Matar Pulao or Peas Pulao is a very simple to make recipe made from Peas and few spices. Fresh Peas or Frozen Peas can be used to prepare this recipe. But I prefer to use fresh peas because it gives a different flavor. Frozen peas lose their original flavor over a period of time. It involves the mixing of peas with rice. It can be served with any veg curry recipes such as Paneer Butter Masala, Dal Makhani, Rajma, Chana Masala, etc

2cupBasmati Rice
1cupFresh Green Peas
2mediumChopped Onion
1tablespoonGinger Garlic Paste
2pieceSlit Green Chilli
1teaspoonCumin Seeds
4-5piecesGreen Cardamom (Elaichi)
4-5pieceLaung (Cloves)
1leafBay Leaf (Tej Patta)
2pieceCinnamon Stick (Dalchini)
1pieceBlack Cardamom (Badi Elaichi)
2strandsJavitri/Mace
1tablespoonMint Leaves (Pudina)
1tablespoonChopped Coriander Leaves (Dhania)
2tablespoonGhee or Oil

Instructions
Wash and soak rice for at least 30 minutes. Drain out the water and keep aside.
Heat 2 tablespoon of oil or ghee in a pressure cooker over medium flame.
Add Cumin seeds to the oil. When it starts to crackle, add all the whole spices (Green Cardamom, Laung, Bay Leaf, Dalchini, Black Cardamom and Javitri/Mace). Saute for a minute.
Add Cashews, Ginger Garlic paste, Chopped Chilli and Chopped Onion. Fry them till the onion turns golden brown.
Add Mint (Pudina) leaves and Peas. Saute it for 1-2 minutes.
Add rice and mix all the ingredients. Cook for another 4-5 minutes.
Add salt and required amount of water and close the lid of cooker.
Cook the rice over a medium flame for 5 minutes or 2 whistles.
Switch off the flame and allow the pressure to settle down naturally.
Open the lid of the pressure and fluff the rice with a large spoon.
Serve it hot with Raita or Green Chutney. It can be served with any type of curry vegetables.
Serve it by garnishing coriander leaves over the Matar Pulao.
Notes
The above recipe can also be prepared in a different style also. Here we use steamed rice. Cook all the ingredients in a pan and at last mix the steamed rice. We have to follow the same process, but after step 5, add steamed rice. There is no need to pressure cook
