Gaajar Ka Halwa is one of the most preferred sweet items in Indian homes. I have already shared the Gaajar Ka Halwa recipe prepared from Milk and Khoya. I tried this recipe without using any of these ingredients and it came out very well. Here I have prepared the halwa only with grated carrot, sugar and dry fruits. The grated carrot has to be fried for a longer duration so that it gets cooked properly. The taste of halwa depends on how well you cook the grated carrot.

Gaajar Ka Halwa (Plain)
The carrots are first grated and then cooked in ghee. The main ingredients are Carrot, Sugar and Chopped Dry Fruits. Cardamom should be added after grinding it into powdery form. It can be served hot or chilled.

Ingredients:
- 1.5 kg Carrot
- 200 gm Sugar
- 3-4 piece Cardamom (Elaichi)
- 2-3 tablespoon Ghee
- 5-6 pieces Almonds
- 9-10 pieces Raisins
- 7-8 pieces Cashew nuts
- 1 tablespoon Grated Coconut
Instructions:
- Take the carrots, peel out the outer layer and wash it.
- Grate all the carrots one by one leaving the edges. Drain out the water left after grating the carrots. Keep it aside.
- Heat Ghee in a pan over medium flame.
- Add the grated carrots (Gaajar) to the ghee and mix it.
- The carrot starts changing its colour. Cook for 15-20 minutes.
- Keep on stirring in between so that it doesn’t stick to the bottom of the pan.
- The quantity of carrot starts decreasing as it is being cooked.
- Add sugar to the mixture and mix it. After some time it starts leaving water. Cook till the water evaporates completely. Cook for 10-15 minutes.
- Add Chopped dry fruits, Cardamom Powder and grated coconut. Mix it well.
- Cook for another 10-15 minutes. Keep on checking by stirring in between so that it do not stick to the bottom.
- After 15 minutes switch off the flame. Gaajar Ka Halwa is ready to be served.
- Serve it by garnishing with Chopped dry fruits and grated coconut.
Notes:
- While preparing Gaajar Ka Halwa, prefer to use Ghee rather than oil. The taste of the halwa comes out well when prepared with ghee.
- Prepare the halwa in low to medium flame. The longer the carrots are cooked, the better the taste is.
