Veg Manchurian is a popular Indo Chinese cuisine made from different finely chopped vegetables, soya sauce, tomato sauce, chilli sauce and other ingredients. It is a crispy, delicious and mouth watering appetizer prepared by tossing fried Veg Manchurian Balls in a sour, sweet and tangy manchurian sauce. It is a hot and spicy recipe made from Indian ingredients with Chinese cooking style.

Veg Manchurian is one of the most common street food snack in India. This recipe involves the use of various different vegetables available in the market. There are various other types of manchurian recipe which you can prepare by making slight variations in the use of vegetables. You can prepare other manchurian recipes such as Gobi Manchurian, Paneer Manchurian and Mushroom Manchurian where we use only cauliflower, paneer and mushroom to make the manchurian balls.

The process of preparation of this recipe involves mainly three steps:

  1. Preparation of Manchurian Balls
  2. Preparation of Manchurian Sauce
  3. Tossing of Fried Manchurian Balls in Manchurian Sauce

Preparation of Manchurian Balls require various vegetables. Here we will be using veggies such as Cabbage, Carrot, Capsicum, French Beans and Spring Onions. You can choose vegetables as per your choice and add extra veggies or skip any veggies if you want. Preparation of Manchurian Sauce also requires various vegetables but here we will be using only Spring Onions along with sauces. You can add extra veggies such as French Beans, Cabbage, Carrot and Capsicum. After preparing the manchurian sauce, fried manchurian balls are tossed into it before serving.

The most tedious task while preparing this recipe is the grating and chopping part, since it take lots of time. To make this task easier, you can use food processor to chop the vegetables. However I would suggest you to grate the veggies with grater only. You can use the food processor if you have very less time and its urgent to prepare it quickly for your guests or family.

There are two variations of making Veg Manchurian:

  1. Veg Manchurian Dry: It is served as a starter or as a side dish. It can be served along with Chowmein or Hakka Noodles.
  2. Veg Manchurian Gravy: It is served as main course meal along with bread or rice. It tastes best when served with Fried Rice or Steamed Rice or with any Chinese main course item.

Today we will be preparing Veg Manchurian Dry. Please visit Veg Manchurian Gravy to prepare the gravy version of this recipe. The process of preparing both the version is similar. The only difference is that the Manchurian sauce is thinner in gravy version while it is thicker in dry version. To make the gravy thinner, we need to add extra sauces and water to the Manchurian sauce.

To prepare the dry version of Veg Manchurian, first we need to prepare the Veg Manchurian balls using different vegetables. Take the chopped vegetables such as Cabbage, Carrot, Capsicum, French Beans and Spring Onion in a large bowl. To it add Salt and mix it. Allow it to rest for about 10-15 minutes. During this time, the veggies will leave out excess water. Drain out the excess water from it.

Now add All Purpose Flour (Maida), Corn Flour, Black Pepper Powder and Salt to the veggies. Since we added Salt before also, adjust it accordingly. Mix all the ingredients properly. Remember not to add water while mixing the chopped vegetables. The vegetables have enough water content to bind the Manchurian balls. In case the mixture is little dry, you can add little water to it. However, such case won’t arise.

After mixing all the ingredients properly, take small amount of the mixture in your palm and roll it to prepare Manchurian ball. Prepare small balls of required size for all the mixture and keep them aside. Now heat Oil in a kadai over medium heat. Once the oil heats, add the prepared Manchurian balls into the oil one by one. Fry the balls till it is crispy and golden brown in colour. Take out the Fried Manchurian Balls from the oil and place it over tissue paper to absorb the excess oil. In the same manner fry all the Manchurian balls.

Now we will prepare the Manchurian Sauce to toss the Fried Manchurian Balls into it. Heat Oil in a heavy base kadai over medium flame. Add Finely Chopped Garlic, Ginger and Green Chilli. Saute them for few seconds. Next add Chopped Spring Onion and saute it for a minute. When the Spring Onion just starts to change its colour, add Black Pepper Powder, Vinegar and Salt. Mix all the ingredients and saute for few seconds more.

Now add Soya Sauce, Tomato Ketchup and Chilli Sauce. Keeping the flame low, stir and mix all the sauces properly. Cook the sauces for a minute and then add the Corn Flour paste into it. Cook the mixture till the consistency of the Manchurian sauce starts thickening. When the sauce starts thickening, add the Fried Manchurian Balls into it. Toss the Manchurian balls and fry it till it is properly coated with the sauce. Once the Manchurian balls are cooked, switch off the stove. Tasty and delicious Veg Manchurian is ready to serve. Serve it hot by garnishing with Spring Onion Green and Chopped Coriander Leaves. Also sprinkle some sesame seeds over the Manchurian Balls.

Equipments:

Ingredients:

For Veg Manchurian Balls:

  • 2 tablespoon Maida (All Purpose Flour)
  • 2 tablespoon Corn Flour (Corn Starch)
  • 1/2 cup Shredded Carrot
  • 1/2 cup Shredded Cabbage
  • 1/4 cup Finely Chopped Capsicum
  • 1/4 cup Finely Chopped French Beans
  • 1/4 cup Finely Chopped Spring Onion
  • 1/2 teaspoon Black Pepper Powder
  • Salt as required
  • Oil for Frying

For Veg Manchurian Sauce:

  • 1 teaspoon Finely Chopped Ginger
  • 1 tablespoon Finely Chopped Garlic
  • 2 piece Finely Chopped Green Chilli
  • 1/4 cup Finely Chopped Spring Onion
  • 1/2 tablespoon Soya Sauce
  • 1/2 tablespoon Chilli Sauce
  • 2 tablespoon Tomato Ketchup
  • 1 teaspoon Corn Flour (Corn Starch)
  • 1/4 teaspoon Black Pepper Powder
  • 1/2 teaspoon Vinegar
  • 1 tablespoon Spring Onion Greens (For Garnishing)
  • 1 tablespoon Cooking Oil
  • Salt as required
  • Water as required

Instructions:

Preparation of Veg Manchurian Balls:

  • Take all the chopped vegetables such as Carrot, Cabbage, Capsicum, French Beans and Spring Onion in a large bowl.
  • To it add Salt as required and mix it. Allow it to rest for 10 minutes. This is done to remove excess water from the vegetables so that the vegetables do not release water while preparing the Manchurian balls.
  • When the veggies release water, drain out the extra water by squeezing the vegetables with your hand. Now the veggies are ready which will help in proper binding of the balls.
  • Next, add All Purpose Flour, Corn Flour, Black Pepper Powder and Salt to the vegetables. Add Salt as required since we had already added it before also. Mix all the ingredients properly with your palm.
  • Do not add Water to it since the veggies will leave water from itself which will be sufficient to bind the balls. In case the mixture is little dry and you are not able to bind the mixture properly to prepare the balls, then you can add little amount of water.
  • Once all the ingredients are mixed properly, take small amount of the mixture in your palm and roll it to make a small ball. Keep it aside.
  • In the same manner, prepare small balls of required size for all the mixture and keep them aside in a plate.
  • Now switch on the stove and heat Oil in a kadai over medium flame.
  • Once hot, gently add the prepared Balls one by one into the oil. Do not overload the kadai with the balls.
  • Under medium flame, fry the balls till it changes its colour to golden brown and is crispy from outside.
  • When the balls are fried properly, take them out with the strainer and keep it over kitchen towel or tissue paper to absorb excess oil.
  • Similarly fry the remaining balls in batches. Veg Manchurian Balls are ready. Keep them aside in a bowl and cover it.

Preparation of Veg Manchurian:

  • Take the Corn Flour in a small bowl. Add small amount of Water to it and mix them properly to prepare a paste. Keep it aside.
  • Now switch on the gas and heat Oil in a kadai or pan over medium heat.
  • Once hot, turn the flame to low and add Finely Chopped Garlic, Finely Chopped Ginger and Finely Chopped Green Chilli.
  • Stir and saute them for a minute under low flame. Saute them by continuously stirring it so that it does not stick and burn.
  • Next add Finely Chopped Spring Onion. You can replace it with Onion if you want. Saute the Spring Onion till it slightly starts to change its colour.
  • Now add Black Pepper Powder, Vinegar and Salt. Saute it for few seconds.
  • After few seconds, add Soya Sauce, Tomato Ketchup and Chilli Sauce. Stir and mix all the sauces properly keeping the flame low.
  • Next take the Corn Flour paste and mix it again with spoon since the corn flour settles down quickly on resting. Add the paste to the sauce and stir it properly.
  • Stir all the ingredients and cook under low flame till the sauce starts thickening.

  • When the sauce starts thickening, add all the Fried Manchurian Balls into it. Toss the Manchurian Balls and stir fry it till all the balls are properly coated with the Manchurian sauce.

  • Once cooked, switch off the gas. Tasty and delicious Veg Manchurian is ready to serve.

  • Transfer Veg Manchurian into a serving plate. Serve it hot as a starter by garnishing with Finely Chopped Spring Onion Greens or Finely Chopped Coriander Leaves.

Notes:

  1. Here we have used Cabbage, Carrot, Capsicum, French Beans and Spring Onion Whites to prepare the Manchurian Balls. You can vary the veggies as per your choice.
  2. Before mixing Maida and Corn Flour to the veggies, add Salt to the vegetables and allow it to rest for approx. 10 minutes so that it releases all the extra water. Drain out the excess water. This will help in binding the Manchurian balls properly.
  3. While frying the Manchurian Balls, do remember to fry them under medium heat so that they are cooked properly from outside as well as from inside. If you cook under high flame, the balls will get browned from outside quickly and will be uncooked from inside. In case you cook the balls under low flame, the balls will absorb too much of oil.
  4. After frying the Manchurian Balls, place them over tissue paper so that excess oil is absorbed properly.
  5. While preparing the Manchurian Sauce, adjust the amount of Salt as required. Since Chilli Sauce and Soya Sauce has salt in it, so add salt as required. If required you can add extra salt later on.
  6. Do not dry the Manchurian sauce too much or else it will be difficult to coat the Manchurian balls with sauces.
  7. To make crispy Manchurian Balls, use Bread Crumbs to roll the balls before frying it.
  8. If you want to prepare Veg Manchurian Gravy, simply add extra water and sauces and then cook the Manchurian balls in it.
