Veg Manchurian Gravy is an Indo Chinese recipe prepared by tossing fried Veg Manchurian Balls in sweet, sour and tangy Manchurian Sauce Gravy. Veg Manchurian Balls are prepared from different finely chopped vegetables while the Manchurian Sauce Gravy is prepared from Finely Chopped Veggies and different sauces such as Tomato Sauce, Chilli Sauce and Soya Sauce.

Equipment

Ingredients

For Veg Manchurian Balls:

  • 2 tablespoon Maida (All Purpose Flour)
  • 2 tablespoon Corn Flour (Corn Starch)
  • 1/2 cup Shredded Carrot
  • 1/2 cup Shredded Cabbage
  • 1/4 cup Finely Chopped Capsicum
  • 1/4 cup Finely Chopped French Beans
  • 1/4 cup Finely Chopped Spring Onion
  • 1/2 teaspoon Black Pepper Powder
  • Salt as required
  • Oil for Frying

For Veg Manchurian Gravy:

  • 1 teaspoon Finely Chopped Ginger
  • 1 tablespoon Finely Chopped Garlic
  • 2 piece Finely Chopped Green Chilli
  • 1/4 cup Finely Chopped Spring Onion
  • 1 medium Chopped Onion
  • 1/2 piece Thinly Sliced Capsicum
  • 1/2 tablespoon Soya Sauce
  • 1/2 tablespoon Chilli Sauce
  • 2 tablespoon Tomato Ketchup
  • 1 teaspoon Corn Flour (Corn Starch)
  • 1/4 teaspoon Black Pepper Powder
  • 1/2 teaspoon Vinegar
  • 1 tablespoon Spring Onion Greens (For Garnishing)
  • 1 tablespoon Cooking Oil
  • Salt as required
  • Water as required

Instructions

Preparation of Veg Manchurian Balls:

  • Take all the vegetables such as Carrot, Cabbage, Capsicum, French Beans and Spring Onion and wash them properly. Chop or grate them finely with sharp knife or with grater.
  • Transfer the chopped and grated vegetables to a large bowl. Add Salt as required and mix it with all the vegetables.
  • After mixing the vegetables properly, keep it aside and allow it to rest for about 10-15 minutes. The vegetables are allowed to rest so that it releases extra water beforehand and prevent the release of water while preparing the Manchurian balls.
  • After about 10-15 minutes, you will see that the vegetables release extra water. Squeeze the veggies with your hand to drain out the extra water from the vegetables.
  • After squeezing out the extra water, add All Purpose Flour, Corn Flour, Black Pepper Powder and Salt to the vegetables. Remember to add Salt as required since we had already added it before also. Mix all the ingredients properly with your palm.
  • While mixing the ingredients, do not add Water to it since the veggies will leave water from itself which will be sufficient to bind the balls.
  • If the mixture becomes little dry and it is difficult to bind the balls, then you can add little amount of water to the veggies.
  • After mixing all the ingredients with the vegetables properly, take small amount of the mixture in your palm and roll it to prepare a small ball.
  • In the same manner, prepare small balls for all the mixture. Keep them aside. Now we will deep fry these balls.
  • Switch on the stove and heat Oil in a kadai over medium flame.
  • Gently add the prepared Manchurian balls one by one into the oil. Do not overload the kadai with the balls.
  • Fry the balls under medium flame till it becomes crispy and turns light golden brown in colour.
  • When the balls get properly fried, take them out from the oil and place it over tissue paper or kitchen towel to absorb excess oil.
  • In the same manner, fry the remaining balls. Veg Manchurian Balls are ready. Keep the Manchurian balls aside by covering it. Now let’s prepare the Manchurian Gravy.

Preparation of Veg Manchurian Gravy:

  • First we will prepare Corn Flour paste. Take Corn Flour in a small bowl and add small amount of Water to it. Mix them properly to prepare the paste. Keep it aside.
  • Switch on the stove and heat Oil in a kadai or pan over medium heat.
  • Once the Oil heat, turn the flame to low and add Finely Chopped Garlic, Finely Chopped Ginger and Finely Chopped Green Chilli.
  • Stir and saute for few seconds till the raw smell of Ginger and Garlic goes off. Saute them by continuously stirring it so that it does not stick and burn.
  • Now add Finely Chopped Spring Onion, Chopped Onion and Sliced Capsicum. Under low flame fry them for a minute.
  • Next add Black Pepper Powder, Vinegar and Salt. Mix and saute them for few seconds more.
  • After few seconds, add Soya Sauce, Tomato Ketchup and Chilli Sauce. Stir and mix all the sauces properly and cook for a minute keeping the flame low.
  • Once the sauce gets cooked properly, add Water and stir it. Under medium flame, bring the mixture to boil. Let it boil continuously.
  • When the mixture comes to boil, add Corn Flour paste to the mixture. Stir the paste before adding it since corn flour settles down on resting.
  • Stir the Corn Flour paste with the sauce mixture under low flame till the sauce slightly thickens.
  • When the sauce slightly thickens and gets cooked properly, add the Fried Manchurian Balls.

  • Cook the Fried Manchurian balls for about 3-4 minutes under medium heat so that the balls absorb the sauce.

  • Once cooked, switch off the flame. Tasty and delicious Veg Manchurian Gravy is ready to serve.

  • Transfer Veg Manchurian Gravy into a serving bowl. Garnish with Finely Chopped Spring Onion Greens or Coriander Leaves. Serve it hot with Fried Rice or Steamed Rice or with any Chinese main course item.

Notes

  1. We have used Cabbage, Carrot, Capsicum, French Beans and Spring Onion Whites to prepare the Manchurian Balls. You can vary the veggies as per your choice.
  2. After grating the vegetables, add Salt to it and mix it. Allow it to rest for some time so that excess water is released by the veggies. Remove the excess water by squeezing the veggies with your hand. This will help in proper binding of the Manchurian balls. If in any case the mixture does not bind properly, you can add slight amount of water to it.
  3. Do remember to fry the Manchurian Balls under medium heat so that they are cooked properly from outside as well as from inside. If it is cooked under high flame, the balls will get browned from outside quickly and will be uncooked from inside. In case you cook the balls under low flame, the balls will absorb too much of oil.
  4. After frying the Manchurian Balls, place them over tissue paper so that excess oil is absorbed properly.
  5. While preparing the Manchurian Sauce, adjust the amount of Salt as required. Since Chilli Sauce and Soya Sauce has salt in it, so add salt as required. If required you can add extra salt later on.
  6. Cook the Manchurian Balls in Manchurian Gravy just before serving. Do not cook in advance or else the Manchurian balls will become soggy.
  7. Use Bread Crumbs to make crispy Manchurian Balls. Just roll the balls with bread crumbs before frying it.
  8. If you want to prepare Dry Veg Manchurian, simply skip adding water and cook the Manchurian balls in the prepared Manchurian sauce.
