Cashew Nut Chutney or Kaju Ki Chutney is a flavorful and delicious dip or spread ideal for snacks such as chips, breadsticks, bread wraps, etc. We can also serve it as a side dish in breakfast, lunch or dinner. Cashewnut is a dry fruit which has various uses. It can simply be consumed or can be used while preparing different types of recipes. It adds flavour to the food and makes them rich and creamy.
To prepare Cashewnut Chutney, first we will be frying Green Chilli, Garlic and Onion. After the Onion changes its colour to light golden, we will add Chopped Tomatoes and Salt. Fry it till it becomes soft and mushy. Then add Cashewnut. Fry for another 2-3 minutes. Switch off the flame and allow it to cool. When it completely cools down, transfer the mixture to mixer grinder jar and prepare a thick smooth paste. If you want you can also add tempering of mustard seeds to it.
I keep on preparing various types of chutneys from time to time. The idea of preparing the Cashew Nut Chutney came to my thought while making Peanut Chutney. I went on searching this recipe in internet but there were only few websites with this recipe. I read the recipe but did not find it interesting to prepare. Not even a single website clearly mentioned the way of preparing it. I was really disappointed. Then I thought to give it a try on my own way. Then what, the very next day I was in my kitchen preparing the aromatic and flavorful Cashew Nut Chutney. It was very delicious and tasty. I thought it to share with you all. Today I am going to prepare once again for my readers.

Cashew Nut Chutney/Kaju Ki Chutney/Cashew Chutney
Ingredients:
- 1/2 cup Cashew nuts
- 1 medium Chopped Onion
- 1 medium Chopped Tomatoes
- 1 piece Chopped Green Chilli
- 5-6 pieces Chopped Garlic
- 2 teaspoon Oil
- Salt to Taste
- Water as required
Instructions:
- Heat 2 teaspoon Oil in a pan over medium heat.
- Once hot, add Chopped Green Chilli and sauté for few seconds.
- Add Chopped Onion and Garlic. Saute it until the onion becomes light golden in colour.
- Add Chopped Tomatoes and Salt to the cooked onions. Cook till the tomatoes becomes little mushy.
- Now add Cashew Nut and roast it along with tomato and onion till it becomes light golden. Switch off the flame. Allow it to cool.
- When the mixture completely cools down, transfer it to the mixer grinder jar.
- If required add water to it. Grind to make thick smooth paste.
- Cashew Nut Chutney is ready to be served with your favourite snacks.
Notes:
- Add water to the mixture as per the thickness required while preparing the paste.
- If you want you can also add curd while grinding the paste.
- Cashew Nut Chutney can be stored for few extra days if onion is not used.
- To give a better taste, you can also give tempering with mustard seeds
