Masala Tea or Masala Chai is an authentic Indian Tea prepared from Milk, Sugar, Tea Leaves and Spices. Tea is one of the favourite drinks during the monsoon and winter season along with different Recipes. However, now it is had throughout the year with different Breakfast and Snacks Recipes. The name of the Tea only indicates that it involves the use of Indian Whole Spices. First blend the Whole spices into smooth fine powder and then add along with Milk, Sugar and Tea Leaves to prepare this refreshing drink.

In my initial days of cooking even before I started preparing this authentic Masala Chai, I kept wondering as to how could spices be used to prepare tea along with milk and sugar. I saw this Masala Chai in various TV shows and recipe books and then thought to give it a try. Initially it was difficult for me to prepare the blend of spices for making the masala tea. So I bought the ready made masala powder and then made the Masala Tea for the first time. You will not believe how much refreshing it was. Even my family members loved it.

I then frequently started preparing it for breakfast and snacks. The ready made masala for tea that I brought from the market was of around 50 grams only. After it got over I decided to prepare this masala at home only. I went through different recipe books and you tube videos. Different people had different unique ways of preparing the masala for the tea. There was variation in the combination of the whole spices used. After going through so many recipe books, I finally prepared my own blend of masala for Masala Chai using different whole spices.

This Masala Tea recipe that I usually prepare using the Homemade Spice Powder is more refreshing and has more aroma than the tea prepared from readymade masala.  Now I usually prepare the masala for tea at home only. While preparing the masala for the Masala Tea, the most common spices that I use are Green Cardamom, Cloves, Cinnamon Stick, Black Peppercorns and Ginger. All the spices are dry spices except the ginger. I add fresh ginger while preparing the tea. However you can use dry ginger powder and add it with other whole spices to make the masala. If you are using fresh one then add it with boiling water while making the tea.

While preparing the spice powder for the tea we can add or skip a number of whole spices. It totally depends upon ones choice. In my kitty, around 5 spices are must for preparing the masala powder for masala chai. To prepare this recipe, let us first prepare the masala powder. Take all the dry whole spices such as Green Cardamom, Cloves, Black Peppercorns, Star Anise and Cinnamon Stick in a grinder jar. Blend it to make smooth fine powder. You can prepare coarse powder also. Remove it from the jar and store it in an air tight container. We will use this Homemade Masala to prepare the Masala Chai.

Now heat required amount of water over medium heat. When it comes to boil, add Blended Masala and Tea Leaves. Also add crushed Ginger. For making 2 servings use 1/2 teaspoon of masala powder. To make the tea stronger, use 3/4 teaspoon of masala powder. Boil for few minutes till it absorbs all the flavours of the spices. Next add Milk and Sugar to the boiling water. Boil for few more minutes till the milk completely absorbs the flavour of the spices and Tea Leaves. Switch off the stove and strain the Tea with the help of strainer. Masala Tea is ready to serve. Serve it in breakfast or with some snacks recipe.

Masala Tea/Masala Chai/Authentic Masala Chai

Masala Chai is an authentic Indian MasalaTea prepared from whole spices. Whole Spices are first blended into powder andthen cooked with Tea Leaves, Sugar and Milk to prepare the refreshing MasalaTea.

Equipments:

  • Sauce Pan
  • Strainer

Ingredients:

  • 1 teaspoon Green Cardamom
  • 1/2 teaspoon Cloves
  • 3/4 inch Cinnamon Stick
  • 1/2 teaspoon Black Peppercorns
  • 2 piece Star Anise (Optional)
  • 3/4 teaspoon Ginger
  • 1 teaspoon Tea Leaves or Tea Powder
  • 3 teaspoon Sugar
  • 1.5 cup Milk
  • 1 cup Water

Instructions:

  • Take all the dried whole spices such as Green Cardamom, Cloves, Cinnamon Stick, Black Peppercorns and Star Anise in a blender or hand pestle. Star Anise is optional.
  • Crush the whole spices into coarse powder. Keep it aside.
  • Now take Water in a sauce pan and boil it over low to medium flame.
  • Add approx. 1/2 to 3/4 teaspoon of crushed Whole Spices along with Ginger and Tea Leaves (or Tea Powder). Crush the Ginger slightly before adding it.
  • Boil the Water for about 3-4 minutes over low to medium flame. The water will absorb the flavours of the spices and Tea Leaves.
  • It is at this time that we will add the Milk. After 3-4 minutes, pour the Milk into the boiling water. Also add Sugar to it.
  • Boil the mixture for another 3-4 minutes till the flavour is completely dissolved with the milk.
  • To get a proper flavour of the masala boil the milk for few minutes under low flame. It will add extra flavour to the tea.
  • After 3-4 minutes, switch off the stove. Strain the Masala Tea with the strainer.

  • Masala Chai is ready to serve. Transfer the Masala Tea into a serving cup and serve it in breakfast or with your favourite Snacks Recipe.

Notes:

  1. The taste of the Masala Tea depends upon the Masala Tea Powder and Tea Leaves. Adjust the quantity as per your requirement.
  2. Few additional ingredients such as Tulsi (Basil) can also be added. It is beneficial for immunity.
  3. The taste can also be varied by varying the quantity of spice powder.
  4. Milk is the other reason that decides the taste of the tea. So adjust it accordingly.
  5. Also add Sugar as per your fondness of sweetness. You can also use Sugar Free sweetener.
