Ingredients
2tablespoonCoriander Seeds (Dhania)
1teaspoonFennel Seeds (Saunf)
1tablespoonCumin Seeds (Jeera)
5piecesCloves (Laung)
10piecesBlack Pepper Seeds (Kali Mirch)
1pieceBay Leaves (Tez Patta)
2small pieceCinnamon Stick (Dalchini)
2-3pieceWhole Dry Red Chilli (Mirch)
4pieceGreen Cardamom (Hari Elaichi)
2pieceBlack Cardamom (Kali Elaichi)
Instructions
Break all the Whole Red Chilli into two pieces. Also break the bay leaves into two halves.
Heat pan over low heat.
Put all the Kadai Masala ingredients in the pan.
Mix and roast them for 2 minutes. Keep on stirring it so that it does not burn. The ingredients will give aromatic smell on roasting.
Turn off the stove and allow the ingredients to cool down.
When the ingredients cool down, put them into the mixer grinder jar and grind it to smooth powder.
Kadai Masala is ready to be used in various food recipes.

Notes
Grind the roasted ingredients after it cools down.
Store the grinded masala powder in an air tight container so that it does not come in contact with moisture.
You can increase the quantity of ingredients proportionately, if you want to make the masala powder at once and store it for later use.
