Aam Panna is a refreshing Indian beverage drink prepared from Raw Green Mangoes, Sugar and Mint Leaves along with few Indian Spices. It is served chilled with toppings of ice cubes.

Equipment

Ingredients

For Pressure Cooking

  • 1/2 kg Raw Mango (Kaccha Aam/Kairi)
  • 2 cups Water

Other Ingredients:

  • 1/2 cup Fresh Mint (Pudina)
  • 1 cup Sugar
  • 2 teaspoon Roasted Cumin Powder (Jeera Powder)
  • 2 teaspoon Black Salt (Kala Namak)
  • 5-6 cups Cold Water

For Servings:

  • Ice Cubes as required
  • Few sprigs Mint Leaves

Instructions

  • Take the Raw Mangoes and wash it properly by rinsing with Water.
  • Peel off the outer layer of the mangoes with the help of peeler.
  • Now with the help of knife cut the mango pulp into small parts and place them into pressure cooker.
  • Add Water into the pressure cooker to cover the chopped mango pulps.
  • Cook them under low to medium flame for two whistles.
  • After 2 whistle, switch off the stove and allow the pressure cooker to release the gas on its own to cool down completely.
  • On cooling, take out the Cooked Mango Pulps and transfer them to a mixer grinder jar.
  • Add Fresh Mint, Sugar, Roasted Cumin Powder, Black Salt and required amount of Water.
  • Blend all the ingredients to prepare a smooth paste.
  • Aam Panna is ready to serve. Take it out in a serving glass.

  • If the thickness of Aam Panna is more, adjust the thickness by adding more water to it. Stir it with spoon.

  • Add few Ice Cubes into it and garnish with Mint Leaves. Serve it chilled.

Notes

  1. You can add Cold Water as per you requirement of thickness of Aam Panna. If you love to have thick Aam Panna, add less water. If you want to make thin Aam Panna add more water.
  2. Amount of Sugar added to Aam Panna depends upon the sourness of mango. If the mango is more sour, add more sugar.
  3. You can choose to add Table Salt in place of Black Salt.
  4. The chopped mangoes can also be cooked simply by cooking in an open pot rather than in pressure cooker.
  5. Serve Aam Panna chilled. Add Ice Cubes into the Panna before serving.
