Lauki (Dudhi or Ghia) Ka Halwa with Milk Powder
Halwa is the most popular dessert sweet dish in India which can be served along with main course meal. Lauki ka Halwa is prepared from Lauki (Bottle Gourd), milk powder, Sugar, Cardamom Powder and Dry Fruits. Vegetable prepared from Lauki is loved by only few, but Lauki ka halwa is a favourite dessert for many people. A tasty and creamy halwa of Lauki will really surprise you and you will start preparing it very often

Ingredients:
- 1 Kg Grated Lauki Bottle Gourd
- 1 Cup Milk Powder
- 5 tablespoon Sugar
- 3 tablespoon Ghee
- 1/2 teaspoon Cardamom Powder
- 7-8 piece Chopped Cashew Nuts
- 6-7 piece Chopped Almonds
- 15 piece Raisins
Instructions:
- First peel out the outer layer of the Lauki. Grate the outer part of the bottle gourd and leave the inner part of it which mainly consists of seeds. Drain out the excess water from it.
- Now heat 3 tablespoon ghee in a pan and fry the chopped cashew nuts and almonds till it becomes light golden brown. Remove and keep it in a separate bowl.
- In the same oil put the grated Lauki and fry for 10 minutes. At regular intervals keep on stirring so that it doesn’t stick to the bottom of the pan and burn.
- After frying for 10 minutes, add sugar to it and mix it. On mixing the sugar it starts leaving water. Cook and allow the water to evaporate.
- When the water evaporates to a considerable amount, add the milk powder, cardamom powder and the dry fruits. Mix them properly so that all the ingredients are spread evenly. Cook for another 5 minutes.
- Switch off the stove and allow it to cool.
- Lauki ka Halwa is ready to be served. Serve it by garnishing it with dry fruits on the top.
- It can be served hot or cold, whichever way you love to have.
Notes:
- Before grating the bottle gourd, do check that the vegetable taste sweet and not bitter. Bitter taste will make the halwa taste very bad. The centre part of Bottle Gourd should not be grated.
- While cooking the grated Lauki, we must keep in mind that the water must not be completely evaporated. This must be little watery so that the milk powder can be mixed properly.
- Many sweet shops add green colour to the recipe to give it a good texture and look. If you want you can add or else let it go off.
- Use dry fruits in halwa according to your need. Also, use ripe Lauki to prepare tasty halwa
