favourite Salad and Raita. Sprinkle some chopped coriander over the rice and then serve.

Notes:

  1. The vegetables added with the Rice can be varied as per your choice. Along with Peas, Carrots, Corns and Beans, you can also add Cauliflower, Broccoli, Potato, Soya bean, Capsicum, etc.
  2. You can also vary or skip or choose the dry spices as per your preferences.
  3. Rice can be cooked either in open pot or in cooker. It takes more time for the rice to cook in open pot. To cook in cooker, you need to determine the number of whistles and also the intensity of flame.
  4. Water requirement to cook rice in cooker is less than that to cook in open pot. So measure the exact quantity of water to be used.
  5. Serve Vegetable Pulao with your favourite Raita, Papad and Pickle or Chutney. You can serve it with Onion Raita or Boondi Raita or Cucumber Raita.
