Batata Vada/ How to make Gujarati Batata Vada

Batata Vada is a cuisine from Maharashtra which is a famous Street food of Mumbai. It is also famous in other parts of the country. It is famous in Gujarat also where we call it as Bataka Vada. This cuisine from Maharashtra along with other recipes is quickly being accepted by other states people. Batata Vada is a Marathi name of Potato Vada while in South India Batata Vada is called as Aalo Bonda. In Gujarati, people call Batata as Bataka. Batata Vada is very easy and quick to make. We can prepare Batata Vada in different variations but these variation depends on how we prepare the potato stuffing. There are different ingredients that we add to the stuffing. The variation in the ingredients and spices decides the taste of the vadas. The vadas prepared here is similar to the one prepared in Vada Pav. The ingredients that I have used in making potato stuffing are Turmeric Powder, Chilli Powder, Mustard Seeds, Hing, Curry Leaves, Coriander Leaves, etc. You can vary the ingredients as per taste. To make spicy and hot Batata Vadas, add more chilli to the stuffing and also to Gram Flour.

To make Batata Vada we need Gram Flour batter and Potato stuffing. First prepare potato stuffing by frying mashed potato along with various spices such as Turmeric Powder, Chilli Powder, Ginger Garlic Paste, Asafoetida (Hing), Mustard Seeds, Curry Leaves and Coriander Leaves. Then we use stuffing to make small balls. Take these balls and dip them into the Gram Flour batter to properly coat with the batter. Fry these balls in oil to make crispy and crunchy vadas. To make crunchier vadas add rice flour to the besan. If you love to have spicy Batata Vadas, add more Chilli powder to the batter as well as the stuffing.

Batata Vada is famous for Vada Pav and we use it to make the famous Maharashtrain cuisine. To prepare Vada Pav, we need to prepare the Vada Pav Masala Powder which we also call it as Dry Garlic Coconut Chutney. Batata Vada is served with Fried Green Chilli along with Dry Garlic Chutney. If you love to have spicy one, you can have the vadas with the chillis. For better taste, serve with Green Chutney or Ketchup.

Batata Vada is prepared by deep frying potato stuffing balls coated with Gram Flour (besan) batter. The potato stuffing is prepared by frying the mashed potato with different spices.

Ingredients:

Batter for Batata Vada:

  • 1 cup Gram Flour (Besan)
  • A pinch Asafoetida (Hing)
  • 1/8 teaspoon Turmeric Powder (Haldi)
  • 1/8 teaspoon Red Chilli Powder
  • A pinch Baking Soda
  • 1/2 cup Water (or as required)
  • Salt as required

For Batata Vada Stuffing:

  • 4 medium Boiled Potatoes
  • 1/4 teaspoon Turmeric Powder (Haldi)
  • 1/8 teaspoon Red Chilli Powder
  • 1/2 teaspoon Ginger Garlic Paste
  • 2 piece Chopped Green Chilli
  • A pinch Asafoetida (Hing)
  • 1/4 teaspoon Mustard Seeds
  • 1 tablespoon Oil
  • 6-7 leaves Curry Leaves
  • 1 tablespoon Chopped Coriander Leaves
  • Salt as required

Instructions:

Preparation of Batter:

  • Take a large bowl. Add Gram Four, Asafoetida, Red Chilli Powder, Turmeric Powder, Baking Soda and Salt.
  • Mix all the ingredients together with a spoon so that it is uniformly mixed.
  • Add water to the mixture turn by turn to prepare a smooth batter. The batter should be such that it can be held by the vadas.
  • You can add more Gram Flour, if the batter is thin. If it is thick, add water to it and mix. Keep the batter aside

Preparation of Vada Pav stuffing:

  • The stuffing is prepared from the boiled potatoes. Take the Boiled Potatoes and peel out the outer layer.
  • Take the peeled out potatoes in a large boil. Mash it with a spoon or with hand. Keep it aside.
  • Now heat pan over medium flame. Add 1 tablespoon of oil into it.
  • Add Mustard Seeds into it allow it to crackle.
  • Add Curry Leaves, Chopped Green Chilli and Asafoetida. Stir it and sauté for few seconds.
  • Now add Ginger Garlic Paste. Mix it and cook for 20-25 seconds. Grated Ginger and Garlic can be also used in place of Ginger Garlic paste.
  • Add Turmeric Powder and Red Chilli Powder. Add Chilli Powder as per your requirement of spiciness.
  • Cook for another 15 seconds. Add Mashed Potatoes, Chopped Coriander Leaves and Salt.
  • Mix all the ingredients together. Cook for 3-4 minutes and then switch off the gas.
  • Stuffing for vada is ready, Keep the stuffing aside and allow it to cool.

Preparation of Batata Vadas:

  • Take few drops of oil in the palm and apply it uniformly. We will be making small balls from the mashed potato stuffing.
  • Next take small amount of potato stuffing in the palm and make round shaped balls.
  • Make uniform balls for all the stuffing. Keep it separately in a plate.
  • Heat oil in a kadai over medium heat,
  • Take a potato stuffing ball, dip it into the Besan batter. Coat the balls with the batter evenly.
  • Gently drop the coated balls into the oil. Similarly add more coated balls into it.
  • Fry the balls till the outer part of the vadas becomes golden brown.
  • Take out the vadas from the oil and place it in kitchen towel to absorb the excess oil.
  • Fry the vadas for the remaining batter and keep them in a plate.
  • Batata Vada is ready to be served. Serve it with Ketchup or with Green Chutney.

Notes:

  1. These Vadas are also called Batata Vadas in Maharashtra or Aloo Chop in Bihar, Jharkhand and West Bengal.
  2. Grated Ginger and Garlic can be used in place of Ginger Garlic Paste.
  3. The thickness of the Gram Flour (Besan) should be appropriate so that the potato balls can hold the batter properly.
  4. To prepare spicy Batata Vada, you can add more chilli to it. Add as per your preference.
