How to make Rice Kheer with Dry Fruits

Rice Kheer

It is a sweet dish of Rice cooked with milk and various dry fruits such as almonds, coconut, cashew etc. To make a tastier and yummy kheer you need to cook the rice and milk in a low flame for a longer time.

Ingredients:

  • 1/4 (or 70 gm approx) cup Basmati Rice
  • 1 litre Full cream milk
  • 1/2 cup Sugar (1/3 Cup if you want moderate sweetness)
  • 1-3 pieces Cardamom
  • Dry Fruits Chopped (Coconut, Pista, Cashew, Raisins, Almonds)
  • Saffron (Kesar) (Optional)

Instructions:

  • Soak the rice and dry fruits for half an hour or leave it overnight. It will help in boiling the rice quickly.
  • Heat the milk in a pot in medium flame.
  • After the milk comes to a boil, put the flame into low and put the drained rice in it.
  • Cook the rice in low flame until the rice becomes soft, tender and the milk reduces to half.
  • The rice must be stirred continuously so that the rice doesn’t burn in the bottom of the pot.
  • The milk gets stick on the side walls of the pot. Keep on removing (malai) them and mixing it with the milk.
  • Then add the cardamoms and all the dry fruits. You can add saffron (kesar) to give a different colour if you desire.
  • After 10 minutes add the sugar. Keep on stirring it so that it doesn’t stick. After getting the desired consistency switch of the flame.
  • Kheer is ready. You can serve it hot or chill it and serve.
  • Kheer taste best when it is freezed in refrigerator the whole night.

Notes:

Keep on stirring kheer continuously. Even if the mixture becomes dry, add more milk so that the rice is cooked for a longer time. The flame must be switched off when the rice gets fully mixed with the milk (The rice must not be separated from the milk easily). Also keep in mind that on cooling the mixture will thicken, so you must adjust your time when to switch off the flame
