Homemade Kadai Masala Powder / Kadai Masala

Kadai Masala is generally used to make Kadai Paneer Masala, Kadai Chicken, Kadai Mushroom, Kadai Chaap, etc. It is prepared by roasting all the ingredients over medium heat and then grinding it coarsely to make the Kadai Masala Powder.

Ingredients

  • 2 tablespoon Coriander Seeds (Dhania)
  • 1 teaspoon Fennel Seeds (Saunf)
  • 1 tablespoon Cumin Seeds (Jeera)
  • 5 pieces Cloves (Laung)
  • 10 pieces Black Pepper Seeds (Kali Mirch)
  • 1 piece Bay Leaves (Tez Patta)
  • 2 small piece Cinnamon Stick (Dalchini)
  • 2-3 piece Whole Dry Red Chilli (Mirch)
  • 4 piece Green Cardamom (Hari Elaichi)
  • 2 piece Black Cardamom (Kali Elaichi)

Instructions

  • Break all the Whole Red Chilli into two pieces. Also break the bay leaves into two halves.
  • Heat pan over low heat.
  • Put all the Kadai Masala ingredients in the pan.
  • Mix and roast them for 2 minutes. Keep on stirring it so that it does not burn. The ingredients will give aromatic smell on roasting.
  • Turn off the stove and allow the ingredients to cool down.
  • When the ingredients cool down, put them into the mixer grinder jar and grind it to smooth powder.
  • Kadai Masala is ready to be used in various food recipes.
  • Use Kadai Masala Powder to make Kadai Paneer, Kadai Chicken, Kadai Mushroom, Kadai Chaap, etc.

Notes

  1. Grind the roasted ingredients after it cools down.
  2. Store the grinded masala powder in an air tight container so that it does not come in contact with moisture.
  3. You can increase the quantity of ingredients proportionately, if you want to make the masala powder at once and store it for later use.
