Cashew Nut Chutney/Kaju Ki Chutney/Cashew Chutney
Cashew Nut Chutney or Kaju Ki Chutney is prepared by first frying Onion and Tomatoes with Cashewnut and then grinding to make smooth thick paste. It is also used as a dip or spread ideal for snacks such as chips, breadsticks, bread wraps, etc.

1/2 cup Cashew nuts 1 medium Chopped Onion 1 medium Chopped Tomatoes 1 piece Chopped Green Chilli 5-6 pieces Chopped Garlic 2 teaspoon Oil Salt to Taste Water as required
Heat 2 teaspoon Oil in a pan over medium heat.
Once hot, add Chopped Green Chilli and sauté for few seconds.
Add Chopped Onion and Garlic. Saute it until the onion becomes light golden in colour.
Add Chopped Tomatoes and Salt to the cooked onions. Cook till the tomatoes becomes little mushy.
Now add Cashew Nut and roast it along with tomato and onion till it becomes light golden. Switch off the flame. Allow it to cool.
When the mixture completely cools down, transfer it to the mixer grinder jar.
If required add water to it. Grind to make thick smooth paste.
Cashew Nut Chutney is ready to be served with your favourite snacks.
Add water to the mixture as per the thickness required while preparing the paste.
If you want you can also add curd while grinding the paste.
Cashew Nut Chutney can be stored for few extra days if onion is not used.
To give a better taste, you can also give tempering with mustard seeds
