Halwa is the most popular dessert sweet dish in India, whether it is Moong Dal ka halwa, Suji ka halwa, Lauki ka Halwa or Gaajar (Carrot) Ka Halwa. I have already shared the recipe for Lauki Ka Halwa with Khoya in my previous post. Today I am sharing the recipe for Lauki Ka Halwa prepared from milk. Here the grated Lauki is cooked with milk instead of Khoya or milk powder.

Lauki (Dudhi or Ghia) Ka Halwa with Milk

Lauki ka Halwa is prepared from grated Lauki (Bottle Gourd) and Milk along with some Dry Nuts such as Cashew, Almond and Raisins which is used to garnish.

Ingredients:

  • 1 kg Grated Lauki (Bottle Gourd)
  • 2 cup Boiled Milk
  • 4 tablespoon Sugar
  • 3 tablespoon Ghee
  • 1/2 teaspoon Cardamom Powder (Elaichi)
  • 15 piece Chopped Cashew Nuts
  • 15 piece Chopped Almonds
  • 15 piece Raisins

Instructions:

  • Peel out the outer layer of the Lauki. Wash and cut into pieces of 5 inches each. Grate the outer part of the bottle gourd and leave the remaining inner part which contains seeds. Drain out the excess water from it.
  • Now heat 3 tablespoon ghee in a pan and fry the chopped cashew nuts and almonds till it becomes light golden brown. Remove it in a separate bowl.
  • In the same oil put the grated Lauki and fry for 10 minutes. At regular intervals keep on stirring so that it doesn’t stick to the bottom of the pan and burn.
  • After frying for 10 minutes, add sugar to it and mix it. On mixing the sugar it starts leaving water. Cook and allow the water to evaporate.
  • After the water completely evaporates, add milk to it. Keep stirring it at regular intervals.
  • Cook for 15 minutes. When the milk completely evaporates, add the cardamom powder and the dry fruits.
  • Stir it and cook for another 2 minutes.
  • Switch off the stove and allow it to cool.
  • Lauki ka Halwa is ready to be served. Serve it by garnishing it with dry fruits on the top.
  • It can be served hot or cold.

Notes:

  1. Many sweet shops add green colour to the recipe to give it a good texture and look. If you want you can add or else let it go off.
  2. Before grating the bottle gourd, do check that the vegetable taste sweet and not bitter. Bitter taste will make the halwa taste very bad.
  3. The centre part of Bottle Gourd should not be grated.
