Aloo Gobi Curry is a North Indian cuisine prepared from Cauliflower florets (Gobi) and Potatoes. Aloo in English translates to Potato and Gobi to Cauliflower. It is a curry recipe which has gravy of Tomato and Onion. Gobi Florets and Potatoes are simmered in Tomato Onion gravy.
Aloo Gobi Recipe has many variations and you can prepare in many different style with variations in different spices. We can prepare Aloo Gobi either in Gravy version or in Dry version. In both the versions, we make the recipe in the same manner. To prepare the Aloo Gobi Curry, we use more amount of spices to make the gravy by adding water. You can make a twist in the addition of different spices and make your own recipe in different flavour and taste. You can also make the semi dry version of this recipe. To prepare Aloo Gobi Curry, the other two main ingredients apart from Gobi and Potato is Tomato and Onion. We can use Tomato and Onion either by chopping and frying them in oil or by frying them by first making the paste of it. Here I will directly add them by chopping and frying in oil. If you want you can use Tomato Onion paste to make the curry. If you are using Tomato Onion paste, remember to saute them till they start leaving oil at the edges and the raw smell of the onion goes off. Also fry the potatoes first. When they are half fried then only the gobi should be added to fry them. It enhances the flavour of Aloo Gobi Curry.
You can prepare Aloo Gobi Curry either in pressure cooker or in open pot. Preparing in pressure cooker takes less time and is quick. If you want to prepare in open pot, I will suggest you to use boiled potatoes to make it in quick time. Here I will be preparing the recipe in pressure cooker. One more thing to remember is the quantity of water to use to prepare the curry. Use 1 to 1.5 cups of water if you are using pressure cooker and 2-3 cups of water if you are using open pot to make this recipe with 250 gram of Gobi flower. To boil the Gobi florets, use 3 cups of water for 250 gram of Cauliflower florets.
In restaurants and dhabas, the chef simply deep fry the potatoes and gobi in oil beforehand. They only toss in gravy and then serve to the customers. Here we will not be doing the same thing but will ensure that the taste of the recipe matches the taste of the restaurants Aloo Gobi Curry.
To prepare Aloo Gobi Curry, first fry the Onion with Cumin Seeds, Chilli and Ginger Garlic paste. Then fry the Gobi and Potatoes and cook them till they turn golden in colour. Next add the Tomato and other spices. Fry all the ingredients till the spices are well cooked. At last add Water and cook for 1 whistle to prepare the Aloo Gobi Curry.

Aloo Gobi Curry/Potato Cauliflower Gravy
Ingredients:
- 250 gram Cauliflower (Gobi)
- 4 medium Chopped Potato
- 1 medium Chopped Onion
- 1 large Chopped Tomato
- 2 piece Chopped Green Chilli
- 1/2 teaspoon Cumin Seeds
- 2 tablespoon Ginger Garlic Paste
- 1/2 teaspoon Turmeric Powder
- 1/2 teaspoon Kashmiri Red Chilli Powder
- 2 teaspoon Coriander Powder
- 1/2 teaspoon Garam Masala
- 1 teaspoon Kasuri Methi
- 4 tablespoon Chopped Coriander Leaves
- 3 tablespoon Oil
- Salt to taste
- Water to boil
Instructions:
Preparation of Cauliflower (Gobi) Florets:
- Wash the Potatoes and peel off the outer layer with the peeler. Chop or dice it into small cubes.
- Take the Cauliflower (Gobi) and remove the florets from it. Cut them into small pieces and wash in running water.
- Next take Water in a deep sauce pan and boil it with Salt. When the water comes to boil switch off the stove.
- Add the Cauliflower (Gobi) florets to the Salted Boiled Water. Cover with lid and keep it for 8-10 minutes.
- After 10 minutes, take out the Gobi florets and if required wash it again. Keep it aside.
Preparation of Aloo Gobi Curry:
- Heat Oil in pressure cooker over medium flame.
- Add Cumin Seeds and let it splutter.
- When the spluttering stops add Green Chilli and Ginger Garlic Paste. Saute it for few seconds till the raw smell goes off.
- Now add Chopped Onion and fry it till it gets slight golden in colour.
- Add Chopped Potatoes and Gobi. Fry them till the Potatoes and Gobi turns golden in colour.
- Now add Chopped Tomato and Salt. Cover the lid of the cooker and allow it to cook for few minutes. Keep checking that it does not burn.
- Open the lid and add spices such as Turmeric Powder, Kashmiri Chilli Powder, Coriander Powder and Garam Masala.
- Mix all the spices with Gobi and Potato properly. Saute all the ingredients so that the spices are well cooked.
- If the ingredients get dried up, add slight amount of water and then again cook them.
- Add Kasuri Methi and mix it. At last add Water, mix it and cover the cooker with the lid.
- Cook it for 1 whistle under medium heat and then switch off the gas. Allow the pressure of the gas to come down by itself.
- Open the lid, add Chopped Coriander Leaves and mix it. Aloo Gobi Curry is ready to be served.
- Take out the Aloo Gobi Curry in a separate bowl and garnish with Coriander Leaves.
- Serve it hot with Roti, Naan, Parantha, Steam Rice or any other type of Rice recipe.
Notes:
- Here we have prepared the Aloo Gobi Curry in pressure cooker. You can prepare it in open pot but it will take more time to prepare it.
- To prepare the Aloo Gobi Curry we can use Tomato Onion Paste in place of chopped Tomato and Onion.
- Fry the Potato and Cauliflower well to enhance the flavour of Aloo Gobi Curry. Fry them for a little longer duration.
- The spices used here can be adjusted as per your requirement of the spiciness of the gravy.
- To make the gravy thick, you can add small amount of Gram Flour to the gravy.
- Here we have added Kashmiri Chilli Powder to give reddish colour to the gravy. You can skip it if you want to.
- Red Chilli Powder can be used in place of Green Chilli to bring spiciness to the gravy.
