Soya Chilli

Soya Chilli or Soya Chilli Nuggets is a popular protein nutrient Indo Chinese starter prepared from fried Soyabean Chunks with slurry of sauces. Soya Nuggets are very healthy and nutrient rich since it has a very high amount of protein. It is very easy and quick to prepare. This recipe is similar to other Chilli Recipes. The preparations of all the chilli recipes are same since all of them have one thing in common that is the preparation of sauce slurry.

There are two variants of Soya Chilli. The first is the dry variant and the second is the gravy variant. Dry variant is the most popular one but gravy variant is most preferred one with naan and roti. Here I am going to share the dry variant of Chilli Soya Nuggets. To prepare the gravy version, prepare the sauce slurry with more amount of Corn Flour and Water. While preparing this recipe, we have to boil and wash the soya chunks properly. To make the nuggets crunchy , add the fried soya chunks into the slurry just before serving it. The soya chunks become soft when we keep it coated with slurry for longer duration.

Soya Chilli or Chilli Paneer which are served in restaurants is reddish in colour. It is due to the addition of food colour. However, here we will not be using any colour and so the recipe will be little brownish in colour. I will be adding small amount of Kashmiri Red Chilli Powder to give a colour to it. I will be preparing the nuggets by marinating it in Gram Flour. You can also prepare it without the need of marinating.

To prepare Chilli Soya Nuggets, marinate the Soyabean Chunks with Gram Flour and various other spices. Heat Oil and fry the marinated soyabean chunks till it turns slightly brown in colour. Keep it over kitchen towel so that it absorbs excess oil.

Next we have to prepare slurry of sauces. Firstly heat oil and fry the vegetables such as Onion and Capsicum with Garlic and Chilli. Add all the sauces along with Corn Flour slurry. Cook till the slurry thickens. At last add the fried Soyabean Nuggets and mix it. Immediately take it out in a serving bowl, garnish with Spring Onion Greens and serve with your favourite recipe. Serve it with Fried Rice or Noodles or Roti.

Equipments:

  • Heavy Base Kadhai

Ingredients:

For Fried Soya Nuggets:

  • 1 cup Soyabean Chunks
  • 1/4 cup Gram Flour (Besan)
  • 1/2 teaspoon Kashmiri Red Chilli Powder
  • 1/4 teaspoon Black Pepper Powder
  • 1/2 teaspoon Ginger Garlic Paste
  • 1/2 teaspoon Salt
  • 4 cups Water
  • Oil for Frying

For Soya Chilli:

  • 1 tablespoon Finely Chopped Garlic
  • 2 piece Green Chilli Slit
  • 1 medium cubed Onion
  • 1 medium cubed Capsicum
  • 2 tablespoon Tomato Sauce
  • 1 tablespoon Chilli Sauce
  • 1 teaspoon Soya Sauce
  • 1/2 teaspoon Kashmiri Red Chilli Powder
  • 1 teaspoon Vinegar
  • 1 teaspoon Corn Flour
  • 2 tablespoon Oil:
  • 4 tablespoon Spring Onion Greens
  • 1/4 cup Water
  • Salt to taste

Instructions:

Frying Soyabean Nuggets:

  • Boil Water with Salt in a pan. After the water boils, switch off the stove.
  • Add the Soyabean Chunks into it and let it soak till the soya chunks are soft.
  • When the Soya Chunks becomes soft, squeeze out the excess water from it and keep in a separate bowl.
  • Add Gram Flour, Kashmiri Red Chilli Powder, Black Pepper Powder, Ginger Garlic Paste and Salt into the bowl.
  • Mix all the ingredients properly so that the Soya Chunks are evenly coated with Gram Flour and other spices. Keep it aside for 5 minutes.
  • Now heat Oil in a pan over medium heat.
  • Add the coated Soyabean Chunks into the Oil and fry them till they are light golden in colour from all side. Keep stirring in between so that they do not burn.

  • Take out the fried Soyabean Nuggets and keep over kitchen towel so that the excess oil is absorbed. Fry all the soyabean chunks and keep it aside.

Preparing Soya Chilli Recipe:

  • Heat Oil in a pan over medium heat.
  • Add Finely Chopped Garlic and Green Chilli. Saute for few seconds.
  • Next add Onions and Capsicum. Saute till all the ingredients slightly change their colour.
  • Now add Tomato Sauce, Chilli Sauce, Soya Sauce, Vinegar, Kashmiri Red Chilli Powder and Salt.
  • Mix all the ingredients properly and saute for a minute.
  • Prepare Corn Flour slurry by mixing 1 teaspoon Corn Flour with 1/4 th cup water.
  • Add the slurry into the pan and cook till the gravy slightly thickens.
  • Add the fried Soyabean Nuggets. Mix well to coat the soya chunks with the slurry.
  • Cook for few minutes till the slurry gets slightly dried up. Switch off the stove.

  • Take out the Chilli Soya Nuggets in a plate and serve it by garnishing with Spring Onion Greens.

Notes:

  1. While preparing Soya Chilli, I have marinated Soyabean with Gram Flour (Besan). You can replace it with Corn Flour. However Besan is healthier than Corn Flour.
  2. I have used Kashmiri Red Chilli Powder to give a reddish colour to the recipe. If you want you can skip it.
  3. The Soya Chunks can either be deep fried or shallow fried. The taste will remain the same.
  4. To prepare Chilli Soya Gravy, add more amount of Corn Flour paste.
  5. Onion and Capsicum should be kept little raw while frying. It enhances the flavour of the recipe.
  6. While marinating the Soya Chunks, add Salt as required since we have already added it while soaking the Soya Chunks.
