Ingredients
8-10piecesCooked Idlis
1mediumChopped Onion
1mediumChopped Tomato
1/2teaspoonMustard Seeds
8-10leavesCurry Leaves
2piecesSlit Green Chillies
1/2teaspoonTurmeric Powder
1/4teaspoonRed Chilli Powder
1teaspoonSambhar Masala:
1/2pieceLemon
2tablespoonOil
Coriander Leaves as required(For garnishing)

Instructions
Take the Cooked Idlis and cut each of them in quarters. Keep them aside.
Heat Oil in a kadai or fry pan over medium flame. Add Mustard Seeds and allow it to splutter.
Once the Mustard Seeds starts spluttering, add Curry Leaves and Slit Green Chillies. Saute for few seconds.
Now add Chopped Onion and fry till it is slight golden in colour.
Next add Chopped Tomatoes, Turmeric Powder, Red Chilli Powder, Sambhar Masala and Salt.
Saute the Tomatoes and Spices till they are properly cooked.
After the spices are cooked properly, add the Cooked Idlis. Mix the idlis with the spices and cook for few minutes.
Once the Idlis are cooked properly, switch off the flame and add Chopped Coriander Leaves and squeeze Lemon Juice.
Toss the Fried Idlis and mix them properly with Lemon Juice and Coriander Leaves.
Idli Fry is ready to serve. Serve it with Sambhar or Coconut Chutney or Tomato Ketchup along with hot Masala Tea.
Notes
To prepare Idli Fry, use leftover Idlis or refrigerated Idlis rather than using fresh Idlis. Fresh Idlis may break while frying them while refrigerated Idlis hold their shape. Also refrigerated Idlis consume less oil. Fry the Idlis till it is little crispy.
To add extra flavour to the fried Idlis, you can also add some vegetables to it such as capsicum, carrots, French beans, etc.
