Aam Panna is an Indian summer drink made from raw Mangoes and few spices. It is usually prepared during summer when raw mangoes are available in abundance. Many people refer it as Aam ka Sharbat or Kairi ka Panna. Kairi is the other name of raw mango. This drink has heat resistant properties so it is usually served during summer time. It has also many health benefits.
Aam Panna requires only few ingredients such as Raw Mango, Mint Leaves, Sugar, Black Salt and Spices. It is simple and quick to prepare. To prepare it, Raw Mango Pulp are first cooked and then blended with spices. We can prepare the sharbat either from raw green mangoes or with raw yellow mangoes. The taste of the drink is same and only the colour changes. This drink stays fresh for days when stored in refrigerator. So, prepare the concentrate at once and then store it in fridge. Whenever you feel to have it, just take it out of the refrigerator and serve it chilled.
There are three ways of preparing Aam Panna. Basically we can say that there are three ways of cooking mangoes.
- Pressure Cooker Method: In this method, we cook the mango pulp in pressure cooker and then blend with spices. It is faster to cook in pressure cooker. Wash the mangoes and peel off the outer layer. Cut then into small pieces. Add it to boiling water and cook till it becomes soft. Transfer it to blender and blend with mint leaves, sugar, salt and spices.
- Open Pot Method: Here we cook the pulp in open pot in water. It takes a little longer time than pressure cooker. All other processes are similar to make Aam Panna.
- Roasting Method: In this method, we simply roast the mangoes in direct fire from all sides. After roasting, allow it to cool. Peel off the outer layer and then separate the pulp. Mix it with water and spices and then blend to make the drink.
Today we will be preparing this delicious and flavourful Aam Panna with the first method where we will cook the mango pulp in pressure cooker. Wash the Mangoes properly with water. With the help of peeler, peel off the outer skin. If necessary, you can wash it again. Cut the mangoes into small pieces. Transfer it to pressure cooker and add required amount of water. Cook for 2 whistle under medium heat. Switch off the stove and allow it to cool down completely.
Take the cooked mango pulps and transfer them to mixer grinder jar or blender jar. Add Mint Leaves, Sugar, Black Salt, Roasted Cumin Powder and Cold Water. Add Water as per your requirement of the thickness of the drink. Blend all the ingredients to make smooth paste. Aam Panna is ready to serve. Transfer it to serving glass and add few ice cubes. Garnish with Mint Leaves and serve it chilled.

Ingredients:
For Pressure Cooking
- 1/2 kg Raw Mango (Kaccha Aam/Kairi)
- 2 cups Water
Other Ingredients:
- 1/2 cup Fresh Mint (Pudina)
- 1 cup Sugar
- 2 teaspoon Roasted Cumin Powder (Jeera Powder)
- 2 teaspoon Black Salt (Kala Namak)
- 5-6 cups Cold Water
For Servings:
- Ice Cubes as required
- Few sprigs Mint Leaves
Instructions:
- Take the Raw Mangoes and wash it properly by rinsing with Water.
- Peel off the outer layer of the mangoes with the help of peeler.
- Now with the help of knife cut the mango pulp into small parts and place them into pressure cooker.
- Add Water into the pressure cooker to cover the chopped mango pulps.
- Cook them under low to medium flame for two whistles.
- After 2 whistle, switch off the stove and allow the pressure cooker to release the gas on its own to cool down completely.
- On cooling, take out the Cooked Mango Pulps and transfer them to a mixer grinder jar.
- Add Fresh Mint, Sugar, Roasted Cumin Powder, Black Salt and required amount of Water.
- Blend all the ingredients to prepare a smooth paste.
- Aam Panna is ready to serve. Take it out in a serving glass.
- If the thickness of Aam Panna is more, adjust the thickness by adding more water to it. Stir it with spoon.
- Add few Ice Cubes into it and garnish with Mint Leaves. Serve it chilled.
Notes:
- You can add Cold Water as per you requirement of thickness of Aam Panna. If you love to have thick Aam Panna, add less water. If you want to make thin Aam Panna add more water.
- Amount of Sugar added to Aam Panna depends upon the sourness of mango. If the mango is more sour, add more sugar.
- You can choose to add Table Salt in place of Black Salt.
- The chopped mangoes can also be cooked simply by cooking in an open pot rather than in pressure cooker.
- Serve Aam Panna chilled. Add Ice Cubes into the Panna before serving.
