Aloo Curry or Potato Curry is a quick and easy curry recipe prepared by simmering Potato with Tomato Onion gravy. It is one of the simplest Curry Recipe which requires very few ingredients to prepare. Potato is the single vegetable which is available in our kitchen all the time. As it remains fresh for very long period, we bring it in large amount and store for longer time. Whenever there are no vegetables available at our home, the last option remains is to prepare any potato recipe.

Potato is called the king of vegetables and is rightly said as it goes together very well with any other vegetable recipe. Potato can be used to prepare the dry variant as well as the gravy variant. Today we will be preparing the gravy variant with potatoes and onion tomato curry. Here I have directly fried the Onion and Tomatoes in Oil by chopping them. If you want you can prepare the paste of Onion and Tomato in mixer grinder and then fry them in oil to prepare the gravy.

Aloo Curry can be prepared in open pot or in pressure cooker. I usually prepare it in pressure cooker as it fastens the preparation and consume very less time. But if you are making this recipe in open pot, do not forget to boil the potatoes beforehand. It reduces the time of cooking. If you directly use the potato without boiling then you will have to cook them with the gravy for a longer duration. I would suggest you to use pressure cooker to prepare this recipe quickly if you are in hurry and you are really very hungry and cannot wait for too long to have your meal. Also remember to add less water if you are cooking in pressure cooker. Add more water if you are making this recipe in open pot.

To prepare Aloo Curry, first peel off the outer layer of the potatoes and wash them. Cut into small pieces of cube shape. Heat Oil in cooker and fry Cumin Seeds along with Chilli and Onion. When the onion changes its colour, add Tomatoes and Salt. Cook till the tomatoes are soft and mushy. Now add the chopped potatoes and fry till it changes its colour. Next add all the spices and mix it properly. Add small amount of water and allow it to cook. At last add sufficient amount of water and cook for 2 whistles. Aloo Curry is ready to serve.

It can be served with Jeera Rice, Roti, Naan, Paranthas or any other Rice Recipes. Having Aloo Curry with Poori (Puri) is the best option.

Ingredients:

  • 4 medium Chopped Potato
  • 1 medium Chopped Onion
  • 2 medium Chopped Tomato
  • 2 piece Chopped Green Chilli
  • 1/2 teaspoon Cumin Seeds
  • 1 teaspoon Ginger Garlic Paste
  • 1/2 teaspoon Turmeric Powder
  • 1 teaspoon Kashmiri Red Chilli Powder
  • 1 teaspoon Coriander Powder
  • 1/2 teaspoon Garam Masala
  • 1/2 teaspoon Kasuri Methi (Optional)
  • 4 tablespoon Chopped Coriander Leaves
  • 2 tablespoon Oil
  • Salt as required

Instructions:

  • Peel off the outer layer of the potatoes. Wash them and cut into small cube shaped pieces.

  • Heat 2 tablespoon Oil in pressure cooker over medium heat.

  • Add Cumin Seeds and allow it to crackle.

  • When the crackling stops, add Chopped Green Chilli and Chopped Onion.

  • Fry the Onion till it turns golden in colour. Keep stirring it continuously so that it does not burn.

  • Add Ginger Garlic Paste and saute till the raw smell of Ginger Garlic goes off.

  • Next add Chopped Tomatoes and Salt. Cook the tomatoes till they are soft and mushy.

  • Add the Chopped Potatoes and fry till the potatoes are well fried and it changes its colour.

  • Now add the spices such as Turmeric Powder, Kashmiri Red Chilli Powder, Coriander Powder and Garam Masala.

  • Fry all the spices with the potatoes for 2-3 minutes. If required add little amount of water and then fry the spices.

  • When all the ingredients are properly fried, add water to it. Add water as per your requirement of the thickness of the gravy. Add water so that it partially cover the potatoes

  • Add Kasuri Methi and mix it. Close the lid of the cooker and cook over medium heat for 2 whistles.

  • After 2 whistles, switch off the flame and allow the pressure of the cooker to come down by itself.

  • Open the lid of the cooker and add Chopped Coriander Leaves. Mix it.

  • Take out the Aloo Curry in a bowl and serve it by garnishing with Coriander Leaves. Serve with Rice, Roti, Naan or Paranthas.

Notes:

  1. You can prepare the Aloo Curry in open pot. To prepare it in open pot, boil the potatoes beforehand. It helps in preparing the recipe in less time. If you are using raw potatoes, it will take more time to cook the potatoes.
  2. The quantity of water should be added as per the requirement of the thickness of the gravy. Add less water if you want to make thick gravy. Add more water to make the gravy thinner.
  3. If the gravy becomes watery, you can slightly mash the potatoes. It makes the gravy thicker.
  4. Adding of Kasuri Methi is optional. You can skip it if you want to. However addition of Kasuri Methi increases the flavour of Aloo Curry .
