Ingredients
1cupBasmati Rice
2teaspoonCumin Seeds
2inchCinnamon Stick
1pieceBlack Cardamom
2pieceCloves
2pieceDry Red Chilli
2pieceBay Leaves
2tablespoonGhee
4tablespoonChopped Coriander Leaves
1/2teaspoonSalt
2cupWater
Instructions
Wash and rinse the Basmati Rice properly under running water so that the starch is removed. Keep it aside.
Heat Oil or Ghee in a pressure cooker under medium heat.
Add Cinnamon Stick, Black Cardamom, Cloves, Dry Red Chilli and Bay Leaves. Black Cardamom should be broken into two pieces so that the Rice absorbs its flavour properly.
Fry it for 30 seconds by continuously stirring. Be careful that the Bay Leaves do not burn.
Add Cumin Seeds and allow it to crackle. Fry till the crackle completely stops and the Cumin is well cooked. Uncooked Cumin can change the taste of the rice.
Now add Basmati Rice, Salt and Water. Mix it with a spatula.
Cover the lid of the cooker and pressure cook for two whistles under medium heat.
Switch off the stove and allow the pressure of the cooker to come down by itself.
Open the lid of the cooker and add Chopped Coriander Leaves. Mix it. Jeera Rice is ready to be served.
Take it out in a plate and serve it hot by garnishing with Coriander Leaves. Serve it with your favourite Curry Recipes.
Notes
Jeera Rice can also be prepared in open pot. I usually prepare the Jeera Rice in cooker since it takes less time.
Cumin Seeds should be completely cooked otherwise the taste of uncooked Jeera will change the taste of the Jeera Rice.
Add Salt as per your taste or add it depending upon the Curry Recipe with which you will have the Jeera Rice.
If you are not so fond of Ghee in your diet, you can replace it with any other type of oil or Butter.
The whole spices can be removed before serving the Jeera Rice.
