Sooji Ka Halwa or Rava Sheera or Rava Halwa is a very delicious dessert recipe that most Indians prepare at home. It is easy and very quick to prepare. There are different types of halwa that we prepare from different ingredients and Sooji Ka Halwa or Rava Sheera is one of the most famous halwa that Indian homes often prepare. We often make it for different religious ceremonies and functions. Also Devotees serve it as Prashad in festivals and Pujas.

Sooji Ka Halwa is known by different names in different part of the country. It is known as Rava Sheera in West India and Kesari Halwa in South India. The method of preparation is similar. In Kesari Halwa, saffron or kesar is added to it. I have also shared the recipe of Kesari Halwa in my other posts. You can prepare Sooji Ka Halwa by using milk instead of water. Here I will be using only water to make the halwa.

We require Sooji (Semolina), Ghee, Sugar, Cardamom Powder and Dry Fruits to prepare the halwa. Ghee is the most important ingredient. The taste of the halwa depends on the quantity of Ghee added to it. You can reduce the quantity if you don’t like much of it. Also the Dry Fruits add extra flavor to the halwa.

To prepare the Halwa we need to roast Sooji in a pan for few minutes. As soon it starts changing its colour to reddish brown, switch off the stove and take it out in a bowl. Then heat water along with sugar. Add the roasted sooji and then the other ingredients. Cook for few minutes and your Sooji Ka Halwa is ready. If you want you can directly add all the ingredients to the roasted sooji. There is no need of taking out the roasted sooji from the pan.

Serve Sooji Ka Halwa or Rava Halwa during meal or as a dessert after the meal. Serving it along with Poori gives it the best taste.

Sooji Ka Halwa is prepared by roasting Sooji in a pan and then adding Sugar, Ghee, Cardamom Powder and Dry Fruits to it. It is cooked for few minutes to get a delicious and tasty Sooji Ka Halwa.

Ingredients:

  • 1/2 cup Sooji (Rava/Semolina)
  • 1/2 cup Sugar
  • 1/4 cup Ghee
  • 1.5 cups Water
  • 1/3 teaspoon Cardamom Powder (Optional)
  • 5-6 pieces Chopped Almonds (Badam)
  • 5-6 pieces Chopped Cashew Nuts (Kaju)
  • 5-6 pieces Raisins (Kismis)

Instructions:

  • Turn on the gas and heat Pan or Kadai over medium flame.
  • Add Sooji into the pan. Roast for 7-8 minutes or until it becomes light golden brown over medium flame. We do not need to add ghee into it. We will add it later on.
  • We need to keep stirring the Sooji continuously so that it does not burn.
  • After 7-8 minutes, take out the roasted Sooji from the pan in a bowl. Keep it aside.
  • In the same pan add 1 ½ cup water. The quantity of water should be three times the quantity of Sooji.
  • Now add sugar into the water. Heat the water till the sugar completely melts. Keep stirring the sugar.
  • Once the water starts boiling, add the roasted Sooji into it. While adding the Sooji keep stirring it so that lumps are not formed.
  • Next add the Chopped Almonds, Cashew nuts, Raisins and Cardamom Powder. Mix it well.
  • Increase the flame to high and cook for 4-5 minutes. Keep stirring it continuously.
  • The water will start to evaporate and the sooji will become little dry.
  • At last we will add Ghee. Stir it and cook for a minute. Switch off the flame. Stir it.

  • Sooji Ka Halwa is ready to be served. Take it out in a serving plate and serve it hot.

  • Serve it by garnishing it with dry fruits. It is optional. You can also serve it after it cools down.

Notes:

  1. The quantity of Dry Fruits can be adjusted. If you love it, you can add more of it. You can also reduce the quantity.
  2. The quantity of water used should be 3 times the quantity of Sooji.
  3. Ghee should be added in appropriate amount since it adds flavor to the halwa.
  4. We can add ghee in the initial stages also. However adding it at the end, makes the halwa little grainy (granular/daanedar).
  5. Cardamom Powder is optional. However I would suggest you to add it since it adds extra flavor to the halwa.
  6. If Cardamom Powder is not available, you can take the whole green cardamom and grind it into smooth powder.
  7. Sooji Ka Halwa can be also prepared using milk. Here water is replaced with milk. You can also add saffron into it to make Kesari Halwa.
