Gaajar Ka Halwa with Milk Powder

The carrots are first grated, cooked in ghee and then milk powdered is added to it along with dry fruits. The grated carrot should be cooked in ghee for a longer duration. The more we cook the more good it comes out. The grated carrot is cooked with ghee almost 30 minutes. Then sugar is added to it and again cooked. When the liquid completely evaporates, milk is added and cooked for half an hour before adding the milk powder and dry fruits.

Ingredients

  • 1.5 kg Carrot
  • 1 cup Full cream milk (or 240ml)
  • 1 cup Milk Powder
  • 200 gm Sugar
  • 4-5 pieces Cardamom (Elaichi)
  • 5-6 pieces Almonds
  • 9-10 pieces Raisins
  • 7-8 pieces Cashew nuts
  • 3-4 tablespoon Ghee

Instructions

  • Take the carrots and remove the outer layer with the help of knife. Cut both the ends and wash it.
  • Grate all the carrots one by one. While grating, the carrots leave water. Remove the water that comes out while grating and keep it aside.
  • Heat ghee in a pan or kadai over medium flame.
  • Add the grated carrots and mix uniformly so that ghee spread all over the grated carrots.
  • Cook it for almost half an hour. Initially the water will evaporate and then the cooking of the carrots will start.
  • As the carrots are cooked, it will start to change the colour from reddish brown to yellowish colour.
  • Keep on stirring the carrots in between so that it doesn’t stick to the bottom of the kadai or pan. Also the quantity of carrot will start to decrease.
  • Add sugar to the cooked carrot and mix it well.
  • On addition of sugar it will start leaving water. Cook it till the water completely evaporates.
  • Add milk and mix it properly. Cover the pan with lid and cook for 30 minutes so that it is cooked properly. Keep on stirring in between.
  • Cook the carrots with milk till it absorbs all the milk and becomes dry.
  • Add dry fruits and cardamom powder. Cook for another 15 minutes. Keep on stirring in between.
  • After 15 minutes add the Powder Milk and mix it properly so that it is uniformly distributed all over the carrot mixture.
  • Cook for 5 minutes and then switch off the stove.
  • Gaajar Ka Halwa is ready to be served. Serve it by garnishing it with Chopped dry fruits.

Notes

  1. While preparing Gaajar Ka Halwa, prefer to use Ghee rather than oil. The taste of the halwa comes out well when prepared with ghee.
  2. Prepare the halwa in low to medium flame. The longer the carrots are cooked, the better the taste is.
  3. The time taken to cook depends upon the quantity of carrots used. It also depends upon the water present in the grated carrot. The time may go beyond the time stated in the above process.
