Sweet Tomato Chutney is prepared by first cooking Tomatoes with Cumin Seeds, Mustard Seeds, Asafoetida, Curry Leaves, Ginger, Garlic, etc. Then Sugar or Jaggery is added and cooked for another few minutes.

Ingredients
5-6mediumChopped Ripe Tomato
1teaspoonCumin Seeds
1/2teaspoonMustard Seeds
1teaspoonChopped Ginger
6-7piecesGarlic Cloves
1piecesDried Red Chilli
1/4teaspoonAsafoetida
1/2cupSugar or Jaggery
10-12leavesCurry Leaves
2tablespoonMustard Oil
Instructions
Heat 2 tablespoon oil in a Frying pan. Add Cumin Seeds, Mustard Seeds, Asafoetida and Curry Leaves. Cook till the crackling sound comes from it.
Add the Dried Red Chillies, Garlic Cloves and Chopped Ginger. Fry it for a minute.
Now add the Chopped Tomatoes. Mix it well.
Cook the tomatoes for 10-15 minutes by covering the pan. Fry it till the tomatoes become soft and mushy.
When the tomatoes become soft, mash it with a large spoon to make a smooth paste.
Add Sugar and cook for another 5 minutes. After the mixture is cooked properly, switch off the flame.
Take it out in a bowl and serve it hot or cold with any of your favourite recipe.
Notes
Tomatoes used in this chutney should be totally ripe. It will give a very good taste. If the tomatoes are not ripe, the chutney will not come out good.
Add sugar as per your taste. You can replace it with Jaggery.
If required you can add water to it while cooking.
