Lauki (Dudhi or Ghia) Ki Kheer

Kheer is a very popular dessert sweet dish in India. The most famous kheer is the Rice Kheer. Today we will make Lauki Ki Kheer which is also very tasty and delicious. It can be served along with main course meal. Lauki Ki Kheer is prepared from Lauki (Bottle Gourd), Milk (Or Condensed Milk), Sugar, Cardamom Powder and Dry Fruits (Almonds, Cashew, Raisins, Pista, etc.). It is prepared in the same way as the Rice Kheer which I have already shared in my earlier post. It is very simple and easy to make. Even a beginner to the kitchen can also make this recipe. It can be served warm or chilled during fast or vrat

Ingredients:

  • 500 gm Grated Lauki (Bottle Gourd)
  • 1 Litre Boiled Full Cream Milk
  • 1/2 Cup Sugar
  • 1 teaspoon Ghee
  • 1/4 teaspoon Cardamom Powder
  • 7-8 piece Chopped Cashew Nuts
  • 5-7 piece Chopped Almonds
  • 7-8 piece Raisins

Instructions:

  • First we will grate the Lauki. Peel out the outer layer of the Lauki. Cut it vertically from the middle, remove the seeds from it and then grate it. Drain out the excess water from it.
  • Now heat 2 teaspoon ghee in a pan. When the ghee melts, put the grated Lauki in it.
  • Mix it and cook it for 5 minutes. Keep on mixing at regular intervals so that it does not stick to the bottom of the pan.
  • After the grated Lauki is cooked for 5 minutes, add milk to it.
  • Cook the Lauki in milk till 15 minutes till it gets a thick consistency and the Lauki and milk gets mixed properly.
  • When the milk attains a thick consistency, add Sugar, Cardamom powder and all the dry fruits. Mix it well.
  • Cook for another 3-4 minutes.
  • Switch off the stove and allow it to cool.
  • Lauki Ki Kheer is ready to be served. Serve it by garnishing it with dry fruits on the top.
  • It can be served hot or by chilling it in the freeze.

Notes:

  1. You can add Saffron to the Kheer if you want a nice colour to the recipe.
  2. The Bottle Gourd used must taste sweet and not bitter. Bitter taste will make the Kheer taste very bad. Also the bottle gourd should be ripe.
  3. You can also use Condensed milk instead of boiled milk. If you are using condensed milk, the quantity of sugar to be added must be reduced. The quantity of sugar in the recipe depends on the quantity of condensed milk used since condensed milk is also very sweet.
  4. Cardamom powder can be added as per your taste. If you like the flavor of cardamom you can add a little more of it.
  5. The Lauki and milk should be cooked till it attains the desired consistency. You can switch off the stove when it looks like that The Lauki and Kheer cannot be separated easily. In order to see whether the consistency is fine or not, just drop the mixture from the spoon. It should fall together.
