Take all the vegetables such as Carrot, Cabbage, Capsicum, French Beans and Spring Onion and wash them properly. Chop or grate them finely with sharp knife or with grater.
Transfer the chopped and grated vegetables to a large bowl. Add Salt as required and mix it with all the vegetables.
After mixing the vegetables properly, keep it aside and allow it to rest for about 10-15 minutes. The vegetables are allowed to rest so that it releases extra water beforehand and prevent the release of water while preparing the Manchurian balls.
After about 10-15 minutes, you will see that the vegetables release extra water. Squeeze the veggies with your hand to drain out the extra water from the vegetables.
After squeezing out the extra water, add All Purpose Flour, Corn Flour, Black Pepper Powder and Salt to the vegetables. Remember to add Salt as required since we had already added it before also. Mix all the ingredients properly with your palm.
While mixing the ingredients, do not add Water to it since the veggies will leave water from itself which will be sufficient to bind the balls.
If the mixture becomes little dry and it is difficult to bind the balls, then you can add little amount of water to the veggies.
After mixing all the ingredients with the vegetables properly, take small amount of the mixture in your palm and roll it to prepare a small ball.
In the same manner, prepare small balls for all the mixture. Keep them aside. Now we will deep fry these balls.
Switch on the stove and heat Oil in a kadai over medium flame.
Gently add the prepared Manchurian balls one by one into the oil. Do not overload the kadai with the balls.
Fry the balls under medium flame till it becomes crispy and turns light golden brown in colour.
When the balls get properly fried, take them out from the oil and place it over tissue paper or kitchen towel to absorb excess oil.
In the same manner, fry the remaining balls. Veg Manchurian Balls are ready. Keep the Manchurian balls aside by covering it. Now let’s prepare the Manchurian Gravy.
