The carrots are first grated and then cooked in ghee and then milk is added to it. Cooking is continued for more than an hour. The main ingredients are Carrot, Milk and Sugar. Use of Ghee and Cardamom Powder gives a different taste, texture and aroma. It can be served hot or chilled as per one’s liking.

Ingredients
1.5kgCarrot (Gaajar)
2cupFull Cream Milk (500 ml)
200gmSugar
4-5pieceCardamom (Elaichi)
3-4tablespoonGhee

Instructions
Wash the carrots and remove the outer layer of it. Cut both the ends.
Grate all the carrots one by one. While grating, the carrots leave water. Remove the water that comes out while grating.
Heat Ghee in a pan over medium flame.
Add the grated carrots (Gaajar) to the ghee. Mix it well.
As the carrots are cooked it starts changing the colour. Cook it for 20-25 minutes.
Keep on stirring in between so that it doesn’t stick to the bottom of the pan.
As it is cooked we will see that the quantity of the carrots is reduced to almost half.
Mix it and again cook for 5 minutes. Keep stirring. The quantity of the carrots keeps on reducing and becomes softer as it is cooked.
Add sugar to the mixture. After few minutes it starts leaving water. Cook for 10 minutes till the water evaporates.
Now add milk to the carrot mixture and mix it. Cover the pan with lid and cook it over low flame for 15-20 minutes so that it gets cooked properly.
In between keep checking and stir it so that it doesn’t stick to the bottom of the pan.
Meanwhile take the cardamom, remove the outer layer and grind it to make a powder. Keep it aside
Add Chopped dry fruits, Cardamom Powder and grated coconut and mix it well. Cook for another 10-15 minutes. Keep on checking and stirring in between.
After 15 minutes switch off the flame. Gaajar Ka Halwa is ready to be served.
Serve it by garnishing it with Chopped dry fruits, grated coconut and Khoya.
Notes
In the above process we have used milk to prepare. If you want you can add Khoya to it at the end. It is optional.
While preparing Gaajar Ka Halwa, prefer to use Ghee rather than oil. The taste of the halwa comes out well when prepared with ghee.
Prepare the halwa in low to medium flame. The longer the carrots are cooked, the better the taste is.
Amount of milk used can be adjusted as per the need. Also you can use more dry fruits as per your liking.
The time taken to cook depends upon the quantity of carrots used. It also depends upon the water present in the grated carrot. The time may go beyond the time stated in the above process.
