Pav Bhaji is a popular street food prepared from variety of vegetables which are boiled, mashed and then cooked with spices. It is served with Pav Buns toasted in butter. Pav Bhaji is the most popular Street food not only in Mumbai but almost whole of North and West India. It is prepared from vegetables such as French Beans, Carrot, Cauliflower, Capsicum, Green Peas and Potatoes. You can serve Pav Bhaji not only as a starter or appetizer but also as a full course meal in lunch and dinner.

Whenever some guests arrive at our home we usually prepare lot of recipes which takes lot of time. But this Pav Bhaji recipe takes very less time and tastes very yummy. So, the next time any guest arrives at your doorstep, do give it a try. I am sure they will love it.

There are many factors which decide the taste and flavour of this recipe. The most important factor in Pav Bhaji is the use of butter which adds flavor and taste to it. Add adequate amount of it. Choice of vegetables is also important while preparing Pav Bhaji. So select vegetables as per your choice. Here we will be using vegetables such as Potatoes, French Beans, Carrot, Capsicum, Cauliflower and Green Peas. Potato is a must use vegetable in bhaji. You can skip some of the veggies but you cannot skip potatoes. If you want, you can add Paneer to the bhaji either in cube form or in grated form. It is your own choice. It will boost the taste of the bhaji.

To prepare bhaji, use readymade Pav Bhaji Masala which is easily available in the market. Use of good quality Pav Bhaji Masala adds extra flavour and aroma to the bhaji. To get a good texture in bhaji, vegetables should be mashed properly. Some people love to eat bhaji in which the veggies are completely mashed while some love to eat with the veggies partially mashed. You can prepare in either way. You must also note that Pav used must be soft and fresh.

Bhaji that we have in street side stall or restaurants appears little reddish in colour. This is due to addition of red colour. You can use natural red food colour to give a nice reddish colour. Avoid using synthetic colour. Here I will be using Kashmiri Lal Mirch to give it a reddish colour.

To prepare Pav Bhaji, first take all the vegetables such as Potatoes, French Beans, Carrot, Cauliflower, Capsicum and Green Peas and wash them. Chop the vegetables into small pieces and transfer it to pressure cooker. Add required amount of Water and close the lid. Cook the vegetables for 3-4 whistles over medium flame. Once the veggies are cooked, switch off the stove. Allow the pressure of the cooker to release on its own. Once the pressure releases, open the lid and mash the veggies with spatula. Keep it aside.

Now heat Oil in a kadai over medium heat. Once hot add Cumin Seeds and allow it to sizzle. Once sizzling stops, add Chopped Chillies, Chopped Onion and Ginger Garlic paste. Saute and cook till the Onion becomes light golden in colour. Now add Chopped Tomatoes and Salt and cook till the tomatoes become soft and mushy.

Next add spices such as Turmeric Powder, Kashmiri Lal Mirch, Coriander Powder and Pav Bhaji Masala. Mix the spices and cook it till the raw smell of the spices goes off. At last add the mashed vegetables and mix it properly with the cooked spices. Simmer the bhaji for 3-4 minutes. You can add water for the required consistency of bhaji.

Now add adequate amount of Butter along with Chopped Coriander and Lemon Juice. Mix and cook for another 2-3 minutes. After few minutes switch off the gas. Bhaji is ready to serve. Take out the bhaji in a bowl and garnish with chopped coriander, grated paneer and a cube of butter. Now take the Pav Buns and cut them into two halves. Heat tawa and add butter. Toast the buns in butter till it slightly becomes golden. Serve it hot with bhaji along with Chopped Onion and Lemon wedges.

Equipments:

Ingredients:

  • 2 medium Chopped Potatoes
  • 3 medium Chopped Tomatoes
  • 1/2 cup Chopped French Beans
  • 1/2 cup Chopped Carrot
  • 1/2 cup Chopped Cauliflower
  • 1/2 cup Green Peas (Fresh or Frozen)
  • 3/4 cup Chopped Onion
  • 2 medium Chopped Green Chilli
  • 1 tablespoon Ginger Garlic Paste
  • 1/2 cup Chopped Capsicum
  • 1 teaspoon Cumin Seeds
  • 1/4 teaspoon Turmeric Powder
  • 2 teaspoon Kashmiri Lal Mirch
  • 1 teaspoon Coriander Powder
  • 2 teaspoon Pav Bhaji Masala (Readymade)
  • 1 teaspoon Lemon Juice
  • 2 tablespoon Oil
  • 2 tablespoon Butter
  • 2 tablespoon Finely Chopped Coriander Leaves
  • Salt to taste
  • 8 pieces Pav Buns

Instructions:

  • Take all the vegetables (French Beans, Carrot, Cauliflower, Capsicum, Green Peas and Potatoes) in a pressure cooker. Add some water and salt to it. Cook the veggies in the pressure cooker for 3-4 whistles on medium heat or till the vegetables becomes soft and is easily mashed.
  • Turn off the flame and let the pressure release by itself. After the pressure is completely released, mash the vegetables with a masher or with the back side of the spoon. Keep it aside.
  • Heat 2 tablespoon of oil in medium heat. Add cumin seeds and let it sizzle.
  • Add chopped chilies, chopped onion and ginger garlic paste. Cook it till the onion becomes light brown.
  • Add chopped tomatoes and salt to it. Cook it till the tomatoes become soft.
  • Add Turmeric powder, Kashmiri Lal Mirch, Coriander Powder and Pav Bhaji Masala. Saute it for 2-3 minutes.
  • Now add the mashed veggies and mix it well. Simmer it for 3-4 minutes. You can add water as per your liking for the consistency.
  • Add 1 tablespoon of butter and mix it.
  • Take the chopped coriander leaves and mix it properly. Also add lemon juice to it. Cook for another 2-3 minutes.
  • Turn off the stove. Garnish it with chopped coriander, grated paneer and a cube of butter. Bhaji is ready to be served.

  • Now cut all the Pav buns in two halves. Heat the tawa and add butter to it. As the butter melts toast the buns from both the sides till it becomes light brown. Toast all the buns.

  • Serve the buns with the Bhaji along with chopped onions and lemon wedges.

Notes:

  1. Here we have used Kashmiri Lal Mirch to give a nice colour to the bhaji. If you do not care of the colour you can use red chilli powder also, but to your liking of spiciness.
  2. The taste of the Pav bhaji mainly depends on the use of butter, so use adequate quantity of it.
  3. You can add vegetables as per your requirement. Here we have used veggies such as Potatoes, French Beans, Carrot, Cauliflower, Capsicum and Green Peas. You can skip any of these if you want. However, Potato is the main base of the recipe, so use enough potatoes as compared to other vegetables.
  4. Cook the vegetables for about 3-4 whistles. If the veggies are cooked properly and gets easily mashed, it’s fine. If it does not get mashed easily, cook it further for few more whistles.
