Veg Mayonnaise or simply Mayonnaise Sandwich is a quick and easy breakfast recipe that can be prepared in very less time. The other name of this recipe is Veg Mayo Sandwich. There are number of Sandwich Recipes that can be prepared in different ways and in different style since the taste varies from one sandwich to other. Veg Mayonnaise Sandwich is the most common sandwich that we find in a stall whenever we are out of our home. It is a suitable go to breakfast recipe for office going people. Whenever you are in hurry for your office, you can prepare this sandwich in quick time. The specialty of this sandwich is the use of Mayonnaise which adds taste to it.
Veg Mayonnaise Sandwich is similar to Grilled Veg Mayo Sandwich. The only difference is the grilling of the sandwich. Since the sandwich that we are preparing today does not require grilling, it will take just few minutes to prepare. To prepare Veg Mayonnaise Sandwich, we just need to prepare the vegetable stuffing, where we mix all the vegetables along with the spices and mayonnaise. We then sandwich the stuffing between the bread slices to make the sandwich. You can prepare the stuffing by using veggies of your choice.
Since Mayonnaise is the main ingredient of this sandwich recipe, we can add twist to the recipe by using different types of Mayonnaise. There are different flavours of mayonnaise and you can select them as per your choice and according to your taste. The taste of the sandwich will depend upon the mayonnaise that you select. The other ingredient that is important is the bread slices. We can use any type of bread, whether it is white bread or brown bread or whole wheat bread. I would suggest you to use any type of bread but without the outer crust. The sandwich remains soft if you prepare it without the outer crust. Crust less Bread slices is easily available in the market. If you do not get it, you can simply cut the outer edge of the bread slices with knife and make the sandwich.
It is served with Tomato Ketchup or Green Chutney.

Ingredients:
- 10 slice Bread (Without Crust/Corners)
- 3 tablespoon Butter
- 5 tablespoon Veg Mayonnaise
- 1/4 cup Grated Carrot
- 1/4 cup Finely Chopped Capsicum
- 1/2 cup Shredded Cabbage
- 1/4 cup Chopped Tomato
- 1/4 cup Chopped Cucumber
- 3/4 teaspoon Black Pepper Powder
- 1 teaspoon Pizza Seasoning (Optional)
- Salt to Taste
Instructions:
- Take a large bowl. Add Grated Carrot, Finely Chopped Capsicum, Shredded Cabbage and Chopped Tomato and Cucumber. Mix them.
- Add Black Pepper, Veg Mayonnaise, Pizza Seasoning and Salt to the mixture. Mix all the ingredients so that mayonnaise is evenly spread. Keep it aside.
- Now take two bread slices and apply butter evenly all over them on one side of each bread with the help of spoon.
- Place a slice of the bread over the chopping board. Take small amount of vegetable Mayonnaise stuffing and apply evenly over the bread slice.
- Take the other bread slice and place over the first bread slice and press it firmly.
- In the similar manner prepare Veg Mayonnaise Sandwich for the remaining bread slices.
- Veg Mayonnaise Sandwich is ready to be served. Serve it with Tomato Ketchup or with Mint Chutney or any other chutney.
Notes:
- You can use any type of bread from White Bread, Brown Bread, Whole Wheat Bread, etc. The bread should be without crust and corners.
- The stuffing can be prepared from veggies of your choice. You can use any type of vegetables.
- Here we have used Plain Mayonnaise. Any other variant of Mayonnaise of your choice can be used.
- Mayonnaise should be added as required. Consistency of the stuffing should be maintained so that it does not come out of the bread slices.
- Here we have added Pizza Seasoning to the stuffing. You can skip it if you want.
